3 medium zucchini, uniformly sized
3 cups basil, marinara sauce* (divided)
1 tablespoon olive oil
1 lb ground turkey
1 medium onion, finely chopped
1/3 of a red pepper, finely chopped
3 garlic cloves, minced
1/4 cup parsley, finely chopped
1 teaspoon italian seasoning
1/4 teaspoon chili pepper flakes (or to taste)
1/2 teaspoon salt
black pepper
1 1/2 cups shredded mozzarella cheese
1/3 cup grated parmigiano-reggiano cheese
2 tablespoons panko breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Measure one cup of marinara sauce and set aside.
  • Trim the ends from the zucchini and slice them in half lengthwise. Using a teaspoon, scrape the inside of the zucchini forming a cavity, being careful not to cut through.
  • Place the zucchini boats in a 9 x 13" baking dish and add a cup of water. Cover with foil then bake for 20 minutes or until just slightly fork tender. Remove from oven, remove foil and set aside to cool slightly.
  • While the zucchini is cooking, add the olive oil to a skillet and place over medium heat. Add the ground turkey, onions, peppers, and garlic to the pan, and stir until fully combined. Cook, stirring to break up the ground turkey as it cooks. Cook until the meat is cooked and the vegetables have softened. If there is too much grease, drain off as much as possible. and return skillet to the heat.
  • Add the remaining 2 cups marinara sauce, parsley and spices and simmer over low heat for 15 minutes. Taste and adjust the spices if necessary.
  • Remove the zucchini from the baking dish and drain off the water. Pour the 1 cup marinara on the bottom of the dish and place the zucchini on top of the sauce.
  • Fill the zucchini cavities with the meat sauce. If you have extra, add it around the zucchini or save it to enjoy with pasta another day. Cover the dish with foil and bake for 20 minutes. or until zucchini is fork tender.
  • Remove dish from oven and set the oven to broil. Remove the foil then sprinkle the mozzarella cheese, then the parmigiano-reggiano cheese, and then the breadcrumbs evenly over the six zucchini boats.
  • Place dish in the oven and broil for approximately 2 minutes, with the door open, until the cheese has melted and golden in colour.

4 zucchini, halved lengthwise
3 tablespoons extra virgin olive oil
1/2 red onion, chopped
5 plum tomatoes, chopped
1 cup breadcrumbs
1/2 cup walnuts, toasted and coarsely chopped
1/2 teaspoon dried oregano
salt, to taste
pepper, to taste
6 ounces mozzarella cheese, shredded
1/2 cup parmesan cheese, grated

Steps:

  • Preheat oven to 375 degrees.
  • Using a small spoon, scoop out the zucchini flesh, leaving a 1/4- to 1/2-inch thick shell.
  • Wrap the zucchini flesh in a paper towel and squeeze out any excess liquid; discard the liquid and set aside the flesh.
  • Place the zucchini shells cut side down on a baking sheet and bake for 15 minutes.
  • Meanwhile, in a large skillet, heat 2 T olive oil over high heat.
  • Add the zucchini flesh and onion and cook, stirring, until softened, about 5 minutes.
  • Add the tomatoes and cook until softened, about 5 minutes.
  • Push the vegetables to the side of the pan, add the remaining 1 T oil and the bread crumbs, and toast the bread crumbs for 2 minutes.
  • Remove from the heat, stir in the nuts and oregano, then combine with the vegetables; season with salt and pepper.
  • Flip over the zucchini shells and line the bottoms with the mozzarella.
  • Pack in the filling.
  • Sprinkle with parmesan on top.
  • Bake until the zucchini is tender when pierced with a fork, 20-25 minutes.

Grilled Bacon, Egg and Cheese Zucchini Boats image

Perfect for breakfast, lunch or dinner, these zucchinis boats are filled with eggs, two kinds of cheese, garlic and fresh chives. Grilling them over indirect heat adds a smokey flavor to the eggs and keeps them from drying out. At the end, the boats are wrapped in salty bacon, making them utterly irresistible.

