SEARED MAHI-MAHI WITH MANGO SAUCE AND FRAGRANT RICE

1 cup jasmine rice
2 cups water
2 tablespoons chopped fresh cilantro leaves
2 scallions, green parts only, chopped

1 mango
1 teaspoon rice wine vinegar
1/4 cup grapeseed oil
1 lime, juiced
Salt and freshly ground black pepper
1 tablespoon chopped fresh cilantro leaves
1 clove garlic, quartered
1 teaspoon chopped fresh ginger
4 mahi-mahi fillets
1/4 cup grapeseed oil
Salt and freshly ground black pepper
2 scallions, chopped, for garnish

Steps:

  • For the rice: Combine the rice and water together in a large saucepan. Place the pan over medium heat and bring to a boil. Reduce the heat to low and cover the pot. Cook the rice for 20 minutes.
  • For the sauce: Peel the mango and slice the flesh off the pit. Dice the mango flesh.
  • In a large bowl, whisk together the vinegar, oil, and lime juice. Season with salt and pepper. Stir in the mango, cilantro, garlic, and ginger. Set aside.
  • Heat a large, nonstick saute pan over medium-high heat.
  • Rub the fish fillets with the oil, salt, and pepper. Place in the hot pan and sear until golden on 1 side, 3 to 4 minutes.
  • Turn the fish over and cook until cooked through, another 3 to 4 minutes. Be careful not to overcook the fish. You'll know the fish is done when the flesh springs back. Remove the fish to a plate.
  • When the rice is cooked, fluff it with a fork and gently stir in the cilantro and scallions. Season with salt, to taste.
  • Place a mound of rice on each plate. Top with mahi-mahi. Spoon the mango sauce over each fillet and top with chopped scallions. Drizzle the liquid from the mango sauce around the rice.

3 or 4 pieces of Mahi Mahi
sea salt and black pepper
1/4 tsp. garlic powder, plus extra
1/4 cup of all-purpose flour
2 Tbsp. of extra virgin olive oil
1/2 tsp. of Italian seasonings - divided
2 Tbsp. of fresh or frozen chopped parsley
3/4 cup white wine
1 large lemon - juiced
a few slices of lemon, as garnish

Steps:

  • Season the Mahi Mahi with some sea salt black pepper and garlic powder on both sides of each piece of fish.
  • On a shallow plate, add the flour. Dredge each piece of Mahi-mahi in the flour and coat both sides.
  • In a large skillet (with a lid) heat olive oil on moderate heat for a few seconds.
  • Add the mahi-mahi and sear the bottom of the fish for at least 2 to 3 minutes, until golden brown. Sprinkle over each piece with some Italian seasonings and add a sprinkle of garlic powder.
  • Then flip over each piece and sear the other side for 2 minutes. Sprinkle with additional Italian seasonings and some fresh (or frozen) chopped parsley over each piece.
  • Pour in the white wine. And cover with a lid. Reduce the heat to simmer for about 2 minutes. Open the lid, and squeeze one entire lemon over the fish. Cover and simmer for about 30 seconds more. Open the lid, and use a fork to touch the fish, it should feel firm when fully cooked.
  • Top each mahi-mahi with a slice of lemon. Then turn off the heat. Taste the sauce. Optional: drizzle 1 tablespoon of extra virgin olive oil over the entire skillet. It will give the final touch to this recipe! Cover to keep the fish warm until you are ready to serve.
  • When ready to serve. Transfer to a warm serving platter. Pour all the remaining juices from the skillet over the fish. Top with an additional squeeze of lemon juice and serve immediately.

4 (4-6 ounce) Mahi Mahi Fillets
salt (to season)
lemon pepper (to season)
1 lemon (thinly sliced)
1 lemon (juiced)
5 cloves garlic (minced)
1 tablespoon olive oil
4 tablespoon salted butter
2 tablespoon capers (drained (optional))
2 tablespoon fresh parsley (minced)

Steps:

  • Season the mahi mahi. Gently pat each mahi-mahi fillet dry with paper towels and generously season both sides of each fillet with salt and lemon pepper. Set aside.
  • Prepare the ingredients for the Lemon garlic sauce. Thinly slice one lemon and juice the other lemon into a small bowl so that you have approximately 4 tablespoons of fresh lemon juice. Mince the garlic and set it aside so that it is already ready for when it's time to cook the butter sauce.
  • Pan sear the mahi mahi. Add the olive oil to a large skillet set over medium-high heat. Once the olive oil is nice and hot, carefully add each fillet. Sear, undisturbed, until nicely golden brown on the bottom, and the sides are cooked just past halfway up the fillets, about 4 minutes depending on the thickness of your fish (the fish is cooked when it's no long opaque-looking). Flip and continue to cook on the other side until just cooked through, about 2-4 minutes more (mahi-mahi should reach an internal temperature of 137°F). Remove from heat and transfer fillets to a serving plate.
  • Prepare the garlic butter sauce. In the same skillet (or in a new one), heat the butter, lemon juice, and lemon slices over medium heat. Heat until the butter is melted and just starting to bubble. Stir in the garlic, reduce heat to low, and continue to cook for 1 minute, or until the garlic is lightly golden. Stir in the fresh minced parsley and drained capers (optional).
  • Combine and serve. Spoon the garlic butter sauce over the mahi-mahi and serve immediately.

