- Preheat the oven to 425 degrees F. Toss the bell peppers, fennel, red onion, 2 tablespoons olive oil, 1/2 teaspoon salt and a few grinds of pepper on a rimmed baking sheet. Bake, stirring occasionally, until the vegetables are tender and lightly browned, about 25 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs; drain. Put the kale in a large bowl and top with the warm tortellini and roasted vegetables.
- Heat the remaining 1/4 cup olive oil in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until it just starts browning, about 2 minutes. Remove from the heat and add the vinegar; pour over the tortellini mixture and toss to coat. Add the basil and fennel fronds, season with salt and pepper and toss.

- Cook the pasta in boiling, salted water, with about 1 tbs olive oil. for 3-5 minutes - until the tortellini floats to the surface. Do not overcook.
- Microwave the broccoli for about 3-4 minutes - till warm, but not soft.
- Drain pasta.
- Meanwhile, unceremoniously dump the canned tuna (with oil) into the pot.
- Add pesto, olive oil, garlic powder and salt if desired.
- Toss together, then add drained pasta and broccoli.
- Toss all together, gently, until mixed.
- Top each serving with freshly grated cheese, and a sprig of fresh basil, if you are lucky enough to have some handy.

SIMPLE YET YUMMY TORTELLINI SALAD
I was making pasta salad for a picnic and noticed that I ran out of dressing. All I had was extra-virgin olive oil. So, that's all I used, with some salt. It was so much better this way. Everyone wanted the recipe and then couldn't believe that oil was the only thing on this salad. Please try it this way and if you don't agree, you can always add vinegar or something. - Fill a large pot with 4 quarts water and put on high heat to boil.
- Chop onion and celery and saute in a little oil or spray. (Note: Feel free to add mushrooms or peppers, I can barely get away with celery with my family's tastes).
- Preheat oven to 350 degrees.
- Add tortellini to water and cook per package directions - you can undercook a little.
- In a 2 quart casserole, mix tuna, soup, and milk.

- Cook the tortellini in boiling water for about 11 minutes, or according to package directions.
- Turn out into colander and let drain.
- While the tortellini is draining, combine the tuna, soup, mushrooms and 1 cup of the cheese in the tortellini pot.
- Add the drained tortellini and the frozen peas; mix lightly to coat.
- Spoon mixture into an 8X8 square baking dish. Sprinkle with remaining cheese.
- Sprinkle crushed chips over casserole.
- Bake in 350 degree oven for 25-30 minutes.
