2 pounds pork sausage (such as Jimmy Dean®)
1 onion, finely chopped
1 (8 ounce) package cream cheese, softened
2 jalapeno peppers, seeded and finely chopped
4 (8 ounce) packages crescent roll dough, unrolled and divided into triangles

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir sausage in a skillet over medium-high heat until browned, about 8 minutes. Drain.
  • Mix sausage, onion, cream cheese, and jalapeno peppers together in a bowl until well combined. Spoon about 1 tablespoon sausage mixture onto each crescent dough triangle; fold corners around sausage and roll up into a crescent, ending at the tip of the triangle. Place rolls on baking sheets.
  • Bake in preheated oven until rolls are golden brown, about 15 minutes.

I got this recipe when I worked at the school. One of the teacher brought it for our breakfast potluck. I've fixed this for several different occasion and it was always a hit. Prep time does not include overnight refrigeration.

1 lb breakfast sausage (HOT)
2 (8 ounce) packages cream cheese
2 (8 ounce) packages refrigerated crescent dinner rolls

Steps:

  • Brown sausage in skillet.
  • In a bowl, mix sausage with cream cheese.
  • Roll out each croissant pkg into a rectangle, pinching together at the seams to make one large piece.
  • Place the 1/2 of the cheese mixture down the middle(the entire length of each rectangle) and fold one side of the dough to the middle and the other and pinch the top together at the seam.
  • Wrap in plastic wrap or foil and refrigerate over night.
  • In the morning, preheat oven according to croissant directions.
  • Remove wrap and slice in 1/2 inch slices and place on cookie sheet.
  • Bake for 15-20 minutes.

2 (8 ounce) cans refrigerated crescent dinner rolls
1 lb bulk pork sausage (hot or mild)
1 onion, finely chopped
1 (8 ounce) package cream cheese
3 -4 fresh sage leaves, finely chopped (optional)
2 cups shredded sharp cheddar cheese

Steps:

  • Heat oven to 375°F
  • Unroll 1 can of dough into 2 long rectangles and place in ungreased 13x9-inch (3-quart) glass baking dish, press over bottom and 1/2 inch up sides to form crust.
  • Brown sausage and onion in large frying pan over medium heat until thoroughly cooked, remove sausage from the frying pan and discard the fat.
  • Add cream cheese to same frying pan and cook over low heat until melted.
  • Add cooked sausage, stir to coat, add the chopped sage if using.
  • Spoon evenly over crust in baking dish and sprinkle with the cheese.
  • Unroll the second can of dough on work surface.
  • Press to form 13x9-inch rectangle, firmly press perforations to seal and carefully place over cheese.
  • Bake for 20 to 25 minutes or until golden brown.
  • Cool for 10 minutes then cut into squares.

1 package pre-cooked sausage patties
1 (8-ounce) can crescent shaped rolls
2 tablespoons butter
2 tablespoons mayonnaise
1 dash hot sauce
Lemon juice
4 slices American cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the pre-cooked sausage patties in the oven for 15 to 18 minutes.
  • While sausage patties are heating, prepare rolls. Unroll the crescent dough from the can. Notice that there are four rectangular pieces. Separate the rectangles from each other. Place one rectangle with a long side nearest you. Separate the triangles and pinch together the two shorter sides making one large triangle. Loosely roll up the triangle starting from the longest side. Bring the ends around and overlap to form a circle. Press ends together and place on a baking sheet. Repeat with remaining three pieces. Brush rolls with butter and bake for 11 to 13 minutes.
  • While rolls are baking, mix together the mayonnaise, hot sauce, and lemon juice, to taste.
  • Slice baked rolls horizontally. Split roll and place sausage patty on bottom half. Add a dollop of mayonnaise sauce, a slice of cheese, and replace the top of the roll. Heat the sandwich in the microwave for 20 to 30 seconds, or until the cheese starts to melt.

3/4 lb loose sausage
1 tablespoon olive oil
10 large eggs
1/2 cup half-and-half
1/3 cup packed fresh parsley leaves, coarsely chopped
2 scallions, thinly sliced
1/2 cup packed grated parmesan cheese or 1/2 cup cheddar cheese
8 large croissants, cut in half crosswise

Steps:

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with parchment paper. Spray parchment with nonstick baking spray.
  • Place sausage in a medium skillet over medium high heat. Add olive oil and cook, stirring, until sausage is golden and cooked through, about 8 minutes. Remove sausage to a plate.

Easy and simple steps for sausage croissant. Cream cheese and egg whites may be omitted. Sausages may be fried before rolled in dough. Although I found it too greasy for a croissant. 16 cocktail smoked sausage links (Any flavor you prefer is okay. I like Hillshire Farms Beef Lit'l Smokies)
16 ounces Pillsbury Refrigerated Crescent Dinner Rolls
1 egg white (optional)
5 tablespoons cream cheese (optional)

Steps:

  • Heat oven to 375 degrees F.
  • Unroll dough and separate into 8 triangles along the perforated lines. (The dough is easiest to work with when cold straight out of the fridge.).
  • Spread 1 teaspoon (may be less or omitted) of cream cheese on dough.
  • Place two sausages on the wider end of the dough.
  • Roll the dough loosely. Tuck the loose corners of the wider end. The ends of sausages will stick out but will be covered when the dough rises. Slightly bend into crescent shapes.
  • Baste the top of the dough with egg whites.
  • Bake on a non greased cookie sheet with atleast 3 inches from each other.
  • Bake for 10-15 minutes until golden brown.