2 cups Chimichurri, recipe follows
3 tablespoons olive oil
1 teaspoon cumin seeds
2 red bell pepper, cored, seeded, and chopped
1 large Spanish onion, chopped
Three (12-ounce) cans black beans, rinsed and drained
1/2 teaspoon sugar
Sherry vinegar, to taste
Kosher salt and freshly ground black pepper
1/2 pineapple, cored, peeled and sliced into 1/4-inch rings
1 mango, peeled, pitted, and chopped
1/2 red bell pepper, cored, seeded, and chopped
1/2 red onion, chopped
3 tablespoons chopped cilantro leaves
3 tablespoons olive oil
1 tablespoon peeled, minced fresh ginger
1 jalapeno, or to taste, chopped
1 to 2 limes, juiced
Kosher salt and freshly ground black pepper
Six 6-ounce mahi mahi fillets
Kosher salt and freshly ground black pepper
3 limes, zested
2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 Spanish onion
1/3 cup olive oil
1/3 cup freshly squeezed lime juice
1 bunch fresh flat-leaf parsley
1 bunch fresh cilantro leaves
3 sprigs fresh oregano, leaves picked
2 large cloves garlic
1 jalapeno, stemmed and chopped

Steps:

  • Make the Green Rice: Combine the water and rice in saucepan with a tight-fitting lid. Season the water with salt. Bring to a boil, lower the heat, and simmer, covered, until tender, about 20 minutes. Set the rice aside, covered, for 10 minutes. Fluff the rice with a fork and stir in the chimichurri. Set aside, covered, until ready to use.
  • Meanwhile, make the Black Beans: Heat the oil in the saucepan over medium-high heat. Add the cumin seeds and cook, stirring, until fragrant, about 30 seconds. Add the bell pepper and onion and cook, stirring, until soft, about 8 minutes. Stir in the black beans and sugar. Bring to boil, lower the heat, and simmer for 5 minutes. Add the vinegar and season with salt and pepper. Set aside, covered, until ready to use.
  • Make the Salsa: Preheat a grill pan over high heat. Grill the pineapple rings, turning once, until charred, about 2 minutes. Transfer the rings to a cutting board and chop.
  • In a bowl, combine the pineapple, mango, bell pepper, onion, cilantro, olive oil, ginger, jalapeno, and lime juice. Season with salt and pepper and set aside. (The salsa can be prepared up to 2 days in advance.)
  • Make the mahi mahi: Arrange the fillets in baking pan, season with salt and pepper, and rub with the zest. Preheat a cast iron skillet over medium heat for 5 minutes. Raise the heat to high and heat the butter and oil. Working in batches, if necessary, sear the halibut fillets, turning once, until well browned and just cooked through, about 3 minutes per side.
  • Divide the rice and beans among the center of 6 plates, top with the fillets, and spoon some the salsa over each.
  • In a food processor, pulse the onion until finely chopped but not pureed. Transfer the onion to a bowl. Add the olive oil, parsley, cilantro, oregano leaves, garlic, and lime juice and pulse until finely chopped. Transfer the herb mixture to the bowl of onion and stir to combine. Season the chimichurri with salt and pepper.

Pan Seared Mahi-Mahi with Preserved Lemon-Tomato Chutney Thai Basil-Shiitake Orzo image

1 cup chick pea flour
1/2 tablespoon ground turmeric
1 tablespoon ground cumin
4 (6 to 8 ounce) fillets mahi-mahi, preferable center cut
Salt and freshly ground black pepper
Oil
1 red onion, 1/4-inch dice
1 tablespoon minced ginger
1/2 cup preserved lemon, 1/4-inch dice (1 large lemon)
3 cups ripe tomatoes, 1/4-inch dice (2 large tomatoes)
2 lemons, juiced
1/2 cup chopped flat leaf parsley, plus extra for garnish
Extra virgin olive oil, for cooking
1 tablespoon minced garlic
1/4 cup minced shallots
2 cups sliced shiitakes
1/2 cup dry white wine
3 cups blanched orzo (about 1/2 pound dry)
1/4 cup basil oil, plus extra for garnish) (Already made: 1 cup basil, 1/2 cup spinach, 1/2 cup canola oil, pinch of salt. Blanch in salted water, 2 minutes, drain, and blend with oil.)
Salt and freshly ground black pepper

