In South Africa, a braai is an outdoor barbecue over an open fire. To replicate the smoky flavors indoors, we've added smoked paprika to the traditional spice mix. Use this blend to season roasted vegetables, chicken or beef.

Steps:
- Combine the coriander, paprika, black pepper, garlic powder, onion powder, allspice, cayenne and nutmeg in a small skillet. Toast over medium-low heat, stirring occasionally, until lightly toasted and aromatic, 2 to 3 minutes. Let cool in the pan. Stir in the brown sugar. The spice mix will keep for several weeks in an airtight container in your pantry.

Steps:
- Preheat oven to 375* F. Grease a 13x9x2 inch baking dish. Place salmon in dish. Combine brown sugar, mustard, salt, cayenne, and ginger, and sprinkle mixture over salmon. Dot with butter.
- Bake uncovered at 375* F for 20-23 minutes or until fish flakes easily with a fork.
- While salmon bakes, make salsa by combining all salsa ingredients in a small bowl and mixing together. Serve along with salmon.

- Lightly sprinkle bottom layer with brown sugar and dust with cinnamon.
- Scatter with thin slivers of dried apricots and chopped pecans.
- Replace top layer.
- Heat in 350 degree oven for 5-7 minutes or in a microwave oven on low until soft to touch.
- Garnish serving plate with whole pecans and dried apricot halves.
- Serve with crackers.
