2 tsp. sesame oil
2 tsp fresh grated ginger
2 cloves of garlic (, minced)
1/4 cup gluten-free tamari (or soy sauce)
1/3 cup maple syrup
1.5 tbsp rice vinegar
1 tsp sriracha
2 tsp cornstarch or 1.5 tsp tapioca starch
1/4 cup cold water
1/2 cup rice flour
3 tbsp tapioca or corn starch.
1/2 teaspoon garlic powder
1/4 teaspoon salt
dash of black pepper and cayenne
1/2 cup water
2 tsp sesame oil
1 small head of cauliflower (, chopped into equal size florets)
Garnish: sesame seeds and scallions

Steps:

  • Sticky Sesame Sauce: Heat a skillet over medium heat. Add sesame oil, garlic and ginger. Cook the garlic ginger for a minute. Add the soy sauce, rice vinegar, maple and bring to boil. Mix cornstarch in the water and add this cornstarch slurry and bring to a boil to thicken, Take off heat.
  • Cauliflower: Preheat the oven to 425 deg F ( 220 C). Line a baking sheet or dish with parchment. In a large bowl add the dry ingredients for the batter and whisk well. Add the wet ingredients and min until smooth.
  • Add the cauliflower and mix to coat. This batter keeps thickening as it sits, so mix and toss quickly.
  • Transfer to the the lined baking sheet. and bake for 30 mins. Make the sticky sauce in the meanwhile if you havent yet.
  • Once baked, you can do one of the following: 1. Brush the sauce over the cauliflower florets and bake for additional 10 to 15 mins (time depends on how crisp and sticky you want the sauce)2. Wait for a few mins then transfer the florets to the sauce. Mix gently to coat. Serve immediately or transfer to the baking sheet to bake for 10 to 15 mins.
  • Sprinkle black and white sesame seeds and chopped scallions and serve as is, or over rice or in lettuce wraps!

1/4 cup extra-virgin olive oil
2 teaspoons salt
1 teaspoon ground coriander
1 teaspoon dried oregano
Freshly ground black pepper to taste
2 tablespoons tahini
1 tablespoon white miso
2 teaspoons red wine vinegar
1 1/2 tablespoons water
3 tablespoons toasted white sesame seeds

Steps:

  • Preheat the oven to 450°F.
  • In a large mixing bowl, combine the cauliflower, oil, salt, coriander, oregano, and pepper and toss well to evenly coat the cauliflower with the oil and spices. Transfer to a sheet pan and arrange in an even layer, making spaces between the pieces as much as possible. Roast the cauliflower in the oven for 20 minutes, turning the tray and lightly tossing the pieces halfway through.
  • While the cauliflower roasts, combine the tahini, miso, vinegar, and 1 1/2 tablespoons water in a small mixing bowl, and whisk until smooth.
  • Once the cauliflower is done, remove it from the oven, transfer to a mixing bowl, and toss with the sauce and sesame seeds to coat evenly.

  • Bring the sauce to a boil then add the cornstarch slurry. Mix in and let the sauce thicken.
  • Add the fried cauliflower and toss to coat in sauce.

1 cup all-purpose gluten-free flour
1/2 teaspoon garlic powder
1/4 teaspoon salt
1 cup water (plus more as needed)
1 small head of cauliflower (cut into florets (scant 4 cups of florets))
2 and 1/2 teaspoons toasted sesame oil (divided)
1/2 inch ginger (minced or grated)
2-3 cloves garlic ((to taste), minced or grated)
3 and 1/2 tablespoons agave nectar ((or less, to taste))
2 and 1/2 tablespoons soy sauce
1 teaspoon rice vinegar
2 tablespoons tomato paste
1 teaspoon chili paste like sriracha
battered cauliflower ((above))
sticky sesame sauce ((above))
toasted sesame seeds (for serving)
chopped green onions (for serving)

Steps:

