¼ cup powdered Erythritol
1 cup sour cream
1 cup heavy cream
½ tsp vanilla

Steps:

  • To make this easy low carb strawberry keto ice cream, first gather all of your ingredients in one place.
  • Then, wash and slice your strawberries.
  • Next, place the strawberries in a food blender and blend until smooth.
  • Once the strawberries have been pureed, you will combine the strawberries, powdered Erythritol, sour cream, heavy cream, and vanilla in a mixing bowl.
  • Fold in the strawberry puree until the ice cream is mixed well.
  • Then transfer the strawberry ice cream into a freezer friendly container and freeze for 6 hours.
  • Once it has been frozen, scoop into a bowl and serve.

1/3 cup BochaSweet ((or allulose or xylitol))
1 ounce vodka ((optional))
1 cup full fat sour cream
1 tsp vanilla extract
1 cup heavy cream
1/3 cup powdered Swerve Sweetener

Steps:

  • Place the strawberries, the BochaSweet, and the vodka in a blender or food processor. Blend until almost pureed but some chunks still remain.
  • In a large bowl, whisk together the sour cream, vanilla extract, and strawberry mixture until thoroughly combined.
  • In another large bowl, whip the cream with the powdered Swerve until it holds stiff peaks. Gently fold the whipped cream into the strawberry mixture until just a few streaks remain.
  • Transfer to an airtight container and freeze until firm, at least 6 hours.

⅓ cup chopped strawberries
2 tablespoons low-calorie natural sweetener (such as Swerve®)
1 tablespoon vodka
1 teaspoon vanilla extract
¼ teaspoon xanthan gum
1 pinch salt

Steps:

  • Combine heavy cream, strawberries, sweetener, vodka, vanilla extract, xanthan gum, and salt in a wide-mouth pint-size jar.
  • Using an immersion blender and an up and down motion, blend cream mixture for 60 to 75 seconds, or until thickened and soft peaks have formed.
  • Cover jar and freeze, stirring every 30 to 40 minutes, until ice cream reaches your ideal consistency, 3 to 4 hours.
