HEALTHY BANANA BREAD MUFFINS



Healthy Banana Bread Muffins image

A banana bread muffin so light, fluffy and tender, you'd never guess it's made with mostly whole-wheat flour. Using very ripe bananas keeps the muffins moist and minimizes the amount of sugar you add.

Number Of Ingredients 13

1 cup whole-wheat flour (see Cook's Note)
1/2 cup all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
5 tablespoons coconut oil, melted
1/4 cup packed dark brown sugar
1/4 cup maple syrup
1 teaspoon pure vanilla extract
2 large egg whites, at room temperature
1 1/2 cups mashed very ripe banana (about 3 large bananas)
1/2 cup chopped walnuts, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
  • Whisk together the coconut oil, brown sugar, maple syrup, vanilla and egg whites in a separate medium bowl until well combined. Stir in the mashed banana. Add the dry ingredients to the wet and stir until combined. Stir in the chopped walnuts if using.
  • Fill the lined muffin cups about three-quarters of the way with the batter (a generous 1/4 cup in each; see Cook's Note). Bake on the center rack until a cake tester or toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. Let cool 10 minutes, then remove the muffins to a wire rack to cool completely.

1/2 cup applesauce (sweetened or unsweetened)
1/4 cup maple syrup or honey
3 tbsp olive, avocado or coconut oil (melted)
1 tsp pure vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/3 cups whole wheat or spelt flour
Cooking spray (I use Misto)

Steps:

  • Preheat oven to 375 degrees F and spray non-stick 12 muffin tin. Set aside.
  • In a large mixing bowl, gently whisk egg. Add bananas and mash. Add applesauce, maple syrup, oil, vanilla, baking powder and soda and salt; whisk to combine.
  • Add flour and gently stir until well incorporated. Do not over mix - that produces a tough muffin.
  • Fill each opening almost full with batter and bake for 22 minutes or until a toothpick inserted in the centre comes out clean.
  • Let muffins cool for about 5 minutes and then transfer to a cooling rack to cool off completely.

We took a really great recipe for banana nut muffins and made changes to improve the overall flavor and make it much healthier. These muffins are easy to make and great for midday snacks when you get the muchies. ENJOY!

1 1/4 cups soy flour
1 cup oat flour
1/2 cup artificial sweetener
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup crushed walnuts
3/4 cup skim milk
1/4 cup unsweetened applesauce
1 teaspoon vanilla
2 very ripe bananas, chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Combine dry ingredients in large bowl.
  • Whisk milk, applesauce and vanilla in medium bowl.
  • Add milk mixture to dry ingredients, stirring just until combined.
  • Mix in bananas.
  • Divide batter among 12 muffin cups (if you don't use paper liners make sure you spray muffin pan with nonstick spray first).
  • Bake until toothpick inserted in center of muffins comes out clean, about 20 minutes.

1 1/2 cups bran flakes
1 cup mashed ripe banana (3 medium)
1/2 cup milk (i used skim)
1 egg
3 tablespoons vegetable oil
1 cup flour
1/4 cup sugar (i used 4 packages of Splenda)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon ground nutmeg (i used a little nutmeg and 1/4 t cinnamon)
1/4 cup chopped walnuts (i added, but it's optional)

Steps:

  • Preheat oven to 400 degrees. Grease or paper line muffin cups (i sprayed).
  • Combine cereal, bananas, milk, egg and oil in bowl; mix well. Let stand 5 minutes; stir to break up cereal.
  • Combine flour, sugar (sweetner), baking powder, baking soda, spices and nuts (if using) in separate bowl.
  • Add flour mixture all at once to cereal mixture, stirring just until moistened.
  • Divide evenly among prepared muffin cups, which comes to about a heaping tablespoon per muffin.
  • Bake 20-25 minutes or until tester inserted in center comes out clean.
  • Serve warm (room temp is OK too).

1 cup rolled oats
2/3 cup cranberries
3 tablespoons extra virgin olive oil
1 large egg
1/3 cup skim milk
3 medium carrots, shredded
2 medium ripe bananas, mashed

Steps:

  • Preheat oven to 400 degrees.
  • Coat a 12-cup large muffin pan with cooking spray.
  • In a large bowl whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps.

3 mashed bananas
2 tablespoons unsweetened applesauce
1 egg
1/2 cup nonfat milk
3/4 teaspoon vanilla extract
2/3 cup whole wheat flour
1/2 cup quick-cooking oats
2 tablespoons Splenda sugar substitute
1 3/4 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons ground flax seeds (optional)
walnuts (optional)

Steps:

  • Preheat oven to 375.
  • Combine bananas and next 4 ingredients (through vanilla) in a medium bowl; mix well and set aside.
  • Lightly spoon flour into a dry measuring cup and level with a knife. Whisk together flour and next 6 ingredients (through flaxseed if used) in small bowl.
  • Stir the flour mixture into the banana mixture until they are just combined.
  • Spray 12 muffin cups (for smaller muffins) or 9 muffin cups(for larger muffins) with cooking spray (or use paper liners) and spoon just about 1/4°C batter into each cup for 12 muffins.
  • Sprinkle muffin batter with some chopped walnuts.