Steps:

  • On a dinner plate, mix together the flour, tumeric and cumin. Season the fillets with salt and pepper and dredge in the flour mixture. In a large saute pan on high heat, coat lightly with oil and pan sear the fillets until brown on both sides, about 4 to 5 minutes a side. Let fish rest 5 minutes to carry over before serving. In a medium, non-reactive saucepan on medium heat, coat lightly with oil and saute the onions and ginger until soft, about 3 minutes. Add the preserved lemons, tomatoes and juice. Season and check for flavor. Reduce heat to low and simmer for 15 to 20 minutes, until tomatoes are melted. Pull off stove and keep at room temperature. Check again for seasoning. Add the parsley right before serving.
  • In a large saute pan, coat with olive oil and saute the garlic and shallots until soft, about 2 minutes. Season and add shiitakes. Saute for 3 to 5 minutes until soft and deglaze with wine. Reduce by 50 percent then add orzo to heat thoroughly. Right before serving, stir in basil oil.
  • PLATING: Place a small mound of orzo in the middle of the white dinner plate. Top with fillet of Mahi and top the fish with the chutney. Drizzle some basil oil and garnish with parsley.

1 teaspoon rice wine vinegar
1 tablespoon fresh cilantro leaves, soaked or well-rinsed to remove all traces of sand
1 clove garlic, quartered
1 teaspoon chopped fresh ginger
1-ounce bottled water
1/4 cup canola oil
1 1/2 teaspoons stone-ground mustard
1 lime microwaved and juiced (allow to cool before squeezing)
Salt
Pepper
1 tablespoon olive oil
1 tablespoon chopped shallots
1 cup Arborio rice
1/2 cup white wine
3 cups chicken stock
1 pinch saffron threads
2 tablespoons unsalted butter
6 (6-ounce) mahi-mahi fillets
1/4 cup olive oil
Freshly ground black pepper
2 or 3 scallions, chopped, for garnish

Steps:

  • Peel the mango, cut into slices, and drop into the feed tube of a running blender to puree. Add the rice wine vinegar, cilantro, garlic, ginger, water, oil, mustard, and lime juice. Season with salt and pepper, to taste, and set aside.
  • Bring chicken stock to a simmer. In a separate large saucepan on an adjacent burner, heat the olive oil and add the shallots and the rice. Lightly saute: you actually are toasting the rice. Cook until the rice becomes translucent and the shallots become soft, stirring constantly. Add the white wine to deglaze the pan. Begin slowly adding the warm stock, 1 ladle-full at a time, to the rice pan, stirring as you go. This will bring out the starch in the rice and make the mixture creamy. As the mixture absorbs the broth, ladle more into the pot. When the first ladle of stock has been absorbed into the rice, add the pinch of saffron. When all of the stock has been ladled into the rice pot, slowly simmer until the rice is soft and creamy. Stir the butter into the risotto for more flavor and creaminess. Set aside, keeping warm until needed.
  • Heat a saute pan for the fish. Rub fish fillets with oil, salt and pepper. Place in pan, skin side facing up. Turn the fish over after 3 to 4 minutes. Cook for another 3 to 4 minutes or until done. Do not overcook the fish. It is done when the flesh springs back. Remove the fish to a utility platter. Place a mound of risotto on each plate. Top with mahi-mahi. Drizzle some mango sauce around the plate and top with chopped scallions.

3 tablespoons olive oil, divided
½ cup garlic- and herb-seasoned panko bread crumbs
2 cloves fresh garlic, finely chopped
1 lemon, zested
1 ½ teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon salt, divided
4 (5 ounce) mahi mahi fillets

Steps:

  • Preheat a large saucepan over medium heat for 2 to 3 minutes. Add 2 tablespoons oil, then add panko. Cook and stir until lightly toasted, 2 to 3 minutes. Add garlic and cook until fragrant and panko is golden brown, 1 to 2 minutes.
  • Transfer bread crumb mixture to a small bowl and add lemon zest, seafood seasoning, and 1/4 teaspoon salt; mix to combine. Set aside.
  • Wipe out the saucepan and pour in remaining oil. Season fish fillets with remaining salt and add to the pan.
  • Cook over medium heat until opaque, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Serve fish topped with bread crumb mixture.

  • Cover the beans by about 3 inches of water and bring to a boil. Add the smashed garlic and the half onion. Simmer until tender, then add salt to taste. Remove the garlic and onion and discard. Strain the liquid off the beans, but save both the beans and the liquid.
  • Dice everything small and toss everything together except the cilantro. You'll mix that in right when you serve. Hold this at room temperature.
