FLANK STEAK WITH ROASTED ROOT VEGETABLES

6 carrots, halved crosswise and lengthwise
4 parsnips, halved crosswise and lengthwise
1 turnip, peeled and cut into 1/2- to 3/4-inch wedges
2 tablespoons extra-virgin olive oil
1 1/2 teaspoons chopped fresh rosemary, plus 1 sprig
Kosher salt and freshly ground pepper
1 flank steak (about 1 1/4 pounds)
2 tablespoons bourbon or low-sodium beef broth
2 tablespoons packed light brown sugar
1 teaspoon horseradish mustard or spicy mustard, plus more for serving
1 clove garlic, smashed
Chopped fresh parsley, for topping

Steps:

  • Position racks in the lower third and top of the oven; preheat the broiler. Toss the carrots, parsnips, turnip, olive oil, chopped rosemary, 1/2 teaspoon salt and a generous amount of pepper on a rimmed baking sheet. Roast on the lower oven rack, 10 minutes.
  • Meanwhile, halve the steak lengthwise and poke a few times on both sides with a fork; transfer to a resealable plastic bag. Add the bourbon, brown sugar, mustard and garlic; tear the rosemary sprig in half and add to the bag. Seal and vigorously massage the ingredients into the meat for 5 minutes to tenderize. Transfer the steak to a foil-lined baking sheet, discarding the marinade. Season with salt and pepper.
  • Leaving the vegetables in the oven, broil the steak until a thermometer inserted sideways into the center registers 125 degrees F to 130 degrees F for medium rare, 4 to 6 minutes per side. Transfer to a cutting board to rest, 5 minutes. Move the vegetables to the top oven rack and broil, stirring occasionally, until lightly charred, 6 to 8 minutes.
  • Slice the meat and serve with the vegetables. Top with parsley and serve with mustard.

1 flank steak (about 2 pounds)
2 tablespoons minced garlic
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
Teriyaki sauce, for brushing
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
2 bell peppers, halved, seeded and sliced
2 zucchini, halved lengthwise and cut into half moons
1 onion, halved and sliced
Salt and freshly ground black pepper

Steps:

  • For the steak: Place the steak on a baking sheet or in a dish and rub with garlic and olive oil. Sprinkle all over with salt and pepper. Let sit for 10 minutes.
  • Preheat a grill or grill pan over high heat. Brush the steak with some teriyaki sauce. Grill the steak until medium rare, about 6 minutes on each side. Remove the steak from the grill and let sit.
  • For the vegetables: Heat the olive oil and butter in a large deep skillet over medium-high heat. Add the peppers, zucchinis and onions, and saute for 5 minutes, stirring. Season with salt and pepper.
  • Slice the steak thinly against the grain. Serve with the vegetables.

3 1/2 lbs round steaks, 1/4 thick
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup salad oil
2 cups onions, sliced
1.5 (10 3/4 ounce) cans tomato soup, undiluted
10 ounces water
8 new potatoes, whole, unpared
6 carrots, quartered, pared
1 (10 ounce) package frozen peas

Steps:

  • EARLY IN DAY: Cut round steak into 8 large pieces.
  • Mix flour with S&P and with edge of saucer, pound into steak.
  • In hot oil in Dutch oven, brown steak on both sides; add onions and brown a bit. Add soup and water. Cover; simmer about 30 minute or until meat begins to be tender.
  • Refrigerate.
  • TO SERVE: Heat meat to simmering point; add potatoes and carrots; simmer, covered about 25 minute Season to taste. Push frozen peas down into the juices. Cook, covered, about 10 min longer or just until vegetables are tender.

Pan Fried Steak With Vegetables image

This has become a mainstay at my house. It evolved out of a recipe I saw on the Food Channel a while back. I've done this recipe with fish filets, chicken breast, lamb and a number of other things, and for some reason it's always worked. You just have to use an appropriate wine for your meat of choice, i.e. a nice fat Cabernet will work well for steak, but will gag and bury any white fish.