2 medium zucchinis (about 1 pound 9 ounces total and/or each about 9 inches long)
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/4 cup extra-sharp shredded Cheddar (about 1 ounce)
1/4 cup grated Havarti cheese (about 1 ounce)
1/4 cup finely chopped fresh chives
1/4 cup heavy cream
4 large eggs
1 clove garlic, grated
4 strips bacon

Steps:

  • Prepare a grill for medium-high indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off the middle burner for 3-burner grills or the 2 middle burners for grills with 4 or more burners and keep the other 2 burners at medium high. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (The grill should be around 400 degrees F. Be sure to consult the grill manufacturer's guide for the best results.)
  • Slice the zucchinis down the middle, lengthwise like a hotdog, so that you have 4 long, equal pieces of zucchini. Use a teaspoon to remove the flesh of the zucchini, being sure to leave a 1/4-inch border and to not pierce the bottom of the zucchini. Finely chop 1/2 cup of the zucchini flesh and discard or save the remainder for another use. Place the chopped zucchini flesh into a clean kitchen towel and wring out as much liquid as possible. Place the zucchini flesh into a medium liquid measuring cup or bowl.
  • Flip the zucchini boats over so that the peel side is facing up and brush all four pieces with olive oil. Season the peel side with 1/4 teaspoon salt and a few grinds of pepper, then flip over and season the flesh side with another 1/4 teaspoon salt and a few grinds of pepper.
  • Add the Cheddar, Havarti, chives, cream, eggs, garlic, 1 teaspoon salt and a few grinds of pepper to the liquid measuring cup or bowl with the zucchini flesh. Whisk until well combined. Pour the mixture into the cavity of each zucchini boat.
  • Using both hands to lift the zucchini carefully, place the filled boat in the middle of the grill over indirect heat (where the burner is turned off), cover, and cook until the eggs have puffed up slightly and are just set, 25 to 30 minutes. Use grilling tongs to remove the zucchini to a cutting board. Carefully wrap each zucchini boat in 1 of the bacon strips. Return to the grill over indirect heat and continue grilling, covered, until the eggs are completely set and the bacon is warmed and just crispy, 18 to 20 minutes.

While any medium sized ripe zucchinis will do, use garden fresh ones if you have them. The tender sweet flesh of the zucchinis paired with the spiced meat and cool yogurt sauce will make you forget that this dish is less than 500 calories per serving!

3 tablespoons extra-virgin olive oil
4 zucchinis (about 2 1/2 pounds), halved lengthwise and seeds scooped out
Kosher salt and freshly ground pepper
1 onion, diced
2 teaspoons ground cumin
1 pound ground turkey
3 tablespoons tomato paste
1 cup low-sodium chicken broth
3 ounces feta cheese, crumbled
3/4 cup plain Greek yogurt
3 tablespoons fresh lemon juice
1/2 cup packed fresh dill, torn

Steps:

  • Preheat the oven to 400˚ F. Drizzle a rimmed baking sheet with 2 tablespoons olive oil. Season the zucchini halves with salt and pepper. Add to the baking sheet and turn to coat with the oil. Arrange the zucchini cut-side down in a single layer. Roast until crisp-tender, about 15 minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the onion and cook until translucent, about 4 minutes. Stir in the cumin and 1/2 teaspoon each salt and pepper; cook 30 seconds. Add the turkey and cook, breaking it up with a wooden spoon, until browned, about 5 minutes. Stir in the tomato paste and chicken broth until combined. Cook until the broth is reduced to a thick sauce, 4 to 5 minutes.
  • Turn the zucchini boats cut-side up and fill with the turkey mixture, packing it in. Sprinkle with the cheese and roast until the zucchini is tender and the cheese is softened, about 10 minutes.
  • Meanwhile, stir together the yogurt and lemon juice; season with salt and pepper. Drizzle the zucchini boats with the yogurt mixture and top with the dill.

