With all the health benefits backing coconut oil, you can feel good about eating this yummy chocolate everyday. These chocolates are smooth and tasty. Make them as large or small as you like for a portion controlled chocolate fix!

1/2 cup coconut oil
1/4 cup cocoa powder
2 tablespoons honey
1 teaspoon vanilla extract

Steps:

  • Melt the coconut oil and add the honey. Whisk and add the cocoa powder. Whisk occasionally while pouring into a silicone ice cube tray or silicone mini muffin tray. Makes 12. Cool for 30 minutes in the fridge or freezer.
  • Note: Time varies depending on how hot the coconut oil was when you started. If the oil is only just reached its melting stage, these will set in as little as 15 minutes.
  • Optional Ingredients.
  • 2 Tbsp of maca powder (mix in with the honey).
  • 1 tsp orange rind (mix into the chocolate).
  • seeds, nuts or dried fruit (sprinkle into the silicone trays).
  • 1/4 cup dried coconut would be amazing... (mix into the chocolate).

I NEEDED a chocolate fix, searched the net for chocolate candy I could make fast but not have to stand there and do it. (I wasn't lazy, just busy crocheting) and still the fix got hold of me. Came up with this recipe from several I read and what was in my cupoard) So thank you Zaarites and www for giving me some clues and assistance. NOTE- DH had 1 then 10 then took them to hunting camp. They were the winning hand candy as he did not want to part. When someone won the hand they got a chocolate. LOL The guys called and said I need to double this batch for next camp trip! Pinnochle and Chocolate LOL

18 ounces chocolate chips (semi or milk or a combination of the 2)
1 1/2 cups roasted nuts (more can be used up to 2 1/2 c)
4 ounces white chocolate, candy bar broken up (or white baking chips)

Steps:

  • put everything in crockpot, stir, turn on low 45 minutes.
  • turn to low 15 minute.
  • stir every 15 minutes to coat nuts, and let chunks move around for melting.
  • drop by teaspoons onto wax paper.
  • let cool.
  • VOILA.
  • NOTE! timing for crocks are different as newer ones heat hotter and faster.
  • -stirring every 15 minutes allows for blending and checking.
  • - note for nuts- can use more, I JUST WANTED CHOCOLATE LOL.
  • Prep time includes turning out onto wax paper.

These are so easy to make that the kids can help me prepare them. It is just as easy to make a wide variety of these fancy morsels which allows you to set forth an impressive candy tray. Also makes an excellent gift. I prefer to work in small batches but the recipe can certainly be doubled or tripled.

1 cup chocolate wafers (approximately) or 1 cup white chocolate wafers (approximately)
coconut (regular or toasted)
chopped pecans
chopped walnuts
chopped peanuts
chopped almonds
chopped hazelnuts
chopped cashews
chopped macadamia nuts
toffee pieces
finely crushed pretzel
Rice Krispies
chopped dried fruit
crushed mint decorative candies
crushed chocolate sandwich style cookies

Steps:

  • Place the chocolate wafers in a microwave safe dish.
  • Heat for 1 minute and stir.
  • If needed, heat in 15 second intervals, stirring after each, until melted and smooth.
  • Stir in one or two of the filling ingredients listed.
  • The amount and combinations depends on personal taste but don't add so much that the mixture doesn't hold together.
  • Spoon mixture into mini candy papers.
  • Garnish with more the the Filling Ingredient (s) used or drizzle, in a contrasting chocolate, in a zig-zag pattern on top.
  • TIPS: do not allow moisture to come in contact with the chocolate while it is melting or it will "bind" and become an unusable mess.
  • Make sure your bowl and spoon are completely dry.

I took this recipe from TLC's "Take Home Chef" show and website and omitted the almonds because I'm not a big fan. These are easy and tasty, but making them does involve a bit of a mess (although that's part of the fun, isn't it?)

1 cup heavy whipping cream
8 ounces high quality semisweet chocolate (I use Ghirardelli)
2 tablespoons unsweetened cocoa powder (use more or less as needed)
4 ounces almonds (optional)

Steps:

  • Chop the chocolate into small pieces.
  • In a small or medium saucepan, warm the cream over medium heat until it begins to simmer.
  • Remove the saucepan from the heat and stir in the chocolate until the mixture is smooth.
  • Stir in almonds (if desired).
  • Refrigerate the mixture for about 3 hours.
  • Remove the mixture from the fridge.
  • Use an ice cream scoop (or your fingers) to form the chocolate into balls.
  • Roll the ball in a bowl of unsweeted cocoa powder.
  • Refrigerate before serving.
