BEST BROWNIES WITH FROSTING
I got this recipe out of the newspaper many, many years ago. It's very easy and oh so good! You can make it with or without the frosting.

Steps:
- Stir oil or melted butter, sugar and vanilla together in large mixer bowl.
- Add eggs, beat until well blended using a spoon.
- Combine flour, cocoa, baking powder and salt; gradually add to egg mixture.
- Add nuts if desired.
- Spread into a greased 9 inch square pan.
- Bake at 350° for 20-25 minutes or until brownie pulls away from the edge of the pan.
- Cool in the pan.
- Frost with Creamy Brownie Frosting if desired.
- Cut into squares.
- Creamy Brownie Frosting Instructions:.
- Cream butter, cocoa, corn syrup or honey and vanilla in small mixer bowl.
- Add powdered sugar and milk; beat to spreading consistency.
- Makes about 1 cup frosting.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 13x9-inch baking pan. Place 8 ounces of baking chocolate with 1 cup of butter in a microwave-safe bowl, and microwave on High until the chocolate is soft and the butter has melted, about 2 minutes. Stir to mix.
- Place the eggs, 3 cups of sugar, and 1 tablespoon of vanilla extract in a large bowl, and beat with an electric mixer on high speed for 2 minutes. Reduce the mixer speed to low, and beat in the melted butter-chocolate mixture. Beat in the flour until just combined (do not overmix), and stir in the chopped walnuts. Spread the batter in the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out with fudgy crumbs, about 35 minutes. Cool in the pan before frosting.
- To make frosting, combine 1 1/4 cup of sugar with the heavy cream in a saucepan over medium heat, and stir until the sugar dissolves and the mixture begins to simmer, about 3 minutes. Reduce the heat to low, and let the mixture simmer for 7 minutes without stirring.
- Remove the cream mixture from the heat, and stir in 5 ounces of baking chocolate and 1/2 cup butter, stirring to melt and blend the chocolate. Add 1 teaspoon vanilla extract; whisk until smooth. Place the frosting in the refrigerator and stir every few minutes until the frosting is chilled and thick, about 30 minutes. Frost the cooled brownies, and cut into squares.

- Melt the butter. Stir in sugar and cocoa. Add flour. Mix. Add eggs and vanilla. Mix. Stir in chopped walnuts or pecans.
- Butter 8 x 8 inch glass pan. Spoon mixture into it and bake at 350 for about 25 minutes, until a knife inserted in the center comes out clean.
- Cool until warm but not hot [15 minutes approximately].
- Make frosting:.
- Melt butter and stir in an equal part of powdered cocoa.
- Dump in some powdered sugar, add a little half and half. Stir.
- Keep tweaking ingredients, according to your own taste, until you get your preferred sweetness and spreadability.
- Frost brownies.

- Preheat your oven to 350 degrees Fahrenheit or 175 degrees Celsius.
- Melt the butter and lightly grease a pan of your liking (I used an 8x8 because I like a thicker brownie).
- In a large bowl; combine the flour, cocoa powder, salt, and baking soda.
- In another large bowl; combine the sugar, melted butter, and vanilla extract.
- Once combined beat in the eggs, one at a time, mixing well after each until thoroughly blended.
- Gradually add in the flour mixture to the egg/sugar mixture.
- Toss the chocolate chips in a little flour. (The flour will keep them from sinking to the bottom of the pan.).
- Mix the chocolate chips into the batter.
- Bake for 20-25 minutes. (The brownies are done if you stick a toothpick in the middle and it comes out clean.

- In mixing bowl, combine flour, sugar, baking soda, and salt. Set aside.
- In medium saucepan, combine 1 cup butter, 1 cup water, and 1/3 cup unsweetened cocoa.
- Bring mixture just to boiling, stirring constantly.
- Remove from heat.
- Add chocolate mixture to dry ingredients and beat until thoroughly combined.
- Add eggs, the 1/2 cup buttermilk, and 1 1/2 teaspoons vanilla. Beat for 1 minute (batter will be thin).
- Pour batter into greased and floured 15x10x1 baking pan. Bake at 350F for about 25 minutes or until toothpick inserted into the center comes out clean.
- FROSTING:.
- In medium saucepan, combine 1/4 cup butter, 3 tablespoons unsweetened cocoa powder, and 3 tablespoons buttermilk. Bring to boiling; remove from heat. Add powdered sugar and 1/2 teaspoon vanilla. Beat til smooth. Pour warm frosting over warm brownies, spreading evenly. Cool in pan on wire rack, then cut into bars.

- Preheat oven to 350ºF.
- Spray a 9 x 9-inch pan with non-stick cooking spray.
- Combine the flour, baking powder and salt in a small bowl.
- Melt 1/2 cup of butter with the chocolate.
- Meanwhile, in the bowl of a mixer using a paddle attachment, beat the mascarpone, 6 tablespoons of softened butter, and the sugar until light and smooth.
- Add the eggs to the cheese mixture one at a time and thoroughly scrape the bowl after each egg is added.
- Add the vanilla and mix.
- Add the melted chocolate and mix just until combined.
- Finally, add the dry ingredients and nuts and mix slowly just until combined.
- Pour into the prepared pan and bake approximately 45 minutes or until a toothpick is inserted and comes out clean.
- The brownies will rise during the baking process, but after being removed from the oven will collapse to a normal height. Remove from oven and allow to cool.
- For the frosting, melt chocolate with butter and milk in saucepan.
- Allow to cool.
- Beat mascarpone until well combined.
- Beat in vanilla and melted chocolate mixture.
- Add in confectioners sugar, scraping down the bowl as you go.
- When it has all been incorporated, beat on high speed for 1-2 minutes, until icing is smooth.
- Frost brownies with icing.
SCRUMPTIOUS BROWNIES

- Melt chocolate and butter over very low heat, stirring constantly (or heat in microwave bowl in microwave for 2-2 1/2 minutes, stirring after 1 minute, then stir until melted and smooth.) Cool slightly.
- Beat eggs, sugar, and vanilla in large mixing bowl on high speed for 10 minutes. Blend in chocolate mixture on low speed. Add flour, beating just to combine. Stir in nuts, if using.
- Spread in greased 13x9 inch pan.
- Bake at 375 for 35-40 minutes. DO NOT OVERBAKE.
- Cool in pan, then cut into squares.

I begged a friend of mine that made these for his recipe. Oh my, I couldn't get enough of them. These are very moist and dense and they sort of remind me of fudge. Yum!

Steps:
- Preheat oven to 350°.
- Chop or break chocolate into small pieces.
- In a small saucepan, add chocolate pieces and butter and melt, stirring, over very low heat.
- When Chocolate is completely melted, remove from heat and stir to combine with butter.
- Set aside to cool.
- Butter well a 9 x 13 pan.
- In a medium bowl, add brown sugar and stir in the eggs, mixing well after each addition, breaking up any lumps of sugar.
- When all the eggs have been added, stir in granulated sugar, vanilla and salt.
- Add the chocolate and butter mixture to egg mixture, then slowly stir in flour.
- Add 1/2 the pecans and stir to combine.
- Pour into prepared pan.
- Spread remaining pecans over the top of brownie batter and gently press into the batter.
- Bake at 350° for 30-35 minutes or until toothpick inserted comes out clean and they begin to pull away from pan.
- Cool brownies completely, then refrigerate at least 4 hours.
- Cut into bars and serve.
- They keep about a week if stored in an airtight container.
