3-4 lbs pork shoulder
1 tsp kosher salt per lb
1 bag broccoli slaw mix
1 jalapeño (julienned)
1/2 apple (julienned (use a sweet apple like gala))
1/2 tbsp mayo
1 tbsp BBQ sauce
1 tsp kosher salt
1/2 tsp black pepper
2 large sweet potatoes (sliced)
1 tbsp avocado oil
2 tsp kosher salt
1 tsp black pepper
Pulled pork
Sweet potato "buns"
Sweet and spicy broccoli coleslaw
BBQ sauce
Jalapeno slices

Steps:

  • Season pork shoulder with salt.
  • Place pork shoulder in slow cooker.
  • Cook on low for 12-14 hours depending on size and slow cooker.
  • Shred pork shoulder with two forks.
  • Mix all ingredients in a bowl.
  • Season to taste with salt and pepper.
  • Refrigerate for at least an hour or until ready to use.
  • Pre-heat oven to 400F.
  • Toss sweet potato slices with avocado oil, salt and pepper
  • Place on baking sheet in one layer.
  • Roast for 35-40 minutes flipping half way through.
  • Note: this can also be done on a grill if you're BBQ-ing
  • Smear BBQ sauce on sweet potato "buns"
  • Top buns with pulled pork, broccoli coleslaw and jalapeno slices (optional).

One 4 to 5 pound Smithfield Boneless Pork Shoulder Blade Roast
One 12-ounce jar apricot preserves
One 12-ounce jar chili sauce
10 to 12 hamburger/sandwich buns (we love onion buns)
10 to 12 slices cheese (any kind, but we use cheddar)
coleslaw (already prepared from the deli, or homemade)
sriracha sauce

Steps:

  • Place the roast in the insert of your slow cooker (fat-side-up). In a medium bowl, whisk together the preserves and the chili sauce. Pour over the roast in the slow cooker. Put on the lid and set to cook on low for 10 to 12 hours. When the pork is done cooking, remove it from the pan and set it on a cutting board. Pour the sauce into a bowl and set it in the refrigerator. Shred the pork (remove any pieces of fat and discard) and put the pork into a bowl. At this point, you can cover the pork and refrigerate until you are ready to serve... or you can pull out the sauce, skim off any fat and add several generous spoonfuls of the sauce back onto the pork. Stir to coat, re-heat as you wish and you're ready to assemble. Preheat your broiler. Place the bottom buns on a large baking sheet. Top each bun with warmed pork and a slice of cheese. Broil 2 to 3 minutes, or until the cheese is melted and bubbly. To serve, top each with coleslaw and a good drizzle of sriracha sauce. Put tops on each sandwich and serve.

3 tablespoons paprika
3 teaspoons salt
3 teaspoons pepper
1 teaspoon garlic powder
1 teaspoon ground mustard
1 boneless pork shoulder butt roast (3 to 4 pounds)
1 bottle (18 ounces) barbecue sauce
10 hamburger buns, split

Steps:

  • In a small bowl, whisk the first 6 ingredients; rub over roast. Place roast in a 5- or 6-qt. slow cooker. Cook, covered, on low until meat is tender, 8-10 hours., Remove roast; cool slightly. Discard cooking juices. Shred pork with 2 forks; return to slow cooker. Stir in barbecue sauce; heat through. Serve on buns. To make ahead: In a small bowl, whisk the first 6 ingredients; rub over roast. Place roast in a freezer container and freeze. To use, place roast in refrigerator 48 hours or until completely thawed. Cook and serve as directed. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.

2 medium onions, sliced (about 2 cups)
2 tablespoons brown sugar
1 tablespoon smoked paprika

2 teaspoons kosher salt
1 ½ teaspoons dark brown sugar, or more to taste

1 (6 pound) Boston pork butt roast
13 fluid ounces ginger beer

Steps:

  • Arrange sweet onions in the bottom of a slow cooker.
  • Mix salt, brown sugar, paprika, black pepper, garlic powder, and red pepper flakes together in a bowl until seasonings are well mixed; rub all over pork roast. Place roast in the slow cooker, fat-side up. Brush any leftover seasonings mixture from the work surface into the slow cooker.

1 can (15 ounces) tomato sauce

1 (5 to 7-pound) pork shoulder
1/2 cup light brown sugar
4 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon salt
1 1/2 teaspoons cayenne pepper
2 onions, coarsely chopped
2 cups low-sodium broth or water
1 cup cola

Steps:

  • Preheat the oven to 350 degrees F. Rinse and dry the pork shoulder.
  • Mix together the brown sugar, garlic, cumin, salt, and cayenne. Rub the mixture generously and evenly over the pork shoulder.
  • In a large roasting pan or Dutch oven, add the chopped onions, broth, and cola. Place the seasoned pork in the Dutch oven and roast for 4 to 6 hours, checking the pork every hour for tenderness and liquid level.
  • When the pork is tender enough that it is falling apart, shred it with a fork. Reserve the juices and pour them over the shredded pork before serving.

i made this last week, my first attempt at pulled pork, and it was a winner. i had a spicy carolina style pp sandwich at a native american festival, and got into a chat with the cooks. this was the recipe, from what i can recall as it was told to me. by the way, this is by no means a low fat dish. trying to make it low fat will just not be the same. please enjoy it the way it was meant to be. pork fat rules!

3 tablespoons brown sugar
2 tablespoons paprika
2 teaspoons sea salt
1 teaspoon freshly cracked black pepper
5 lbs pork shoulder
1 cup red wine vinegar
2 tablespoons Worcestershire sauce
2 teaspoons crushed red pepper flakes
2 teaspoons sugar
1 tablespoon spicy brown mustard
1 tablespoon garlic powder
1/2 teaspoon powdered cayenne pepper
2 red onions, quartered
2 yellow onions, quartered

Steps:

  • combine the brown sugar, paprika, salt and pepper, and rub the mixture over the roast. wrap tightly in plastic, and refrigerate a few hours, overnight is best.
  • in a bowl, combine the vinegar, worcestershire sauce, red pepper flakes, sugar, mustard, garlic powder, and cayenne pepper. mix well.
  • place the quartered onions in the bottom of the crock pot. unwrap the roast, and place on top of onions. drizzle most of the vinegar mix over the roast, reserving some to add to the shredded meat at the end.
  • cover and cook on low for 7 to 8 hours, or high for 4 to 5 hours.
  • remove the meat and onions to a cutting board. remove skin and set aside. using two forks (or your fingers, if you have asbestos hands), pull and shred the pork. chop the onions, and mix into the shredded meat. using a fork, remove some of the fat from under the skin, mince, and add to the shredded meat and onions as needed for moisture and flavor.
  • serve on warm buns or crusty hard rolls, with the remaining vinegar mixture on the side.
