SPAGHETTI WITH SIMPLE MARINARA SAUCE

1/4 olive oil
1 (28oz) can peeled San Marzano tomatoes
2 sprigs basil
5 cloves of garlic, sliced thinly
Salt and pepper to taste
A pinch of sugar (optional)
1lbs spaghetti, cooked according to package instructions
Freshly grated Parmigiano Reggiano to serve

Steps:

  • In a large bowl, add the peeled tomatoes and mash them with a potato masher. If you don't like your sauce chunky, you can blend the tomatoes in the blender until smooth. Reserve.
  • In a large skittlet, heat the olive oil over medium high heat and sauté the garlic for a couple of minutes. Be careful not to brown it.
  • Add the tomatoes and the basil and stir. Once it boils, turn the heat down to low and let it simmer, covered, for 15 minutes.
  • While the sauce is simmering, cook the spaghetti in a large pot of salted boiling water, according to package instructions.
  • After the sauce has been simmering for 15 minutes, season with salt and pepper and taste to see if needs sugar. If it's too acidic, add a pinch of sugar.
  • To serve, just toss the pasta with the sauce to coat and decorate with some basil leaves. Don't forget the Parmigiano Reggiano on the side, to please the cheese lovers like me!

1 tablespoon extra-virgin olive oil, plus more for drizzling
3 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon red pepper flakes, plus more to taste
1 28-ounce can whole San Marzano tomatoes, crushed by hand
1 1-inch piece parmesan cheese rind
1 cup loosely packed fresh basil, sliced, plus more for topping
3/4 pound bay scallops

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.
  • Meanwhile, heat the olive oil in a saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic softens, about 1 minute. Add the tomatoes, parmesan rind, 1/2 cup water and half of the basil. Bring the sauce to a boil, then stir and reduce the heat to medium low; simmer 15 minutes. Season with salt.
  • Increase the heat under the sauce to medium high, add the scallops and cook, stirring occasionally, until opaque, about 5 minutes. Remove the parmesan rind, add the remaining basil and season with salt and more red pepper flakes.
  • Drain the pasta and add to the skillet with the sauce; toss. Divide the pasta among bowls, drizzle with olive oil and top with more basil.

A trip to the Olive Garden inspired me to create this recipe. This is a quick, easy and versatile Marinara Sauce with a delicious fresh taste. Serve over cooked spaghetti, ravioli or other pasta; sprinkle with freshly grated Parmigiano Reggiano cheese. Or chill and serve as a salsa with garlic bread sticks or tostitos.

2 (14 1/2 ounce) cans diced tomatoes
1 (28 ounce) can crushed tomatoes
1 cup diced onion
1 tablespoon dried basil leaves
2 teaspoons italian seasoning
1/2-3/4 teaspoon Equal sugar substitute (to taste) or 2 tablespoons Splenda sugar substitute, granules (to taste)
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • In a saucepan, saute the onions, but do not let them brown.
  • To the saucepan, add the liquid drained from the diced tomatoes. Add the basil, Italian seasonings, sugar (or sugar substitute) and crushed red peppers. Simmer liquid and spices for about 30 minutes or until liquid is reduced by half.
  • Add the diced tomatoes and crushed tomatoes and cook just until heated, about 1 minute.
  • If you prefer, you can used whole tomatoes and dice them, saving any tomato liquid for Step 2.

1 medium onion
2 cloves garlic or 1/4 teaspoon garlic powder
1 small green bell pepper
1 tablespoon olive or vegetable oil
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
1/4 teaspoon fennel seed, if desired
1/8 teaspoon pepper
1/2 teaspoon salt (for cooking spaghetti), if desired
8 oz uncooked spaghetti

Steps:

  • Peel and chop the onion to measure 1/2 cup. Peel and finely chop the garlic. Cut the bell pepper in half lengthwise, and cut out seeds and membrane. Chop enough bell pepper to measure 1/4 cup. Wrap any remaining bell pepper with plastic wrap and refrigerate.
  • In a 2-quart saucepan, heat the oil over medium heat 1 to 2 minutes. Add the onion, garlic and bell pepper. Cook 2 minutes, stirring occasionally.
  • Stir in the tomatoes with their liquid, tomato sauce, basil, oregano, 1/4 teaspoon salt, the fennel seed and pepper. Heat to boiling over high heat. Once mixture is boiling, reduce heat just enough so mixture bubbles gently and does not spatter.
  • Cover with lid; cook 35 minutes, stirring about every 10 minutes to make sure mixture is just bubbling gently and to prevent sticking. Lower the heat if the sauce is bubbling too fast.
  • After the sauce has been cooking about 20 minutes, fill a 4-quart Dutch oven about half full of water. Add 1/2 teaspoon salt if desired. Cover with lid; heat over high heat until the water is boiling rapidly. Add the spaghetti. Heat to boiling again. Boil uncovered 8 to 10 minutes, stirring frequently, until tender but not mushy.
  • Place a strainer or colander in the sink. Pour the spaghetti in the strainer to drain. Serve with the tomato sauce.

I'm posting this in response to someone had 3 chicken breasts and wanted a quick and easy recipe that would feed 5. This will feed five, but they will be fighting over the leftovers (if there are any!).

2 cloves garlic, minced
1 small onion, chopped
2 teaspoons rosemary
1 teaspoon basil

2 (14 ounce) cans delmonte chunky style stewed tomatoes
8 ounces pasta (my favorite is pasta ruffles)
1/8 cup parmesan cheese

  • In large, heavy skillet, heat the oil over medium heat until it is hot but not smoking.
  • Add the garlic and onions; sauté until golden-- about 3 to 4 minutes.
  • Add spices and chicken chunks; cook through--about 10 minutes.
  • Add stewed Italian style tomatoes to chicken/Marinara sauce.
  • Simmer while cooking pasta according to package directions.
  • Toss Marinara sauce gently with cooked pasta; serve immediately, sprinkled with Parmesan cheese.

Steps:

  • Combine the olive oil and garlic in a large skillet. Cook over medium heat until the garlic is golden around the edges, about 3 minutes. Add the onion, oregano and 1 teaspoon salt. Cook, stirring, until the onion is soft but not browned, about 10 minutes. Add the tomatoes and their juices and 1/2 cup water; continue cooking until the sauce is slightly reduced, about 20 minutes. Stir in the basil and season with salt. Keep warm over low heat.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain.

This great yet incredibly simple recipe comes from my friend's mom, Maria Maffei. There is absolutely NO excuse to buy sauce in a jar when you can make this in no time flat. I like to pan fry two pounds of Italian sausage (links, not crumbled), add it to the sauce and let it simmer for up to an hour. NO WINE, NO SUGAR, please. Freezes very well, too. Maria ONLY uses Redpack Crushed Tomatoes in puree or Redpack plum tomatoes which she crushes in a blender, so look for them in your grocer's shelf for maximum flavor. Recipe can be doubled with great results, but tripling, etc... is not recommended.

  • In a 4 quart pot heat olive oil on medium heat and add THINLY sliced fresh garlic. Sauté until garlic becomes very lightly golden on edges. If garlic burns, discard and start again as this definitely affects the taste in a negative way.
  • Add can of crushed tomatoes. Tomatoes should be slightly chunky and not a puree. Turn heat up just a bit until mixture starts to bubble up, but not boil.
  • Place dried oregano in palm of one hand and use other to crush it over the pot. Add in salt and pepper and stir.
  • Lower heat to medium-low and cover pot, simmering for 20 minutes. Check occasionally to stir. Enjoy immediately.
