1/2 lb ground beef
2 tablespoons flour
3/4 teaspoon salt
1/4 teaspoon dried onion flakes
1/4 teaspoon paprika
1 1/2 teaspoons chili powder
1 dash garlic powder
1 dash onion powder
1/4 cup water
5 small tortillas
lettuce
shredded cheese
sour cream
tomatoes, diced

Steps:

  • In a medium bowl combine the beef with the flour, salt, minced onion, paprika, chili powder, garlic powder and onion powder Use your hands to mix evenly.
  • Heat skillet to med/low heat.
  • Add beef mixture and water to the pan.
  • Brown the beef, breaking it up as it cooks.
  • Heat the tortillas in the microwave, wrapped in damp paper towels.
  • Spread meat into tortillas, top with cheese, tomatoes, lettuce and sour cream.

1 Tbsp extra-virgin olive oil
1/2 medium onion, peeled and diced
3 cloves garlic, peeled and minced
1/2 sweet red bell pepper, diced
1 lb ground beef
2 tsp chili powder
1 1/2 tsp cumin
1/8 tsp crushed chili pepper flakes or cayenne
1/2 tsp Mexican or regular oregano
1 tsp kosher salt or seasoning salt
3-4 corn or flour tortillas
Diced fresh tomatoes
Shredded lettuce
Grated cheddar or Monterey Jack cheese
Diced sweet onions
Diced fresh avocado
Salsa
Sour cream

Steps:

  • Heat a large-sized cast-iron skillet on the stovetop over medium heat. Once preheated, add 1 Tbsp of olive oil.
  • Once your olive oil is hot, toss in your diced onion, fresh garlic, and bell pepper. Cook, occasionally stirring until your onion is translucent and the veggies are soft.
  • Remove the ground beef from its package and add it into the skillet. Use a large spoon to break down the meat into smaller pieces and cook until the beef browns.
  • Carefully drain the excess grease from your pan before you add your seasonings. Pour the oil into a container for easy disposal - do not pour it down your drain!
  • Add in your beef seasonings - chili powder, cumin, red pepper flakes, Mexican oregano, and salt.
  • Cook for 2-3 mins, then taste and adjust seasonings as needed.
  • Scoop out some ground beef and place it on your taco shell, then top with all your favorites - tomatoes, grated cheese, and sour cream.
  • Serve and enjoy this easy soft taco recipe!

Throw together this easy Tex-Mex meal in mere minutes. Top individual servings with your favorite taco toppings.

8 flour tortillas
2 tablespoons diced onion
1 pound ground beef
1 package taco seasoning mix
3 tablespoons water
1 tomato
1/4 head lettuce
1 cup shredded Mexican-style Cheddar cheese
salsa (optional)

Steps:

  • Preheat oven to 300 degrees F. Wrap tortillas in foil and heat while meat is cooking. Preheat saute pan on medium-high for 2-3 minutes. Place onions and crumbled ground round into pan, breaking into small pieces as it browns. Continue to cook until browned. Drain liquid from pan. Add seasoning mixture and water; simmer for 5-10 minutes on low heat. While meat is cooking, chop tomato and shred lettuce. Remove tortillas from oven. Assemble tacos, filling each with a portion of beef. Top each with cheese, lettuce, tomato and salsa (if desired).

I try to avoid cooking with pre-made spices and sauces (some are better than others), so this recipe is based off my re-interpretation of all the good things a taco should be: spicy, tasty, moist, and most of all packed with delicious veggies; using chicken and what I can find in my pantry at a moments notice. You could even simply top a bowl of lettuce and tomatoes with the taco meat and eat it as a taco salad - that would be very low fat!

1/2 lb ground chicken
1/4 large white onion, diced
1/4 cup roasted red pepper, strips chopped (from a jar)
1 garlic clove, minced
1/4 medium green pepper, diced small
1/2 teaspoon vegetables or 1/2 teaspoon olive oil
1 tablespoon cornstarch
1/2 teaspoon ground red pepper
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt (or less to taste)
1/4 teaspoon Tabasco sauce (leave out if you don't like spicy food)
1/4 cup cold water (or chicken broth if you have it)
1 (8 ounce) package fresh organic guacamole
1/4 head lettuce, shredded
1/2 fresh ripe tomatoes, diced
1/2 cup shredded cheese
2 -3 green onions, chopped

Steps:

  • Prepare your tacos/tortillas as directed on the packaging.
  • Place your onions, green peppers, and oil into a non-stick pan/skillet on medium/medium-high heat and cook until the onions are soft. Add in the garlic and chopped roasted red peppers. Cook until the garlic is fragrant (don't let it burn).
  • Move the veggies to the edge of the pan and place your ground chicken in the center. You'll want to keep breaking apart the meat as it cooks.
  • In the meantime prepare your Taco sauce by combining in a small bowl your spices and corn starch. Then, add water and Tabasco sauce, stir well to combine.
  • Just as the chicken finishes cooking (roughly 5-12 minutes) stir to combine all the veggies and the chicken together, breaking apart any large pieces of chicken. Add your sauce mixture and stir together. The sauce will thicken, coating the chicken mixture, add additional water/broth if needed one tablespoon at a time. Allow the sauce to cook through. Cover and set aside.
  • Now you're ready to assemble your tacos. Spoon about 2-3 tablespoons of the meat mixture into your shells, top with cheese, guacamole, tomatoes, lettuce, and enjoy!
