A recipe listed on the Crock-Pot website. The original has raisins but I've left those out in order to make it work for the Fat Flush Plan, Phase 2.

1 tablespoon olive oil
2 lbs chicken breasts
2 fresh peaches, skinned and sliced (reserve 8 slices for garnish)
2 tablespoons lemon juice
2 shallots, thinly sliced
2 teaspoons grated gingerroot
2 garlic cloves, minced
1 teaspoon curry powder
2 teaspoons cumin
1/2 teaspoon whole cloves
3/4 cup chicken stock
1 tablespoon cider vinegar
1 teaspoon cayenne pepper

Steps:

  • Heat the olive oil in a skillet, add chicken and lightly brown (about 3 minutes a side).
  • Transfer chicken to Crock-Pot and top with peaches and shallots.
  • Toss the remaining 8 peach slices with lemon juice and refrigerate.
  • Combine remaining ingredients in a bowl, whisk to combine and pour over chicken.
  • Cook on High for 3 - 3 1/2 hours.
  • When finished garnish the chicken with the reserved peaches.
  • * To skin a peach, either use a peeler OR make an "x" at the bottom of the peach with a knife, submerge the peach into simmering water for 10 - 20 seconds. Cool under running water or in an ice water bath. When cool enough to handle, use a paring knife to easily peel away skin.

1 broiler/fryer chicken (3 pounds), cut up
1/8 teaspoon salt
1/8 teaspoon pepper
1 can (29 ounces) sliced peaches
1/2 cup chicken broth
2 tablespoons butter, melted
1 tablespoon dried minced onion
2 teaspoons curry powder
2 garlic cloves, minced
1/4 teaspoon ground ginger
3 tablespoons cornstarch
3 tablespoons cold water
1/4 cup raisins
Toasted sweetened shredded coconut, optional

Steps:

  • Place chicken in a 5-qt. slow cooker; sprinkle with salt and pepper. Drain peaches, reserving 1/2 cup juice; set peaches aside. In a small bowl, combine broth, butter, onion, curry, garlic, ginger and reserved juice; pour over chicken. Cook, covered, on low 3-4 hours or until chicken is tender., Remove chicken to a serving platter; keep warm. Mix cornstarch and water until smooth; stir into cooking juices. Add raisins. Cook, covered, on high 15 minutes or until thickened. Stir in peaches and heat through. Serve with chicken. If desired, sprinkle with coconut.

1 teaspoon curry powder
2 cups cubed cooked chicken breasts

2 shallots, or 1 small onion
1 stalk lemongrass
1 tbsp vegetable oil
3-4 tsp red Thai curry paste
4 boneless and skinless chicken breasts, cut into bite-size pieces
1 tbsp fish sauce
1 tsp sugar, brown is best
4 lime leaves
400ml can coconut milk
20g pack fresh coriander

Steps:

  • Peel shallots or onion and cut in half from top to root. Lay the cut sides flat on a board and thinly slice. Very finely slice the lemongrass, starting at the thinner end, stopping towards the base when it gets tough (often described as 'woody' and white in the centre).
  • Heat the oil in a wok or large saucepan for a couple of minutes until the oil separates (it looks more liquid at this point). Add the shallots or onion. Fry for 3-5 mins, until soft and translucent. Stir in the curry paste and cook for 1 min, stirring all the time.
  • Add chicken pieces and stir until they are coated. Add the lemongrass, fish sauce, sugar, lime leaves and coconut milk. Bring slowly to the boil, then reduce heat and simmer, uncovered, for 15 mins until the chicken is cooked. Stir the curry a few times while it cooks, to stop it sticking and to keep the chicken submerged.
  • While the chicken is cooking, strip the leaves from the coriander stalks, gather into a pile and chop very roughly. Taste the curry and add a little more curry paste and salt if you think it needs it. Stir half the coriander into the curry and sprinkle the rest over the top. Serve with Thai jasmine or basmati rice.

This is a Thai chicken curry recipe I've been perfecting for many years. It is extremely flavorful, and the potatoes come out perfect, my favorite part of the dish. Serve over basmati rice.