2 steaks, i suggest a medallion cut sirloin
1/2 bunch asparagus, cleaned and woody stems removed
1 tablespoon fresh rosemary, chopped
2 cups cleaned and sliced mushrooms (portabello are nice but button or brown are good too)
1 cup red wine
2 shallots, chopped
1 garlic clove, minced
1 1/2-2 cups halved cherry tomatoes or 1 1/2-2 cups grape tomatoes
3 tablespoons butter
1 tablespoon olive oil
kosher salt and pepper

Steps:

  • Pat 1-2 pinches of salt into each side of the steaks.
  • Heat a large sauté pan or iron skillet to medium high.
  • You'll want to avoid non-stick for this purpose and don't put any oil in the pan either, as we're going to want all those little bits that stick to the bottom of the pan for later.
  • Place steaks in pan and let sear.
  • DON'T YOU DARE POKE AT 'EM!
  • Cook on each side to desired doneness-- when they're just underdone, remove from skillet, place on plate, and stick that plate in a 200°F oven to keep warm, and to rest.
  • Heat olive oil in the same pan as you cooked your steaks inches.
  • Add your mushrooms, shallots, garlic and a pinch of salt and few grinds of pepper and sweat at medium until tender, stirring occasionally.
  • Raise heat to medium-high and add rosemary and asparagus and gently add red wine.
  • Cover and let sit for 5 minutes.
  • Uncover, and add tomato halves.
  • Keep stirring occasionally until liquids have reduced to a syrupy texture.
  • Squish 6-10 tomato halves with a fork (another reason to avoid non-stick pans for this) and add the butter in chunks randomly throughout the pan.
  • Reduce heat to minimum and let the butter melt.
  • Get the steaks out of the oven (carefully! that plate is gonna be hot!) and place one on each plate to be served.
  • Using tongs or a slotted spoon, divide veggies between the two plates.
  • Spoon some of that sauce over each plate, making sure to keep the portions equal (many arguments over 'who got more sauce' whenever we have this--trust me the extra care is warranted).
  • Garnish with some parsley or rosemary sprigs and serve.

STIR-FRIED STEAK AND VEGGIES

There's just enough ginger, chili powder and garlic powder in the sauce to spark the taste of this enjoyable steak specialty. For variety, you can substitute chicken or pork for the sirloin. If I'm in a hurry or don't have fresh vegetables on hand, I'll reach for two bags of frozen stir-fry vegetables instead.

  • In a small bowl, whisk together the first eight ingredients until smooth; set aside. , In a skillet or wok, stir-fry steak in oil for 3-5 minutes. Add broccoli, cauliflower, onion, carrots and soy sauce mixture; cover and cook for 8 minutes or until vegetables are crisp-tender, stirring occasionally. Serve over rice.

1 lb top-round beef
1 lime, juiced
1 tablespoon lime zest
1/4 cup white wine

1 teaspoon garlic, minced

2 cups fresh snow pea pods, ends snapped off and strings removed
1 cup fresh carrot, cut into bite-size pieces
1 cup fresh white button mushrooms, halved
kosher salt, to taste

1 1/2 cups beef broth
2 cups instant rice, uncooked
2 tablespoons fresh coriander, coarsely chopped

Steps:

  • Begin by cutting the beef steak into strips, 3-inch long and 1/2-inch wide.
  • Place the beef strips into a glass bowl with the marinade ingredients, turn the meat to coat. Allow to marinate for several hours.
  • Heat 3 tablespoons of the olive oil in a wide, heavy-bottom skillet. Once the oil is hot add the snow peas, carrots, and mushrooms. Cook over high heat for 3 to 4 minutes; tossing.
  • Remove vegetables from skillet with a slotted spoon; reserve.
  • Next, heat the remaining 1 tablespoon of olive oil in the same skillet used to cook the vegetables. Remove the beef strips from the marinade; discard leftover marinade. Season the meat with salt and pepper.
  • Add the beef strips to the skillet and cook over very high heat for 3 to 4 minutes, stirring often. Remove from skillet.
  • Add broth to the same skillet, bring to a boil. Stir in the rice. Place the beef strips in the rice, cover tightly and simmer for 20 to 25 minutes.
  • Add the vegetables, coriander, green onions and tomatoes to the beef and rice. Cover and simmer an additional 10 to 15 minutes.

1/2 cup A.1. CHICAGO STEAKHOUSE Marinade, divided
1 beef top round steak (1 lb.)
2 baking potatoes (1/2 lb.)
2 zucchini, cut lengthwise in half
2 red peppers, quartered
1/4 cup KRAFT Zesty Italian Dressing

Steps:

  • Reserve 1/4 cup marinade; pour remaining marinade over steak in shallow dish. Turn to evenly coat both sides of steak. Refrigerate 30 min. to marinate. Meanwhile, pierce potatoes in several places with fork or sharp knife. Microwave on HIGH 8 to 9 min. or just until tender; cool.
  • Heat grill to medium-high heat. Remove steak from marinade; discard marinade. Grill steak 5 min. Meanwhile, cut each potato into 4 lengthwise wedges.
