2 cups all-purpose flour
2 teaspoons baking powder

½ teaspoon ground nutmeg
½ teaspoon ground ginger
¼ teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Mix pumpkin puree, sugar, oil, applesauce, and eggs together in a medium bowl until fluffy.
  • Sift flour, baking powder, cinnamon, salt, baking soda, nutmeg, ginger, and cloves together in a large bowl. Add pumpkin mixture and stir until combined. Pour into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Let cool, about 15 minutes before cutting into 24 bars.

4 eggs (room temperature)
2/3 cup cane sugar
2/3 cup brown sugar
1 can (15 ounces pumpkin puree)
1 cup unsweetened applesauce

Steps:

  • Preheat the oven to 350°F.
  • Whisk flour, cinnamon, baking powder, baking soda and salt in a large bowl. Beat the eggs, sugar, pumpkin and applesauce in another large bowl.
  • Gradually pour the dry ingredients into wet ingredients and mix until just combined.
  • Pour the batter into an ungreased 9x13 baking pan and bake for 25-30 minutes or until set. Remove from the oven and allow the bread to cool completely in the pan set on a wire rack.

6 ounces cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened

4 ounces low-fat cream cheese
1/4 cup butter
1 cup powdered sugar
1 teaspoon vanilla extract

Steps:

  • In mixer combine wet ingredients stir until combined.
  • In another bowl mix dry ingredients then combine with wet ingredients.
  • Pour in greased cookie sheet spread evenly. 350 degrees for 15 minute.
  • Frosting. Mix cream cheese and butter until smooth. Add powder sugar mix until smooth add vanilla.
  • (I add applesauce instead of veg. oil for a healthier version. If you dont care veg. oil works great. Same amount. 1 cup applesauce=1 cup veg oil.
