A quick and simple traybake, with a sweet banana flavour, treacly notes from the sugar and a hit from the fiery ginger. Ideal finger food with its sticky but springy texture.

100 g dark muscovado sugar
100 g molasses sugar
2 large over ripe bananas
125 ml olive oil
4 eggs
200 g wholemeal spelt flour
3 tsp baking powder
½ tsp ground cinnamon (I used a drop of Holy Lama Cinnamon Spice Oil)
2 tsp ground ginger
75 g crystallised ginger - finely chopped

Steps:

  • In a large bowl, mash the banana with the two sugars.
  • Beat in the eggs, one by one, followed by the olive oil.
  • Sieve in the dry ingredients and fold in carefully.
  • Gently stir in the bits of ginger.
  • Pour into a 22.5 cm / 9"sq silicone mould or lined tin and bake at 170℃ for about 40 or until the cake is risen, golden on top and firm to the touch.
  • Leave to cool, then turn out and cut into 16 squares.

80g unsalted butter , plus extra for greasing
150g light muscovado sugar
½ tsp vanilla bean paste
4 large bananas
240g plain flour
2 ½ tsp baking powder
1 tsp cinnamon
½ tsp ground ginger
300g golden caster sugar
120g unsalted butter , very soft
3 large eggs
150ml soured cream

Steps:

  • Heat oven to 180C/160C fan/gas 4 and lightly grease a deep 23cm round cake tin, lining the base with baking parchment.
  • To make the topping, put the butter and sugar in a small saucepan and cook over a medium heat until melted and combined. Add the vanilla and mix together. Pour the caramel into the cake tin and spread in an even layer. Cut the bananas in half lengthways and arrange on top of the caramel, cut-side down.
  • To make the batter, put all the ingredients in a large bowl with 1/4 tsp salt. Use an electric mixer to beat together on a low speed until the batter is smooth and evenly mixed. Pour the batter on top of the bananas and level out with a spatula. Bake in the oven for 55 mins-1 hr or until a skewer inserted in the middle comes out clean. If the cake begins to look too dark, cover with foil after 45 mins. Allow to cool in the tin for 10 mins before turning out onto a plate. Best served warm but also delicious at room temperature. Best eaten within 2 days.

225g self-raising flour
1 tsp bicarbonate of soda
1 tbsp ground ginger
1 tsp ground cinnamon
1 tsp ground mixed spice
115g butter, cut into cubes, plus extra for greasing
115g dark muscovado sugar
115g black treacle
115g golden syrup
250ml whole milk
85g drained stem ginger, finely grated
1 egg
50g icing sugar, sifted
1 tsp finely grated lemon zest
1 tbsp lemon juice

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Butter and line an 18cm round, 7cm deep cake tin with greaseproof or parchment paper.
  • Put the flour, bicarbonate of soda and all the spices into a large mixing bowl. Add the butter and rub it into the flour with your fingertips until the mixture resembles fine breadcrumbs.
  • Put the sugar, treacle, syrup and milk in a medium saucepan and heat, gently stirring until the sugar has dissolved. Turn up the heat and bring the mixture to just below boiling point.
  • Add the stem ginger to the flour mixture, then pour in the treacle mixture, stirring as you go with a wooden spoon. Break in the egg and beat until all the mixture is combined and it resembles a thick pancake batter. Pour this into prepared tin and bake for 50 minutes-1 hour, until a skewer pushed into the centre of the cake comes out fairly clean. Leave to cool completely in tin before turning cake out. (To freeze: wrap in greaseproof paper, then in cling film. Freeze for up to 1 month.)
  • To make the icing, mix together icing sugar and lemon zest, then gradually add lemon juice until you have a smooth, slightly runny icing, adding more juice, if needed. Drizzle icing in a zig-zag pattern over surface of cake, turn cake around and drizzle again to create the cross-hatched finish (see below). Cake keeps for up to 2 weeks stored in an airtight container.

The 3 of us ate half of this cake in one go! That's why I called it scrummy! Do make the lemon frosting as the contrast of lemon with the richness of banana and ginger is great! I tweaked this recipe from an Australian Women's Weekly one. Would love to hear what you think!

