BASIL-LIME RUM FIZZ

Number Of Ingredients 8

1/2 cup sugar
1 teaspoon black peppercorns
1/2 teaspoon allspice berries
1 cup packed fresh basil, plus 2 leaves
1/2 small lime, cut into wedges, plus 1 wedge for garnish
1 1/2 ounces light rum
1/3 cup chilled nonalcoholic ginger beer
1/2 ounce dark rum

Steps:

  • Make the basil syrup: Bring 1 cup water, the sugar, peppercorns and allspice berries to a simmer in a medium saucepan over medium heat. Cook, stirring, until the sugar dissolves, then continue to simmer until slightly reduced, 3 to 5 minutes. Remove from the heat and stir in the 1 cup basil. Let cool, then strain into a liquid measuring cup. Refrigerate at least 1 hour. (You should have about 1 cup syrup, enough for 8 cocktails.)
  • For each drink: Muddle the lime wedges and 2 basil leaves in a shaker with 3/4 ounce of the basil syrup. Add the light rum, fill with ice and shake well. Strain into a tall glass filled with ice and top with the ginger beer. Float the dark rum on top by pouring it over the back of a spoon. Garnish with a lime wedge.

1 cup fresh lemon juice
1 cup sugar
2 (8-inch) rosemary sprigs
1/2 cup vodka
Chilled club soda or seltzer
Garnish: 8 (3-inch) rosemary sprigs

Steps:

  • Bring lemon juice, sugar, and rosemary to a boil in a small saucepan, stirring until sugar has dissolved, then reduce heat and simmer 2 minutes. Cool completely, about 1 hour. Discard rosemary sprigs.
  • Fill 8 (8-ounces) glasses halfway with ice. Divide syrup (about 2 tablespoons each) among glasses and add vodka (1 tablespoon each). Top off with club soda.

1 small bunch fresh rosemary, plus 4 sprigs for garnish
3 ounces gin
3 ounces fresh squeezed ruby red grapefruit juice
Champagne or prosecco

Steps:

  • For the rosemary simple syrup: Add the sugar, 1/2 cup water and the rosemary to a small saucepan and bring to a boil, stirring until the sugar is dissolved. Remove from the heat and let cool.
  • For the champagne fizz: Combine a tablespoon of rosemary simple syrup (more if you like it sweeter), the gin and grapefruit juice and stir. Pour into two cocktail glasses. Top each with champagne and garnish with a sprig of rosemary. Enjoy!

  • Muddle 8 large mint leaves in a cocktail shaker. Add 1 egg white, 2 ounces gold rum, 1 ounce thawed frozen orange juice concentrate and 1/2 ounce each lime juice, simple syrup and heavy cream; shake 30 seconds. Add ice and shake 30 more seconds. Strain into a glass and top with seltzer. Garnish with an orange slice.

A refreshing summertime cocktail. Time does not include cooling time for syrup. I changed the amount of rosemary originally posted from 1/2 cup to 4 sprigs, which when chopped coarsely, equals about 1/2 cup, but I think others were chopping it too fine to fill the 1/2 cup, and that is why it was too strong. :)

1/2 cup sugar
2 cups water
2 ounces vodka or 2 ounces gin
2 slices lemons
soda water
1 sprig fresh rosemary

Steps:

  • To make syrup:.
  • Place all syrup ingredients into a saucepan and boil 30 minutes.
  • Strain and allow to cool completely before use.
  • Store in covered container in refrigerator.
  • To make cocktail:.
  • Place 1 ounce syrup with vodka (or gin) and lemon slices over ice in shaker. Shake well.
  • Strain into a rocks glass and add a splash of soda.
  • Garnish with rosemary sprig.