4 large, firm zucchinis, with skin
2 tablespoons unsalted butter
3/4 cup ground almonds
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup Parmesan cheese
1/4 cup fine dry bread crumbs

Steps:

  • Trim and discard zucchini ends. Working with the 3 widest, cut across width into 2inch lengths. Using a melon baller or small spoon, scoop out inner meat and seeds of each 2-inch piece, leaving a thin base at bottom so "boat" stands for stuffing. Place scooped-out centers into a food processor.
  • Roughly chop remaining zucchini. Add to food processor and puree until well chopped.
  • Bring a medium pot of salted water to a boil. Blanch zucchini boats just until they begin to soften, about 2 minutes. Immediately refresh in a bowl of iced water. Drain and arrange, flatside down, in a large jelly roll pan or roasting pan.
  • Preheat oven to 375 degrees F.
  • Melt butter in a medium saucepan over medium-high heat. Add reserved chopped zucchini and saute until liquid is evaporated, about 15 minutes. Stir in nuts, cook for 1 minute, then add cream, salt, and pepper. Bring to a boil. Cook until cream thickens, about 3 minutes. Add 1/2 cup Parmesan cheese and all bread crumbs. Remove from heat and stir until smooth.
  • Using a tablespoon or pastry bag fitted with a plain tip, stuff zucchini boats with cream mixture. Pour boiling water into pan containing filled zucchini boats until it rises about 1/4-inch, to form a water bath. Bake 15 minutes.
  • Heat broiler. Sprinkle remaining Parmesan cheese over tops and place under broiler until slightly golden, about 1 minute. Serve immediately.

This is one of my favorite quick and cheap recipes for vegetarian zucchini boats that originally came from another recipe I found. I have made it several times as both a main course and a side dish, and liked it so much I thought I'd share it on AR. Thanks to the original blogger for sharing!

nonstick cooking spray
3 zucchini
¼ cup olive oil
3 cloves garlic, crushed
salt and ground black pepper to taste
1 pint grape tomatoes, halved
1 cup dry bread crumbs
1 cup shredded mozzarella cheese
1 drizzle olive oil
¼ cup shredded Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with nonstick cooking spray.
  • Cut each zucchini in half lengthwise and trim a little off of the bottoms so that they will sit flat in the baking dish. Scoop out the centers, where the seeds are, with a spoon.
  • Combine 1/4 cup olive oil, garlic, salt, and pepper in a cup or bowl. Brush over the inner surfaces of the zucchini boats. Arrange tomatoes into the grooves and sprinkle bread crumbs around and in between to fill in the gaps.
  • Bake in the preheated oven until tender, about 30 minutes. Remove from the oven and turn the oven's broiler on.
  • Place mozzarella cheese around and on top of the tomatoes. Return to the oven and broil until golden brown and bubbling, 3 to 4 minutes. Remove from the oven. Drizzle with olive oil and sprinkle with Parmesan cheese.

6 large zucchini
1 tablespoon olive oil
4 slices bacon, chopped
1/2 teaspoon onion salt
1/4 teaspoon garlic powder
1/4 teaspoon nutmeg
1/4 teaspoon cayenne
1/4 cup unseasoned breadcrumbs
1 cup shredded gruyere cheese

Steps:

  • Heat oven to 375°F.
  • coat a 9 by 13 glass cooking dish with cooking spray. Cut 1/8 to 1/4 inch thick lengthwise slice from each zucchini.
  • Chop the slices and reserve.
  • Scoop out most of the flesh from each zucchini, leaving just a shell.
  • Chop together the flesh and add the spices from above.
  • In a large non-stick skillet, heat oil over medium-high heat.
  • Add the chopped bacon and cook for three minutes.
  • Then add the zucchini mixture.
  • Cook, stirring occasionally for 7 minutes (about).
  • Stir in bread crumbs and 3/4 cup of the cheese.
  • Cook for another minute more.
  • Spoon about 1/2 cup filling into each zucchini boat.
  • Place each boat in the baking dish and add 1/4 cup hot water to the dish.
  • Cover with foil.
  • Bake at 375°F for 25 minutes.
  • Uncover and sprinkle the tops with the remaining cheese.
  • Bake, uncovered, for 5 more minutes until cheese is melted.

  • You'll need medium to large zucchinis for this recipe. I had medium ones on hand but really the large the better so you can stuff more in them. Start by cutting off the ends and then slice the zucchini in half lengthwise. Using a spoon, scoop out the white flesh of the zucchini with the seeds. You want to scoop enough so that you have a reservoir for the stuffing. Place zucchini boats in a 13 x 9 inch baking pan or on a small baking sheet. Set aside for now.