90 g butter
2 tablespoons golden syrup or 2 tablespoons honey
1/4 cup sugar
1/4 cup brown sugar
1 egg
2 bananas, mashed
1 1/2 cups self-rising flour
1/2 teaspoon baking soda
2 teaspoons ground ginger
1 tablespoon milk
lemon frosting
1 1/2 cups powdered sugar
30 g butter (I used less)
2 tablespoons lemon juice, approx
1/4 cup diced glace ginger (optional)

Steps:

  • Grease and line a 20cm ring pan (I used an ordinary round one).
  • Cream butter, syrup and butter until fluffy and light (use an electric mixer if you have one).
  • Add egg, mix well, then add the mashed banana.
  • Sift in the dry ingredients and add the milk. Stir well.
  • Pour mix into the pan and bake for about 45 mins at 180c, 350f, gas mark 4.
  • Let it stand in the pan for about 5 mins before putting onto a wire rack to cool.
  • Spread frosting onto cold cake, and sprinkle ginger over if you fancy!
  • Lemon Frosting: Mix powdered sugar and butter with enough lemon juice to make it spreadable. Do taste it before spreading as you may want a touch more lemon!
  • Enjoy!

1 cup unsalted butter
1/2 cup water
3/4 cup unsulphured dark molasses
3/4 cup flavorful honey, such as a dark wildflower, berry or chestnut
1 cup tightly packed brown sugar
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon allspice
1/8 teaspoon ground cloves
3 large eggs, at room temperature
1/2 cup partly skimmed milk (2 percent)
1 packed tablespoon grated fresh ginger root
Lightly sweetened whipped cream, to serve

Steps:

  • Preheat the oven to 325. Lightly grease a 9 x 9 x 2-inch baking pan and line the bottom with a piece of parchment paper that has been cut to hang over two opposite edges by a couple of inches. This overhang will make removing the cake from the pan clean and simple.
  • Combine the butter, water, molasses, honey and brown sugar in a medium non-reactive saucepan and place over low heat. Stir the mixture frequently until the butter is melted, and all of the ingredients are well blended. Remove from the heat, pour into a large bowl and set aside to cool.
  • Meanwhile, sift together the flour, baking soda, salt, ginger, cinnamon, allspice and cloves, and set aside. When the molasses mixture feels just warm to the touch, add the eggs, one at a time, beating well after each addition. Add the milk and stir to combine. Fold the dry ingredients into the batter in four additions, using big, long strokes. Don't be concerned if you can't get all the lumps out--settle for most of them! Stir in the grated ginger.
  • Pour the batter into the prepared pan and bake in the center of the oven for 1 1/4 to 1 1/2 hours, or until the top of the cake springs back when touched and a cake tester inserted into the center comes out clean. Allow to cool for 15 minutes, then, using the overhang of parchment, lift the cake out of the pan and cool completely on a wire rack before cutting. Well-wrapped in plastic, this gingerbread actually improves with age. If stored at room temperature, it will have a sponge-cakey texture and will keep for about 4 days. Refrigerated, it becomes stickier, denser, and wonderfully chewy and will last at least a week. Allow the cake to return to room temperature before serving. This cake is fabulous warm, and the only adornment it needs is mounds of softly whipped cream.

200g plain flour
175g light muscovado sugar
100g butter , room temperature, cut in pieces
finely grated zest 1 orange
1 tsp ground ginger
100g pack halved pecan or walnuts
85g stem ginger in syrup (from a jar), roughly chopped
1 tsp bicarbonate of soda
284ml carton soured cream
1 egg , beaten
bought Cointreau cream
fresh orange segments
ginger syrup from the jar

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter a 23cm-round ring tin. Combine the flour, muscovado sugar and butter in a bowl, then rub in with your fingers until crumbly and completely blended. Stir in the grated orange zest and ground ginger.
  • Scatter half the nuts and half the chopped stem ginger into the bottom of the ring tin. Break up the rest of the nuts into small pieces and stir into the crumb mix with the rest of the stem ginger. Measure out 100g/4oz of the crumb mix and spoon it into the tin over the nuts. Stir the bicarbonate of soda into the rest of the crumb mixture. Mix the soured cream and egg together, then stir it into the remaining crumb mixture. The mixture will be very soft. Pour this batter over the crumbs (it will come quite high in the tin).
  • Bake for 35-40 mins or until risen and a skewer inserted in the centre comes out clean. Let the cake sit for 10 mins, then take it out of the tin and leave to cool on a wire rack.
  • Cool the cake completely, then wrap it in foil and freeze for up to 2 months.
  • When ready to use, thaw for about 2 hrs at room temperature. Serve in slim slices with dollops of Cointreau cream, orange segments and a drizzle of syrup from the jar of stem ginger.

They survived only by the kindness and generosity of the Dayaks, native Borneans of the inland jungle. This is very sweet, so it makes a good dessert.
