Savory Herb and Cheddar Squash Bread image

This is the perfect way to use up all that summer squash! With cheddar, garlic, green onions and dill mixed into the batter this loaf is hard one to resist.

Number Of Ingredients 12

3 cups all-purpose flour
4 tsp baking powder
1 tsp salt
1/2 tsp baking soda
2 tsp garlic powder
1 1/2 cups shredded summer squash ((zucchini, magdam pattypan, etc))
3/4 cup shredded cheddar cheese
1 tbsp chopped green onion
3 tbsp chopped fresh dill
2 eggs
1 cup buttermilk
1/4 cup unsalted butter (, melted)

Steps:

  • Preheat oven to 350°F. Grease a regular size loaf pan and set aside.
  • In a large bowl stir together the flour, baking powder, salt, baking soda and garlic powder. Add in the shredded squash, cheddar cheese, green onions and dill, stirring to fully combine.
  • In a separate, smaller bowl, mix together the eggs, buttermilk and butter.
  • Pour the wet ingredients into the dry mix in the large bowl and stir together until just combined.
  • Spoon batter into loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.

1 tablespoon sugar
1/2 teaspoon onion salt
1/2 teaspoon oregano leaves
1/4 teaspoon dry mustard
1 1/4 cups grated cheddar cheese
1 egg, beaten
1 cup milk
1 tablespoon melted butter

Steps:

  • Preheat oven to 350F.
  • In large bowl, combine flour, baking powder, sugar, onion salt, oregano, dry mustard and cheese.
  • In separate bowl, mix together egg, milk and butter.
  • Add to dry ingredients, stirring just until moistened.
  • Spread batter in greased loaf pan.
  • Bake 40-45 minutes.
  • Cool in pan for 10 mins.
  • Finish cooling on rack.
  • May be frozen.

Steps:

  • Mix together first seven ingredients; set aside.
  • Mix together egg, milk, and butter; add to dry ingredients.
  • Stir until just moistened.
  • Pour batter into a greased 8x4 inch loaf pan.
  • Bake at 350 degrees for 45 minutes.