  • Preheat the oven to 425 degrees Fahrenheit and prepare two large baking sheets lined with parchment paper.
  • In a mixing bowl, stir together the flour, garlic powder, and salt. Add 1 cup of water and stir. Continue adding water 1 tablespoon at a time until a pancake batter-esque consistency is reached. You want batter that is thick enough to stay on a cauliflower floret but thin enough that you can easily shake off the excess. I usually need another couple of tablespoons of additional water.
  • One by one, dip the cauliflower florets into the batter, gently shake off extra batter, and place them onto the baking sheet. Leave plenty of space between florets on the baking sheet so that they can get crispy. You may not be able to quite fit a whole head of cauliflower on two baking sheets.
  • Bake the battered cauliflower for 20 minutes, rotate the position of the trays, and then bake for another 5-10 more minutes or until crispy and browned.
  • Meanwhile, heat two teaspoons of the sesame oil in a small saucepan. Add the garlic and ginger and saute over medium-low heat, stirring frequently, for about 60-90 seconds, or until the garlic and ginger are softened and fragrant.
  • Add the rest of the sauce ingredients and stir well. Continue cooking on medium-low heat, stirring frequently, for about 5 minutes, or until the sauce is bubbling and thickened slightly. Turn the heat to low and leave on the burner, stirring occasionally to keep from sticking. Stir in the remaining sesame oil just before mixing with the cauliflower. (I do this to make sure there's a nice noticeable sesame flavor).
  • Once the cauliflower is done baking, use a spatula to gently mix it together with the sauce in a bowl or the saucepan if large enough. Spread it back out on the baking sheets, and return it to the oven for just 2-4 minutes, to thicken the sauce onto the cauliflower. Watch it carefully, as the sticky sesame sauce can burn quickly. Remove from the oven and serve immediately, sprinkled with sesame seeds and chopped green onions if desired.

1 cup milk of choice (I used unsweetened almond milk)
1/2 teaspoon salt

1/4 cup soy sauce (gluten free, if needed)
1/4 cup rice vinegar
1/3 cup vegetable stock
1 tablespoon sesame oil
1/2 cup brown sugar (white sugar or coconut sugar)

Steps:

  • Preheat the oven to 200C/400F. Line a large baking sheet with parchment paper.
  • In a mixing bowl, whisk together your flour, milk, salt, and pepper. Dip each piece of cauliflower in the batter until completely coated. Place on the lined sheet and bake for 35-40 minutes, or until golden brown. Flip halfway through.
  • Prepare the sauce by adding all the ingredients into a small saucepan. On low heat, heat it up until it begins to simmer. Remove from the heat.

3 tablespoons oil, I like peanut
1 teaspoon salt
3/4 cup chicken stock or 3/4 cup water
2 -3 scallions
1 teaspoon sesame oil

Steps:

  • Separate the cauliflower into flowerets, trimming overly long stems. Leave the smaller ones intact; cut the larger ones in half so they're all about the same size. Rinse and drain. (But do not dry -- you want some moisture on the cauliflower.).
  • Heat a wok or large skillet over high heat until hot; turn heat to medium. Add the oil, swirl and heat for about 15 seconds.
  • Add the flowerets; stir quickly to coat them with oil, then sprinkle in the salt and stir briefly.
  • Add the stock, making sure all of the stems are down in the liquid. When it boils, cover and simmer vigorously for 5 to 10 minutes (depending on the size of your flowerets) until tender.
  • In the meantime, slice the scallions thinly.
  • Uncover the cauliflower, turn heat high and stir gently but rapidly until there is just a little foaming liquid in the skillet. Toss in the scallions; add the teaspoon of sesame oil. Stir gently to distribute scallions and sesame oil throughout.

1/3 cup low-sodium soy sauce
1/4 cup pure maple syrup, (honey, or agave)

Steps:

  • Preheat your oven to 450 F. Grease a baking pan or line with parchment. Cut cauliflower into florets, then slice so one side of each floret is flat. Arrange in a single layer in the greased pan. Bake 10 minutes on the center rack. Meanwhile, whisk together the soy sauce, sweetener, vinegar, garlic, sesame oil, and ginger in a saucepan. Bring to a boil. While waiting, stir together the cornstarch and water until cornstarch dissolves fully, then slowly whisk this into the saucepan as soon as it boils. Turn heat to medium and cook 2 minutes, stirring more frequently once it returns to a boil. Cook until thick. You can also make the sauce ahead of time if desired, and it thickens more as it sits in the fridge. Flip cauliflower florets and bake 10 additional minutes.
