Steps:
- Brown ground beef over medium heat in a flat bottomed skilled.
- When the meat is pink and slightly under-cooked, add the onion and celery; finish browning the ground beef.
- Drain off grease if needed.
- Mix remaining ingredients and add to skillet.
- Cook for 20-25 minutes over low heat until sauce thickens, stirring often.

- Heat the oil in a deep frying pan, then fry the onion, pepper and garlic for 8-10 mins until softened. Add the mince, breaking it up with a wooden spoon as you go, and stir until it browns all over. Tip in the tomatoes and chipotle, or barbecue sauce, and add a little seasoning. Simmer for 10-15 mins until the sauce has thickened.
- Put the cheese slices on top of the mince and cover with a lid for 2 mins to let it melt into the sauce. Pile into the buns with the crispy onions, and lettuce on the side for scooping up the extra sauce.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

What is listed below is my updated recipe that tweaks it a bit for my family's tastes. It's now perfect and sooooooooooooooo easy to make. - Brown ground beef in skillet. Drain grease.
- Add salt, onion & green pepper to beef in skillet. Simmer for 10 minutes until sweating and starting to get translucent.
- Add remaining ingredients to skillet. Mix well. Taste. Adjust if necessary for personal tastes.
- Reduce heat, cover and simmer for 25-30 minutes. Stir occasionally.

- Add oil to large skillet, and heat over medium-high heat. Crumble in ground beef and cook while breaking up meat with a spatula. Season with salt and pepper.
- When meat is almost cooked through and beginning to brown, add in onion and bell pepper. Cook until beef is nicely browned and vegetables are beginning to soften. Drain off any grease.
- Add tomatoes, ketchup, water, brown sugar, vinegar, mustard, cinnamon, celery seed, and ground cloves to the meat and vegetables. Stir to combine.
- Cover with lid, leaving lid slightly ajar. Turn heat to medium-low and allow mixture to simmer for 45 minutes. Stir occasionally and add extra water if needed.
- Season with salt and pepper to taste. Serve hot on buns, or try lettuce wraps for a lighter version.
EASY WEEKNIGHT SLOPPY JOES
This is found in my recipe collection under "Mrs. McCann's Barbeque". It was handed down from a neighbor of my great-aunt's sometime in the 1940's. I prefer to use ground round so there isn't so much fat. Gets better the longer it simmers.

GRANDMA'S SLOPPY JOES FROM SCRATCH
Steps:
- In a large skillet over medium heat, brown the ground beef- about 5 minutes & breaking it up as it cooks.
- Stir in the onions, and season the mixture with salt & pepper- to taste.
- Continue cooking the mixture, stirring occasionally, until the onions have softened and begun to caramelize- about another 5-7 minutes.
- Add the remaining ingredients to the skillet, stirring them in until evenly combined.
- Bring the sauce to a simmer, the reduce the heat to maintain a slow simmer. Cook the mixture like that for 10 minutes, stirring frequently.
- When the sloppy joe mix has thickened, remove the skillet from heat
- Scoop the filling onto fluffy buns, or on slices of toast and serve as sandwiches.

- Finely chop the onion. Seed and finely dice the green pepper.
- In a bowl, combine the Worcestershire sauce, mustard, water, brown sugar, and tomato sauce.
- Place a large skillet or dutch oven over medium/high heat. Add olive oil and ground beef. Saute the beef for about 5 minutes until cooked through and longer pink, breaking it up with a spatula. Season with salt and pepper and add in the diced peppers and onion. Cook another 5 minutes until the veggies are tender and beef is browned.
