2 tablespoons hot creamed horseradish
1/4 teaspoon sugar
1/2 teaspoon kosher salt
1/2 teaspoon black pepper, freshly cracked
2 teaspoons lemon juice, freshly squeezed
4 drops Tabasco sauce
1/2 teaspoon Worcestershire sauce
2 garlic cloves, minced
20 -24 shrimp, cooked and peeled
2 lemon slices
2 parsley sprigs

Steps:

  • Make the shrimp cocktail sauce by combining all ingredients up to the shrimp. Can be prepared in advance.
  • Spoon the cocktail sauce into martini glasses. Arrange shrimp around the rim, draping tails over the side for presentation.
  • Make a slit in the lemonn slices from peel to centre and place on rim of glasses. Add parsley sprigs for garnish.

After tweaking a recipe seen on "Barefoot Contessa," I arrived at this delicious, LOW FAT, high protein hors d'oeuvre that everyone (even the non-fish eaters) gobble up! Dead simple to make - just be sure to devein the shrimp, and don't cook them too long. Classically served with sauce in a martini glass, with shrimp hanging around the edges.

1 lemon
kosher salt
1 lb shrimp (raw, in shell, about 15 of the medium or large, 15-30 per lb. size)
1/3 cup chili sauce (Heinz)
1/2 cup ketchup (Heinz)
1 tablespoon horseradish (prepared, creamy)
2 teaspoons lemon juice (fresh)
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce

Steps:

  • SAUCE:.
  • Make the sauce at least one hour in advance (even better with 24 hours in the fridge).
  • For the cocktail sauce, combine the chili sauce, ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Chill at least one hour, if possible.
  • SHRIMP:.
  • Cut the lemon in half and add it to a large pot of boiling salted water. Add the shrimp and cook, uncovered, for only 3 minutes, until they are just cooked through. Remove with a slotted spoon to a bowl of ice water to immediately stop cooking.
  • When the shrimp are cool enough to handle, peel and devein them (back-sides). Keep cold until ready to serve.

1 1/2 lbs cooked peeled deveined medium shrimp, about 60,thawed if frozen
1/2 cup tomato juice
1/4 cup vodka (optional)
1/2 teaspoon red pepper sauce
1/2 teaspoon sugar
1/2 teaspoon celery salt
2 tablespoons chopped fresh parsley
1 cup seafood cocktail sauce
1/4 cup finely chopped green olives

Steps:

  • Arrange shrimp in single layer in rectangular glass or plastic dish.
  • Heat tomato juice, vodka if using and pepper sauce to boiling in 1 quart saucepan over medium high heat.
  • Stir in sugar; reduce heat.
  • Simmer uncovered 5 minutes, stirring occasionally,.
  • Stir in celery salt and parsley; pour over shrimp.
  • Cover and refrigerate 2 to 3 hours.
  • (no longer than 3 hours or the shrimp will become tough.) Mix cocktail sauce and olives; pour into small serving bowl.
  • Remove shrimp from marinade with slotted spoon; arrange on serving platter.
  • Serve shrimp with sauce and toothpicks.
  • A pretty way to serve: Place shrimp in an oversized martini glass, 12 to 14 inches in diameter.
  • Pour cocktail sauce mixture over shrimp, and garnish like a bloody Mary with a skewer of colossal olives, small lime wedges and a celery stick.

24 large uncooked tiger shrimp, peeled and deveined
6 pimento stuffed olives, my addition
1/2 cup unsalted butter
1/4 cup dry white wine
2 tablespoons whiskey
1/2 shallot, minced
3 lbs yukon gold potatoes, peeled and diced
4 tablespoons unsalted butter
3 garlic cloves, finely minced
2/3 cup milk or 2/3 cup heavy cream
salt, to taste
white pepper, to taste

Steps:

  • GARLIC MASHED POTATOES: Boil potatoes in a large pot of salted water until they are fork tender.
  • Drain thoroughly and return potatoes to the pot.
  • Melt the butter in a small pan over low heat.
  • Add the minced garlic to infuse the flavor into the butter.
  • Add the milk (or cream) just enough time to warm it.
  • Using a potato masher, mash the potatoes while adding the butter/garlic mixture.
  • Season to taste with salt and white pepper. DO NOT overmix the potatoes!
  • WHISKEY BUTTER SAUCE: Cut the butter up into small pieces and chill in the freezer. Place the wine, whiskey and shallot into a small pan.
  • Simmer over low heat until mixture is reduced to 1 tablespoon.
  • Remove from heat and add the butter, one piece at a time. Stir the butter into the sauce, whisking until melted.
  • Keep cooking butter sauce on low heat until the ingredients are incorporated. The sauce should have a thick and creamy appearance.
  • Keep sauce warm, but not over direct heat.
  • SHRIMP: Place 4 shrimp on each bamboo skewer. Lightly oil the shrimp and season with salt and pepper.
  • Grill on high just until flesh turns white-no longer translucent.
  • (If you want you can lightly sautè the shrimp in a pan on medium-high heat using the same directions in Step #13.).
  • Presentation: Divide and spoon the mashed potatoes into each martini glass.
  • Stand a shrimp skewer upright but at an angle into the mashed potatoes.
  • Place one stuffed green olive on the top end of each skewer.
  • Pour whiskey sauce over each shrimp skewer.
