SWEET AND SAVORY GRILLED CORN



Sweet and Savory Grilled Corn image

4 ears corn, husked
1 stick (8 tablespoons) salted butter, softened
1 tablespoon garlic powder
1 tablespoon chopped fresh parsley
1 tablespoon sugar
Pinch kosher salt

Steps:

  • Preheat a grill for cooking at medium-high heat.
  • Add the corn to the hot grill and cook, turning frequently, until slightly charred all over, about 10 minutes total.
  • For the sweet garlic butter, combine the butter, garlic powder, parsley, sugar and salt in a small serving bowl and mix until together until well combined. Spread over the warm corn before serving.

If you're tired of just plain corn, try this version. This is from the Officer's Wives' Cookbook, and I tried it the first time in 1987 with baked pork chops.

3 slices bacon, fried and crumbled
16 ounces corn
1/4 cup green chili
1/2 cup sour cream
1/4 cup onion, chopped
1/4 teaspoon paprika

Steps:

  • Fry the onion with the bacon.
  • Drain but save 2 tablespoons bacon grease.
  • Add 1 can corn, drained.
  • Add bacon grease.
  • Add sour cream.
  • Add diced mild green chilies (1/4 cup of a can).
  • Salt and pepper to taste.
  • Heat.
  • When ready to serve, sprinkle paprika.

  • Preheat oven to 350°F. Stir together flour, sugar, baking powder, and salt in a small bowl until blended. Whisk together eggs, cream, and melted butter in a medium bowl until blended.
  • Heat canola oil in a large skillet over medium-high. Add corn and onion, and cook, stirring often, until onion is softened, about 5 minutes. Stir in 1 Tbsp. thyme. Remove from heat, and let cool slightly, about 5 minutes. Stir flour mixture and corn mixture into egg mixture. Spoon into a 13- x 9-inch (3-quart) baking dish, and bake in preheated oven until set and golden brown, about 40 minutes. Let stand 5 minutes before serving. Sprinkle with remaining 1 Tbsp. thyme.
