WALNUT AND APRICOT TEA LOAF

200g soft apricots, chopped 300ml jasmine green tea (made with a tea bag and boiling water) 300g plain flour 2 tsp baking powder 75g butter ¼ tsp ground cloves 1 tsp ground cinnamon 50g light brown muscovado sugar 75g walnuts, chopped 1 medium Waitrose British Blacktail Free Range Egg 150ml buttermilk

Steps:

  • 1. Preheat the oven to 180°C gas mark 4. Butter and base line a 900g loaf tin. Place the apricots in a bowl and pour over the tea. Leave to stand for 15 minutes. 2. Sift the flour and baking powder into a large bowl and rub in the butter until the mixture looks like breadcrumbs. Stir in the spices, sugar and walnuts. Whisk the egg with the buttermilk and add to the dry ingredients with the apricots and any liquid. Spoon into the prepared tin and level the surface. 3. Bake for 1-1¼ hours until the loaf is risen and golden and a skewer emerges clean from the centre. Cool in the tin for 5 minutes then turn onto a rack and leave until cold. Ideally wrap and store for 24 hours to let the spices develop their flavour.

This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

1 cup snipped dried apricots
2 cups warm water
1 cup sugar
2 tablespoons butter, softened
1 large egg
3/4 cup orange juice
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts

Steps:

  • Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

1 cup dried apricot
1 1/2 cups boiling water
2 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
1 teaspoon vanilla extract
1 cup sugar
1/2 cup vegetable oil
1 cup coarsely chopped walnuts

Steps:

  • Preheat your oven to 350°; grease a 9-inch loaf pan.
  • Cut the apricots into small pieces and places in a bowl; add the boiling water and set aside to cool.
  • Sift the flour, baking powder, and salt and set aside.
  • In a large bowl, combine the egg, vanilla, sugar and oil; beat until blended.
  • Gradually add the apricot mixture, beating constantly.
  • Add the flour mixture and beat until smooth; stir in the nuts, then scrape the dough into the prepared pan.
  • Bake for 1 hour.
  • Let the bread cool in the pan for 10 minutes, then loosen with spatulas and transfer to a rack; cool then wrap in foil and store in the fridge for at least 12 hours before serving.

Enjoy a classic, fruity cake, packed full of plump tea-infused sultanas and raisins. Slice it into thick wedges and spread with salted butter for a satisfying treat

170g sultanas
170g raisins
1 orange, zested
300ml hot strong Earl Grey or Lady Grey tea
2 medium eggs, lightly beaten
250g self-raising flour
200g light soft brown sugar
butter, for greasing, plus extra to serve

Steps:

  • Mix the sultanas, raisins and orange zest in a large mixing bowl. Pour over the tea and cover the bowl. Leave to sit for a minimum of 6 hours or ideally overnight to allow the dried fruit to soak up all the liquid.
  • Heat the oven to 180C/160 fan/gas 4. Grease and line a 900g loaf tin. Add the eggs, flour and sugar to the soaked fruit, ensuring everything is well combined. Spoon the mixture into the tin and place in the centre of the oven for 1 hour 30 mins or until firm to the touch. Leave to cool in the tin for 15 mins before transferring to a wire rack.
  • Cut into thick slices and serve with butter. To store, wrap tightly and keep in an airtight container for up to five days. The loaf will taste even better after a few days.

This is a great recipe when you have just one apple languishing in your fruit bowl and it is past the point where it would taste good eating it as is. This loaf is moist and delicious - a great accompaniment to a cup of coffee or tea.

2 cups whole wheat flour
1 teaspoon baking powder
1 pinch salt
1/2 cup melted butter or 1/2 cup margarine
1 cup light brown sugar
2 eggs, lightly beaten
1 grated orange, juice and rind of
1/2 cup chopped walnuts
1/2 cup chopped dried apricot
1 large cooking apple

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 2 pound loaf pan.
  • Sift together the flour, baking powder, bran and salt into a large mixing bowl.
  • Add the melted butter, sugar, eggs, orange rind and juice.
  • Stir, then beat with an electric mixer until smooth.
  • Stir in the walnuts and apricots.
  • Peel, quarter and core the apple, chop it up roughly and add it to the mixture.
  • Stir, then spoon into the prepared pan and level the top.
  • Bake for 1 hour or until a cake tester inserted into the middle comes out clean.
  • Cool in the pan for 5 minutes, then turn out onto a rack and cool completely.

  • Cut the dried apricots into halves or quarters, I find a pair of scissors is the best way to do this, although you can use a knife.
  • Put the dried fruit and sugar in a bowl and pour over the hot tea. Leave it overnight to soak up the tea, but I didn't have time, so mine got 2 hours and was still pretty wet.
