1 green onion
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons prepared horseradish
2 tablespoons seafood sauce or 2 tablespoons ketchup
1 tablespoon finely chopped chives
1 teaspoon hot pepper sauce (tobasco)
1 clove garlic, smashed
1 teaspoon Dijon mustard
salt
2 lbs medium shrimp, cooked,peeled and deveined

Steps:

  • Combine all ingredients except shrimp in large bowl.
  • Add shrimp and toss to coat.
  • Cover and refrigerate 4 to 6 hours or overnight.
  • Transfer shrimp mixture to serving bowl and serve with toothpicks.

I an lucky and have a shrimp connection....I get my shrimp right off the boat! I am always looking for an even better way to serve shrimp. This is a refreshing recipe for a shrimp appetizer or a summer salad. Marinate for the full 48 hours for the best taste. Great to use at a party, because the shrimp are already peeled....no need to clean up all those shells!

7 1/2 cups water
3 lbs unpeeled large raw shrimp
2 small red onions, sliced
1 yellow bell pepper
1 cup vegetable oil
1 cup red wine vinegar
3 tablespoons sugar
1 tablespoon grated lemon rind
3 tablespoons fresh lemon juice
1 tablespoon white wine worcestershire sauce
1 tablespoon hot sauce
1 tablespoon Dijon mustard
1/2 teaspoon salt
2 garlic cloves, pressed
1/2 cup chopped fresh basil

Steps:

  • Bring 7 1/2 cups water to a rolling boil. Add the shrimp, and cook 2 to 3 minutes or until shrimp turn pink. Do not overcook. Drain and rinse with cold water. Ice the shrimp to cool, then peel and if desired, devein.
  • .Layer the shrimp, red onion slices and bell pepper slices in an airtight container.
  • Whisk together vegetable oil and next 9 ingredients; pour over shrimp. Cover and chill 48 hours, stirring occasionally.
  • Stir in 1/2 cup chopped basil 1 hour before serving.

1 tablespoon minced fresh ginger
1 teaspoon light brown sugar
1/2 cup Japanese soy sauce
1/4 cup dry sherry
2 tablespoons vegetable oil
2 large cloves garlic, peeled and minced
1 1/2 pounds shelled and deveined raw shrimp or 2 (12-ounce) packages frozen shelled and deveined raw shrimp

Steps:

  • Mix ginger and sugar in medium mixing bowl. Slowly whisk in soy sauce, sherry, and oil, then in garlic. Add shrimp and turn to coat all over marinade. Cover and marinate in refrigerator for at least 1 hour, or overnight. Heat large heavy non-stick skillet over moderately high heat for 1 minute. Add shrimp and marinade to skillet all at once and stir-fry just until shrimp are pink- 3 to 4 minutes. Serve shrimp hot, topped with a little of the marinade.;

Awesome 48 Hour Marinated Teriyaki Chicken (Norm's Teriyaki) image

Two days may seem like an awful long time to marinate but I promise you it is worth it! This recipe was given to me by my Hawaiian friend, Norm. It is an authentic, no fail, super yummy way to prepare teriyaki. I have used this same recipe for anywhere from 2-6 lbs. of meat.

2 1/2 cups soy sauce
3/4 cup water
1 1/2 cups sugar
1 bunch green onion, chopped
8 ounces gingerroot, sliced
2 whole bulbs of garlic, each clove peeled and smashed
3 lbs boneless chicken thighs

Steps:

  • In a large bowl, mix soy sauce, water, and sugar until sugar dissolves.
  • Add green onions, ginger, and garlic to bowl.
  • Add chicken pieces.
  • Cover and marinate 48 hours.
  • Grill chicken on low 9 minutes each side or until cooked all the way through. (Make sure to grill on low or, if broiling, broil away from the heat. The high sugar content of the marinade will cause the chicken to burn if it is cooked at too high a temperature).

BROILED MARINATED SHRIMP

This was a recipe that was submitted to Bon Appetite magazine by an Air Force Colonel many years ago. I love broiled shrimp and this is great. I prefer broiling in one large pan. He recommended serving this with French, Italian or sourdough bread to mop up the sauce.

1 cup olive oil
1 cup dry sherry
12 garlic cloves, crushed
2 tablespoons mixed fines herbes
salt and pepper (to taste)

Steps:

  • Shell and devein shrimp.
  • Make a marinade with the remaining ingredients.
  • Place shrimp and marinade in a large zip-lock gallon bag. Marinate the shrimp for at least 4 hours, turning occasionally.
  • Divide the shrimp and marinade into 6 individual earthenware dishes, or spread them on a shallow broiling pan.
  • Broil the shrimp until they are lightly browned on both sides, approximately 5-6 minutes on each side.

1 lb large shrimp (uncooked and easy peel)
1 -2 cup water (enough water to cover shrimp by one inch)
1 medium sized jalapeno (deseeded, deveined, and chopped finely, optional ingredient!)
1 garlic clove (chopped finely)
1/2 cup water
2 teaspoons salt (kosher)
4 tablespoons fresh lime juice
2 tablespoons minced fresh cilantro (optional)
1 teaspoon Old Bay Seasoning (optional)
1/4 cup seafood cocktail sauce, for dipping
1 tablespoon chives (dried or fresh)

Steps:

  • Using a medium sauce pot, place the shrimp in 1 inch (or more) cover the shrimp.
  • Bring to a boil.
  • Cover and immediately remove from heat. Set aside 1 minute.
  • Drain and rinse the shrimp under cold water to stop the cooking and put into a bowl.
  • Cut the jalapeños in half lengthwise, devein and deseed. Place in a bowl with the shrimp.
  • Toss with 1/2 cup of water, lime juice, cilantro, and salt to taste.
  • Cover and refrigerate up to 1 day ahead.
  • On day serving, drain the shrimp. Toss with Old Bay if using. Add different sized crackers and a tooth pick. Put dipping sauce beside the shrimp. Sprinkle chives on top.

1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a bowl, combine the shrimp, oil, garlic, rosemary, oregano and bay leaves.
  • Cover and refrigerate for 2-4 hours.
  • Pour shrimp and marinade into a large deep skillet.
  • Add wine or broth, salt and pepper.
