RIGATONI WITH SOUTHWESTERN-STYLE GROUND-TURKEY SAUCE

1/2 cup minced red onion
2 tablespoons olive oil
1 garlic clove, minced
1 small red bell pepper, cut into 1/4-inch diced
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne
3/4 pound ground turkey
1 14-ounce can plum tomatoes including-the juice
1 pinch of dried hot red pepper
1/4 cup finely chopped fresh coriander plus coriander sprigs for garnish if desired
1/4 pound rigatoni
coarsely grated Monterey Jack for sprinkling the pasta

Steps:

  • In a large skillet cook the onion in the oil over moderately low heat, stirring occasionally, until it is softened, add the garlic, the bell pepper, the chili powder, the cumin, and the cayenne, and cook the mixture, stirring, for 1 minute. Add the turkey and cook the mixture over moderately high heat, stirring and breaking up the turkey with a wooden spoon, for 3 to 4 minutes, or until the turkey is no longer pink. Stir in the tomatoes with the juice, breaking them up, the red pepper flakes, the chopped coriander, and salt and pepper to taste and simmer the sauce, stirring occasionally, for 10 minutes, or until it is thickened.
  • While the sauce is simmering, in a kettle of boiling salted water cook the rigatoni untul it is al dente, drain it well, and divide it between 2 bowls. Divide the sauce between the bowls, sprinkle it with the Monterey Jack, and garnish each serving with a coriander sprig.

1/2 lb dry rigatoni pasta
1/2 lb lean ground turkey
1 small onion, diced
2 tomatoes, seeded and diced
2 garlic cloves, minced
1 (14 ounce) can tomato sauce
1 tablespoon salt
1/2 teaspoon crushed red pepper flakes
1 teaspoon ground black pepper
1 dash garlic powder
1 dash onion powder
parmesan cheese, to serve

Steps:

  • In a saute pan, brown turkey meat until cooked through and set aside.
  • In a sauce pot, saute garlic and onion until translucent, about 5-8 minutes.
  • Add fresh diced tomatoes and continue to saute for a couple minutes.
  • Add tomato sauce, salt and pepper and the rest of the spices and simmer for 10 minutes.
  • Stir in meat and continue to simmer lightly for another 5-10 minutes.
  • Boil pasta while sauce simmers.
  • Top with fresh grated Parmesan cheese to serve.
  • **If the sauce starts to thicken too much for your taste, just put the lid on the pot while it simmers until the pasta is done.

1/2 lb rigatoni pasta
4 teaspoons olive oil
1/2 cup onion, diced
1 1/2 garlic cloves, crushed
2/3 lb lean ground turkey
1 dash salt, to taste
1 dash fresh ground black pepper, to taste
2 cups tomato sauce
2/3 cup black olives, halved and pitted
1/3 cup fresh basil, chopped
2/3 cup fat free mozzarella cheese, grated
1/3 cup parmesan cheese, freshly grated

Steps:

  • Preheat the oven to 350°F
  • Bring 1/2 gallon of salted water to boil. Add the rigatoni and cook until al dente, about 8 to 10 minutes. Drain and rinse with cold water.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 4 to 5 minutes. Add the garlic and cook 30 seconds more. Add the ground turkey, season with salt and pepper, and brown. Drain off the excess fat.
  • Add the tomato sauce and olives, and simmer for 5 minutes. Adjust the seasoning.
  • In a casserole dish, toss the rigatoni, meat sauce and basil together. Sprinkle with the cheeses.
  • Bake until the cheese is bubbly and brown and the dish is thoroughly heated, about 15 to 20 minutes; bake longer if the dish has been refrigerated.