1 teaspoon sesame oil, or as needed
1 yellow onion, roughly chopped
3 cloves garlic, minced
2 red potatoes, peeled and cut into 1-inch cubes
2 carrots, sliced
2 tablespoons Thai yellow curry paste
1 tablespoon minced fresh ginger root
1 tablespoon fish sauce
½ teaspoon Thai red chile paste
⅓ teaspoon ground coriander
1 (14 ounce) can coconut milk
1 cup water, divided
salt and ground black pepper to taste
1 pound skinless, boneless chicken breast halves, cut into thin strips
1 cup sliced zucchini
1 red bell pepper, cut into strips
1 tablespoon cornstarch
2 tablespoons chopped fresh cilantro
1 lime, juiced

Steps:

  • Heat sesame oil over medium heat in a large saucepan. Saute onion and garlic in the hot oil until garlic begins to brown, 3 to 4 minutes. Add potatoes, carrots, curry paste, ginger, fish sauce, chile paste, and coriander; stir until evenly coated and well mixed.
  • Stir coconut milk and 1/2 cup water into the saucepan. Season with salt and pepper. Cover, reduce heat to low, and simmer for 10 minutes. Stir in chicken, zucchini, and bell pepper. Continue to simmer, covered, until chicken is no longer pink in the center, about 5 minutes more.
  • Dissolve cornstarch in remaining 1/2 cup water in a small bowl; stir into the simmering mixture. Uncover, raise heat to high, and bring to a boil. Continue to boil for 3 to 4 minutes. Remove from heat. Stir in cilantro and lime juice just prior to serving.

1 cup uncooked basmati rice
1 pound boneless, skinless chicken breast halves
2 tablespoons Gold Medal™ all-purpose flour
2 teaspoons curry powder
1/2 teaspoon salt
1 medium red bell pepper, cut into 1/2-inch pieces
3/4 cup white grape-peach or apple juice
6 green onions, cut into 1/2-inch pieces (1/2 cup)
2 tablespoons peach preserves
1 medium peach, peeled, sliced and cut crosswise in half

Steps:

  • Cook rice as directed on package.
  • While rice is cooking, cut chicken into 3/4-inch pieces. Mix flour, curry powder and salt in medium bowl. Add chicken; toss to coat. Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Add chicken; stir-fry 4 to 6 minutes or until brown.
  • Stir in bell pepper and juice. Cover and cook over medium-low heat 5 minutes, stirring occasionally. Add onions; cook and stir 1 minute.
  • Stir in preserves until melted. Stir in peach. Divide rice among bowls. Top with chicken mixture.

4 skinless chicken breast halves
2 tablespoons olive oil or 2 tablespoons butter
1 medium onion, chopped fine
1 1/2 tablespoons curry powder
1 1/2 tablespoons flour
2 cups chicken stock
1 garlic clove, crushed
1/2 cup coconut milk
1 tablespoon red currant jelly (or juice of half a lemon mixed with 2 tsp sugar)
3 -4 tablespoons heavy cream
1 teaspoon arrowroot
1 tablespoon stock
2 ripe peaches, cut in half

Steps:

  • Brown the chicken breasts slowly in half the oil.
  • When brown on all sides, remove from pan and keep warm.
  • Heat remaining oil or butter in the same pan.
  • Add onion and gently cook until brown.
  • Stir in curry powder and cook 3 minutes.
  • Sprinkle in flour and cook 1 minute.
  • Remove from heat and pour in stock.
  • Add garlic and bring to a boil.
  • Simmer 20 minutes.
  • Return chicken to pan.
  • Cover and cook for 45 minutes or until tender.
  • Transfer chicken to a casserole dish.
  • Strain sauce into a pan.
  • Add coconut milk and red currant jelly and simmer 3 minutes.
  • Stir in heavy cream into curry sauce and thicken if needed with arrowroot made into a paste with 1 Tbsp stock.
  • Add peaches and heat.
  • Pour over chicken.
  • Serve with rice.
