The best Roasted Broccoli and Carrots with Parmesan in the oven. Tender inside and crispy outside, this is the most delicious way to cook vegetables!

6 medium carrots (peeled (about 10 ounces))
1 large head broccoli (cut into florets (about 3 cups florets))
1 1/2 teaspoons Italian seasoning
1/2 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 tablespoons extra-virgin olive oil
3 tablespoons finely grated Parmesan cheese (optional for serving)

Steps:

  • Preheat the oven to 400 degrees F. Generously coat a large rimmed baking sheet with non-stick spray.
  • If the carrots are thick, cut them in half lengthwise. Cut diagonally into 1 ½-inch thick slices, then place the carrots in the center of the baking sheet. Add the broccoli florets to the baking sheet with the carrots.
  • In a small bowl, stir together the Italian seasoning, salt, pepper, garlic powder, and onion powder. Drizzle the vegetables with the oil, then sprinkle on the spice mix. Toss to coat the vegetables evenly, then spread them into an even layer.
  • Place in the oven and roast for 20 minutes, until they are browned and tender, tossing once halfway through. Sprinkle with Parmesan. Enjoy hot.

1 pound broccoli, rinsed and trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup panko bread crumbs
1/4 cup finely grated Parmesan or sharp Cheddar

Steps:

  • Preheat oven to 425 degrees F.
  • Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8-inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, kosher salt and pepper and set aside.
  • Spread the panko into a 13 by 9-inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes. Remove from the oven, toss in the cheese and serve immediately.

10 ounces broccoli crowns
2 cloves garlic, peeled and thinly sliced
1 tablespoon olive oil, or avocado oil
1/4 teaspoon fine sea salt
1/8 teaspoon black pepper
pinch of crushed red pepper flakes, optional
1/2 lemon, sliced into wedges, optional

Steps:

  • Adjust your toaster oven cooking rack to the lowest position and heat to 425°F on the "Bake" setting. Lightly oil a rimmed baking pan. Cut the broccoli florets from the stalks and slice large florets in half or quarter. Peel the stalks and slice into 1/4-inch rounds. Add all of the broccoli, garlic, oil, salt, pepper, and red pepper flakes to the pan. Toss well to combine and then spread in an even layer. Roast broccoli until the florets are lightly browned and fork tender, about 10 to 16 minutes depending on the size of your florets and personal preference. Squeeze lemon wedges over pan, add more salt and pepper to taste and toss broccoli before serving.

If you've never roasted broccoli rabe, this recipe will be a revelation. The high heat renders the stems and florets tender while the leaves crisp around the edges, like kale chips but with a spicy broccoli bite. Make sure not to crowd the pan or everything will steam rather than roast. This recipe will also work with regular broccoli. Cut the head up into bite-sized pieces and add 5 to 10 minutes to the cooking time.

The garlic is smashed and diced to get as much garlic flavor as you can from each clove.

1 bunch broccoli, cut into pieces
1/4 cup olive oil
2 -4 garlic cloves, smashed and diced
1/4 teaspoon red pepper flakes (optional)
salt and pepper
1/4 cup parmesan cheese, grated

Steps:

  • Preheat to the oven to 400°F.
  • Mix together the oil, garlic, red pepper flakes, salt and pepper.
  • Toss together the broccoli and the oil mixture in a large bowl.
  • You may have to adjust the oil a bit if your bunch of broccoli is smallish.
  • You don't want it swimming in oil on the cookie sheet.
  • Put broccoli on cookie sheet.
  • Place in the oven for about 10-15 minutes.
  • Be sure and check often to make sure it's not burning, you want it to caramelize but not burn.
  • If you don't like al dente broccoli, cook a little longer.
  • I usually remove after 10-15 minutes.
  • When the broccoli is as done as you like remove from the oven and toss with the cheese.

Steps:

  • Preheat the oven to 375 degrees F.
  • Trim 2 inches off the ends of the broccolini stems and cut any thick stalks in half lengthwise. Place the broccolini in a single layer on two sheet pans. (If you put them on one sheet pan, the broccolini will steam rather than roast.) Drizzle each sheet pan with 2 tablespoons olive oil, sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper, and toss well. Roast for 15 minutes, until the broccolini is crisp-tender.
