Baked Spinach, Feta, and Turkey Meatballs image

These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets." Did you know that a combine is a giant tractor that harvests crops from the field? Well, I most certainly didn't until my 3-year-old told me! Therefore, thanks to the hardworking combines we can put the green things in our nuggets.

1 pound lean ground turkey
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (6 ounce) container crumbled feta cheese
½ teaspoon paprika
½ teaspoon onion powder
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 24-cup mini muffin tin with cooking spray.
  • Mix together turkey, drained spinach, feta cheese, paprika, onion powder, salt, and pepper in a large bowl until well combined. Roll into 24 meatballs and place in the prepared muffin tin.
  • Bake in the preheated oven until meatballs are cooked through, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Baked Turkey and Spinach Meatballs with Orzo image

Since ground turkey can be dry, we used a flavorful spinach and garlic paste here to help keep it moist. The paste does double duty and helps cut prep time, since it's also used as the flavoring base for the orzo.

1 5-ounce package baby spinach (about 8 cups)
1/2 onion, chopped
2 cloves garlic, crushed
1 pound ground turkey
3/4 cup panko
1 large egg, beaten
1/2 cup grated Parmesan cheese
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1 cup orzo
1 1/2 cups frozen artichoke quarters, coarsely chopped
2 cups low-sodium chicken broth

Steps:

  • Position a rack in the upper third of the oven; preheat to 425˚ F. Line a rimmed baking sheet with parchment paper. Combine half of the spinach, the onion and garlic in a food processor; pulse to make a coarse paste. Transfer all but 1/4 cup of the paste to a large bowl.
  • Add the turkey, panko, egg and 1/4 cup Parmesan to the bowl. Season with 1/2 teaspoon salt and a few grinds of pepper and mix to combine. Form into 12 meatballs and place on the baking sheet.
  • Bake the meatballs until golden and cooked through, about 15 minutes. Switch the oven to broil and broil the meatballs until browned on top, 1 to 2 minutes.
  • Meanwhile, melt the butter in a large skillet over medium heat. Add the orzo and artichokes and cook, stirring, until lightly toasted, 1 to 2 minutes. Add the reserved 1/4 cup spinach paste, 1/2 teaspoon salt and a few grinds of pepper; stir to coat the orzo. Pour in the chicken broth, bring to a simmer, cover and cook, stirring occasionally, until most of the broth is absorbed and the orzo is saucy but still al dente, about 10 minutes. Add 1/2 cup water and the remaining spinach; bring to a simmer, uncovered. Cook, stirring occasionally, until the spinach wilts but is still bright green, 1 to 2 minutes. Stir in the remaining 1/4 cup Parmesan.
  • Divide the orzo among shallow bowls. Top with the meatballs.

1 large egg, beaten
1 cup soft bread crumbs
2 tablespoons grated onion
1 teaspoon seasoned salt
1 pound ground turkey
Hot cooked pasta, optional

Steps:

  • In a bowl, combine spinach, egg, bread crumbs, onion and seasoned salt. Add turkey and mix well. Shape into 2-in. balls. Place meatballs on a greased rack in a shallow baking pan. Bake, uncovered, at 400° for 20 minutes or until the meat is no longer pink. Drain on paper towels. If desired, serve meatballs with pasta.

  • Roughly Chop the spinach. Heat a large skillet over medium, then add 1 Tbsp olive oil. Add the chopped spinach and a pinch of salt. Sauté the spinach until it has fully wilted, then remove it from the heat.
  • While the spinach is sautéing, stir together the breadcrumbs, garlic powder, freshly cracked pepper (5 or 6 cranks of a pepper mill), and salt in a large bowl. Lightly whisk the egg, then add the egg, ground turkey, sautéed spinach, and crumbled feta to the bowl with the breadcrumbs. Use your hands to combine these ingredients until evenly mixed.
  • Shape the meat mixture into balls, about one heaping tablespoon each. You should get approximately 24 meatballs.
  • Wipe out the skillet used for the spinach, add another tablespoon of oil, and heat the skillet once again over medium. Once hot, swirl the oil in the skillet to make sure the surface is coated, then add half of the meatballs. Cook the meatballs for about a minute to a minute and a half on each side, or until the meatballs are well browned and cooked through (about 6-8 minutes total). Remove the cooked meatballs to a clean bowl and repeat with the second batch.
