Stuffed aubergines image

A great example of 'cucina povera' (kitchen of the poor), simple, yet flavoursome peasant-style Italian cooking at its best.

Number Of Ingredients 13

4 large aubergines
6 tbsp olive oil
1 large onion, finely chopped
3 garlic cloves, finely chopped
1 tsp dried thyme
1 tsp dried oregano
pinch dried red chilli flakes (optional)
4 tomatoes, skinned and roughly chopped
50g/1¾oz white breadcrumbs (ciabatta is good)
25g/1oz Parmesan or Pecorino, or alternative vegetarian hard cheese, freshly grated
½ unwaxed lemon, finely grated zest only
handful fresh basil leaves, shredded
salt and freshly ground black pepper

Steps:

  • Preheat the oven to 200C/Fan 180C/Gas 6. Cut the aubergines in half, lengthways, and (leaving a border of around 5mm/¼in), cut out the flesh.
  • Dice the flesh and set aside. Brush the inside of the aubergines with olive oil and season with salt. Place in a baking tin and cover with foil. Bake for 20 minutes.
  • Heat 2 tablespoons of the olive oil in a pan. Add the onion and fry gently over a medium heat for 10 minutes, or until softened.
  • Increase the heat, add the garlic and aubergine flesh and stir until the aubergine has lightly browned. Add the herbs, chilli flakes, if using, and the tomatoes and season with salt and pepper. Stir to combine, reduce the heat and cover.
  • Simmer for 10 minutes, remove the lid and continue to cook until any liquid has evaporated.
  • Spoon the mixture into the aubergine halves. Mix the breadcrumbs with the cheese, lemon zest and basil, and season with a little salt and pepper. Sprinkle this over the stuffed aubergines, and drizzle with more olive oil.
  • Bake the aubergines, uncovered, for 25-30 minutes, or until the filling is hot and the top has lightly browned. Serve.

Jam-packed with flavour, this totally tasty traybake is a must-try dish.

1 onion
4 cloves of garlic
4 cm piece of ginger
½ a bunch of fresh coriander, (15g)
2 fresh red chillies
1 teaspoon each cumin seeds, mustard seeds, ground turmeric, garam masala, fenugreek seeds
1 big handful of fresh curry leaves
groundnut oil
2 heaped tablespoons crunchy peanut butter
1 tablespoon mango chutney
2 level tablespoons tamarind paste
12 finger aubergines, (800g total)
1 x 400 g tin of light coconut milk
250 g ripe mixed-colour cherry tomatoes

Steps:

  • Preheat the oven to 190ºC/375ºF/gas 5.
  • Peel the onion, garlic and ginger, place in a food processor with the coriander stalks and chillies (deseed if you like), and whiz to a fine paste.
  • Put the spices and curry leaves into a 25cm x 35cm roasting tray on a low heat with 2 tablespoons of oil and fry for 1 minute, or until smelling fantastic, stirring constantly.
  • Tip in the paste and cook for 5 minutes, or until softened, stirring regularly.
  • Stir in the peanut butter, mango chutney and tamarind paste, season with a good pinch of sea salt and black pepper, then scrape into a bowl, adding a splash of water to loosen to a paste, if needed.
  • Leaving them intact at the stalk, prick the whole aubergines all over with a fork, cut into quarters lengthways, rub and stuff them generously with all the paste, then arrange them in the tray (if using regular aubergines, simply trim then cut into 1cm-thick rounds and sandwich the paste between them).
  • Place the tray on a medium heat and fry for 5 minutes, turning halfway.
  • Add the coconut milk, roughly chop and sprinkle over the tomatoes, season well with salt and pepper, and bring to the boil.
  • Cover with tin foil and roast for 40 minutes, or until thickened and reduced, removing the foil halfway. Season to perfection and scatter over the coriander leaves. Always good with fluffy rice, poppadoms, yoghurt and extra fresh chilli.

Italian-style stuffed aubergines image

Forget stuffed peppers and serve your veggie guests this sophisticated stuffed aubergine dish instead

2 aubergines
2 tbsp olive oil, plus extra for drizzling
1 large onion, finely chopped
4 garlic cloves, finely chopped
12 cherry tomatoes, halved
50g pitted green olives, chopped
handful basil leaves, chopped
125g ball vegetarian mozzarella, torn into bite-size pieces
handful fresh white breadcrumbs

Steps:

  • Heat oven to 220C/200C fan/gas 7. Slice the aubergines in half lengthways, leaving the stem intact. Using a small knife, cut a border inside each aubergine about ½-1cm thick. Using a teaspoon, scoop out the aubergine flesh, so that you have 4 shells. Brush these with a little of the oil, season and place in a baking dish. Cover with foil and bake for 20 mins. Chop the flesh and place to one side.
  • Meanwhile, add the remaining oil to a non-stick frying pan. Tip in the onion and cook until soft. Add the chopped aubergine flesh and cook through. Tip in the garlic and tomatoes and cook for 3 mins more. Stir in olives, basil, mozzarella and seasoning.
  • When the aubergine shells are tender, remove from the oven and reduce heat to 200C/180C fan/gas 6. Pile stuffing into shells, sprinkle with breadcrumbs and drizzle with a little more oil. Bake for 15-20 mins, until the cheese is gooey and the breadcrumbs are golden. Serve with a green salad.

This iron-rich supper is packed with tasty ingredients. Ras el hanout, sultanas, pine nuts and herbs give it an irresistible North African flavour

4 medium aubergines , cut in half lengthways and scored on a diagonal
2 ½ tbsp olive oil
500g pack lamb mince
1 red onion , finely chopped
1 tsp paprika
2 tsp ras el hanout
50g sultanas
50g pine nuts
½ small pack parsley , chopped
green salad , to serve

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Place the aubergine halves on a large baking tray or two smaller ones. Drizzle over 2 tbsp of the oil and season the aubergines well. Cover with foil then roast the aubergines for 50 mins until tender.
  • Meanwhile, make the lamb stuffing. Heat the remaining oil in a frying pan over a high heat. Add the lamb, breaking down the meat with the back of a wooden spoon. Fry for 5-6 mins or until most of the liquid has evaporated and the mince has started to brown.
  • Add the onion and spices and cook for another 5 mins until the meat is completely brown and has become caramelised and sticky. Add the sultanas, pine nuts and parsley, season to taste, then set aside.
  • Carefully scoop most of the flesh out of the aubergines and add it to the lamb, then refill each aubergine with the mixture. Return to the oven for 8-10 mins, until piping hot. Serve with a green salad.

A healthy and hearty vegetarian meal that is so easy to prepare and full of Greek flavour too.

1 aubergine (eggplant)
1 tbsp red onion (chopped)
1 tbsp red pepper (chopped)
1 tbsp courgette (chopped)
2 tsp sultanas
2 tsp seeds (pumpkin, sunflower etc)
1 clove garlic (minced)
1 tomato (chopped)
2 tbsp feta (crumbled)
1/2 tsp chilli (or 1/4 tsp dried chilli flakes)
2 tbsp rice (cooked rice or quinoa)
1 tbsp coriander
salt and pepper

Steps:

  • Pierce the aubergine all over with a fork and then wrap in foil and bake in the oven at 180C/350F for 30 minutes.
  • Cut in half and scoop out the cooked flesh and chop up into small pieces.
  • Mix the cooked aubergine flesh with all other ingredients in a bowl (omit the coriander)
  • Stuff all of this back into the aubergine shells and grill for 10 minutes at high heat.
  • Serve with a wedge of lemon and scattered with fresh coriander.
