SPICY SESAME NOODLES
These are the best sesame noodles I have ever had. They are so easy to make, and they come out fantastic every time.

Steps:
- Bring a pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, and transfer to a serving bowl.
- Meanwhile, place a saucepan over medium-high heat. Stir in garlic, sugar, oil, vinegar, soy sauce, sesame oil, and chili sauce. Bring to a boil, stirring constantly, until sugar dissolves.
- Pour sauce over linguine, and toss to coat. Garnish with green onions and sesame seeds.

SPICY SESAME NOODLES
This is a sweet, hot and crunchy dish that can be served as a side or as the main course. Add the chopped veggies right before serving to insure a nice fresh affect. You can use any long noodles that suit you: spaghetti, fettucini, thin spaghetti, angel hair, etc. It is hearty, sweet and satisfying. Be SURE to use all natural peanut butter and not a store bought brand. This dish is served room temperature or cold. Great for summer.

Steps:
- Blend or toss all the ingredients listed above the pasta.
- Cook noodles to al dente and once cooled, toss with sauce.
- Right before serving, toss in chopped veggies.

SOBA NOODLE COLD ROLLS WITH SPICY SESAME SAUCE
Steps:
- For the rolls: Cook the soba noodles according to the package directions in salted water until al dente. Drain and rinse the noodles under cold water.
- Fill a large wide bowl with very warm water. Dip one rice paper wrapper into the water and allow it to soften for a few seconds. Then carefully remove it from the water.
- Top the wrapper with a piece of lettuce, a small handful of the soba, a few pieces of tofu, peach or mango, cucumber, carrot, bean sprouts and a few mint and cilantro leaves.
- Fold in the edges of the wrapper and roll up like a burrito, pressing edge to seal. Set aside into a reusable container lined with a damp paper towel. Continue with the remaining wrappers and ingredients.
- For the dipping sauce: Whisk together the lime juice, sriracha, soy sauce, honey, ginger, sesame seeds and sesame oil.
- Store the rolls and sauce in resealable containers in the fridge until ready to serve, or portion out for lunch. Cut the rolls in half just before serving with the dipping sauce.

- Cook the linguine or spaghetti according to the package directions; drain well. Toss the linguine with sesame oil, and set it aside. Keep it warm.
- Combine the peanut butter (or tahini), soy sauce, white wine vinegar, gingerroot, and chili oil. Add the peanut butter mixture to the linguine mixture and toss gently to combine. Add the green onions and toss gently to combine. Garnish with toasted sesame seeds, if desired. Serve immediately.

SPICY SESAME NOODLES
This recipe is from the New Moosewood Cookbook and is absolutely amazing. It makes a wonderful potluck dish because it can be eaten hot or cold (I personally prefer it hot) and is really simple to make. I prefer to use fusilli or gemelli pasta for whatever reason, but you can use any kind. :) It's also great with chicken or other meats.

- Cook the pasta. While it is cooking, mix the peanut butter, tahini, water, soy, vinegar, and oils thoroughly. (TIP: The mixing, which can take some work, is made easier when you use warm or hot water.)
- When the pasta is done, drain, put in a bowl, pour on the sauce, and toss until well-coated. The scallions and seeds are optional; if desired, toss them on top.
- Serve either hot or at room temperature.

- Cook linguine al dente in boiling, salted water.
- Drain and sprinkle lightly with sesame oil to prevent sticking. Cool.
- Add green onion, broccoli, pea pods. asparagus and red pepper.

- Bring six quarts water to boil. Add the peanut oil and cook the noodles for three to four minutes, or until al dente. Drain and refresh under running cold water.
- Place the noodles in a large serving bowl and add one tablespoon sesame oil. Toss to prevent them from sticking together and set them aside.
- Mix together the remaining ingredients until you have a smooth sauce. If necessary, thin with a little olive oil. Correct seasoning and pour the dressing over the noodles. Toss thoroughly and serve at room temperature.
