1 20 ounce package Simply Potatoes® Shredded Hash Browns
5 tablespoons Extra virgin olive oil
1 teaspoon Salt
1/4 teaspoon Lemon pepper (optional)
2 cups Frozen spinach thawed
1 tablespoon Chopped sun-dried tomato packed in oil
1 pinch Salt
1 pinch Garlic powder 6
6 tablespoons Goat Cheese
4 tablespoons Whole milk
2 Eggs

Steps:

  • 1. Preheat oven at 400°F. 2. In a medium bowl, mix Simply Potatoes Shredded Hash Browns with 4 tablespoons of olive oil, salt and lemon pepper. Mix well making sure the potatoes are coated with oil. 3. Spray a non-stick 12 cup-muffin tin with cooking spray. 4. Carefully arrange hash browns evenly in each muffin cup, pressing the sides and forming a small well in the center. Bake for 20-25 minutes, until they start to brown lightly. Set aside. 5. Reset the oven to 375°F. 6. In the meantime, squeeze water out of the spinach and sauté in remaining 1 tbsp of olive oil, until most of the liquid has evaporated, about 6-8 minutes. Add sundried tomatoes, a pinch of salt and a pinch of garlic powder. Cook at medium heat for an additional 2 minutes. Set aside. 7. In a small bowl, combine goat cheese and milk and mix well until smooth and creamy. 8. In a medium size bowl, beat the eggs with a pinch of salt. Add goat cheese and spinach-sundried tomato mixture. Mix well. 9. Fill the potato cups with the egg mixture and bake at 375°F for 15 minutes. Let cool slightly before unmolding. Unmold carefully using a butter knife around the sides of the nests.

Spinach, Bacon, and Goat Cheese Frittata image

1 tablespoon canola or sunflower oil
3 ounces pancetta or bacon, cut into small cubes
4 shallots, thinly sliced
3 cups young leaf spinach
8 eggs
1/4 cup grated Parmesan, Cheddar, or other hard cheese
A grating or two of nutmeg
Sea salt and freshly ground black pepper
1/2 cup crumbled soft goat cheese

Steps:

  • Preheat the oven to 350 degrees F or preheat the broiler to medium-high. Heat the oil in a 9-inch nonstick ovenproof frying pan over medium heat. Add the pancetta or bacon and saute until golden, then remove with a slotted spoon; set aside. Add the shallots to the pan, lower the heat, and cook gently for about 10 minutes, until soft but not colored. Add the spinach and stir until just wilted, then remove from the heat.
  • Lightly beat the eggs in a bowl, then stir in the pancetta or bacon, spinach and shallots, grated cheese, nutmeg, salt, and pepper. Put the frying pan back over low heat, pour in the egg mixture, and cook gently, without stirring, letting the eggs set slowly from the bottom up. After about 5 minutes, give the pan a little shake: the bottom half of the frittata should be set, with a layer of wet egg still on top.
  • Dot the goat cheese over the top. If you're baking the frittata, place it in the oven for 5 to 10 minutes, until just set. Or put the frittata under the broiler, ideally not too close to the heat, for about 5 minutes. Let cool slightly (or completely) before slicing and serving.

2 teaspoons Dijon mustard
1/4 teaspoon kosher salt

8 cups baby spinach leaves, stems trimmed, washed, and dried
1/2 cup whole or chopped toasted walnuts
1/3 cup crumbled goat cheese

Steps:

  • In a small bowl, combine the vinegar, shallot, mustard, salt, and pepper. Gradually whisk in the oil to make a creamy dressing.
  • Put all but a large handful of the spinach in a large bowl. Toss with most of the dressing. Add remaining spinach and continue tossing until well coated.
  • Serve immediately topped with goat cheese and walnuts.

1 large onion, finely chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 teaspoon salt
1/4 teaspoon pepper
2 ounces pancetta or bacon strips, finely chopped
3 cups frozen shredded hash brown potatoes, thawed
8 large eggs, lightly beaten
1 cup 2% milk
1 cup fontina cheese, divided
1 cup shredded cheddar cheese, divided
1/4 cup minced fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°. In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in spinach, salt and pepper. Remove from heat., In another skillet, cook pancetta over medium heat until crisp. Remove to paper towels with a slotted spoon; drain., In a greased 11x7-in. baking dish, layer hash browns, spinach mixture and pancetta. In a large bowl, whisk eggs, milk, 1/2 cup fontina cheese, 1/2 cup cheddar cheese, parsley, Worcestershire sauce, mustard and nutmeg; pour over top. Sprinkle with remaining cheeses., Bake, uncovered, 35-40 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

Ready, Set, Cook! Special Edition Contest Entry: I love making appetizers and tapas! I developed this recipe for the Simply Potatoes Contest last night. These are quick and easy, but look so beautiful that your guests will think they took you hours to make! They are also perfect "one bite" appetizers.

Number Of Ingredients 8

20 ounces Simply Potatoes® Shredded Hash Browns
1 large egg, beaten
6 -8 slices bacon, diced
3 cups fresh spinach, chopped
1/2 cup goat cheese, softened
1/2 cup fig preserves
1 tablespoon salt
2 teaspoons fresh ground pepper

Steps:

  • Pre heat oven to 400°.
  • In large bowl, combine hash brown, beaten egg, salt and pepper. Stir until potatoes are well coated with egg.
  • Spray (2) 24 mini muffin pans with non-stick spray. Spoon in approximately 1 teaspoon of hash brown mixture into each muffin cup, gently pressing bottom and up the sides of cup. Bake for approximately 25-30 minutes or until browned and they start to pull away from muffin cups. Remove from pan and let cool on wire rack.
  • In sauté pan, cook diced bacon until lightly crisped. Remove bacon and set aside. Discard all but 2 tablespoons of bacon fat.
  • In same sauté pan, add chopped spinach to bacon fat and sauté over med. high heat until spinach is wilted. Remove from pan and set aside.
  • Begin to assemble nests by adding ¼ tsp fig preserves in bottom of hash brown nest. Next top with approximately ¼ tsp of cooked spinach, then ¼ teaspoons goat cheese. Top goat cheese with another ¼ tsp of fig preserves and sprinkle a little bacon on top. Continue layering process to each hash brown nest.
  • Place on baking sheet and return to preheated 400° oven for 2-3 minutes or just until hot. Remove from pan and serve.
