2 tbsp (30ml) extra virgin olive oil2 garlic cloves, peeled and chopped1 onion, peeled and sliced in half rounds2 large tomatoes (or 3 medium), ripened and diced into small cubes6-7 sprigs of flat-leaf parsley, stemmed and chopped4 sprigs fresh thyme, stemmed (+ extra for garnish) ½ tsp red pepper flakes½ tsp fresh ground black pepper½ tsp salt15-20 black olives (preferably pitted)10-15 caper berries (or 2 tbsp capers)4 cod loins½ lemon, juiced1 tsp salt1 tsp ground black pepper

Steps:

  • Step 1 - Heat up the olive oil in a large frying pan over medium heat. Add the garlic and onion, and cook for 2-3 minutes until the onion is slightly softened and translucent.
  • Step 2 - Add the tomatoes, parsley, thyme, red pepper flakes, pepper and salt, and cook for 10-12 minutes (lid on), stirring occasionally until the tomato is soft.
  • Step 3 -Stir in the olives and capers.
  • Step 4 - On a clean working surface, drizzle the cod loins with lemon juice and season with salt and pepper on both side. Nestle in the cod loin in the pan, on top of the sauce. Garnish cod loins with tiny thyme sprigs (optional). Close the lid and cook for about 5 minutes, until the cod is just cooked through.
  • Season cod with salt, pepper and/or red pepper flakes to taste (optional). Serve immediately.

Steps:

  • To prepare the court bouillon: In a large soup pot over high heat, combine the court bouillon ingredients and bring to a boil. Reduce heat to medium-high and cook until the carrots are almost tender, about 20 minutes. To make the aioli: In a small bowl, combine the mayonnaise and garlic. Add the olive oil in a thin steady stream, whisking it into the mayonnaise. Sprinkle generously with pepper. To prepare the fish and vegetables: Add the saffron, zucchini, leeks, peppers, and scallions to the broth, making sure everything is covered by the broth. Reduce the heat to medium-low or low and cook at a bare simmer for about 15 minutes. Add the fish and olive oil and simmer for another 5 to 6 minutes, until the fish is opaque throughout and flakes. To serve: Lift the fish and vegetables from the broth with a slotted spoon and divide among individual plates. Baste with a little of the broth. Garnish with aioli.

"Aïoli epitomizes the heat, the power, and the joy of the Provençal sun, but it has another virtue-if drives away files." -Frédéric Mistral, Provençal Poet, 1830-1914 Old customs die hard, and though this very Catholic country of France no longer insists that there be a day without meat, Friday is still a fish day as far as the Provençal diet is concerned. You see fish trucks parked in nearly every village, so that housewives can fill their baskets with sardines and anchovies, mackerel, and sweet, tiny mussels from the Bassin de Thau off the Mediterranean. But the favorite Friday fish of all is salt cod, the main ingredient of the popular one-dish meal known as aïoli, which is served with the garlic-rich mayonnaise of the same name. Traditional aïoli includes good portions of poached salt cod, which the French call morue salée, along with steamed green beans, carrots, potatoes, cauliflower, and hard-cooked eggs. Some cooks add the local tiny snails known as petits gris, and others add cooked beets and steamed artichokes. A proper aïoli is served only at lunch, giving the digestive system a good long time to deal with the richness of the sauce. The meal is a festive affair, and often the sauce is served direct from the giant stone or marble mortar and olive-wood pestle essential to every Provencal kitchen. Since it is usually quite hot when aïoli is served, it's perfectly fine if everything is at room temperature, but never cold. As one drives around Provence in the summer months, one often see posters tacked on a tree announcing an Aïoli Géant! Follow the signs and you are sure to have a festive meal, downed with plenty of chilled local rosé.

2 pounds salt cod
Grated zest of 1 orange
A handful of dried fennel branches or 1 fennel bulb, quartered
1 onion, stuck with 4 whole cloves
6 black peppercorns
1 pound small beets
2 pounds small potatoes, scrubbed but not peeled
1 pound medium carrots, peeled
1 whole cauliflower (about 2 pounds), trimmed and broken into florets
1 pound ultra fresh small green beans
8 hard-cooked eggs, in their shells
1 recipe Garlic Mayonnaise

Steps:

  • A vegetable steamer
  • 6-quart pasta pot fitted with a colander
  • One or 2 days before preparing the final dish-depending upon the saltiness of the fish-place the salt cod in a bowl of cold water and soak, covered, in the refrigerator. Change the water three or four times during the soaking period to remove excess salt. Drain and rinse the fish.
  • Place the cod in a large saucepan. Add fresh cold water to cover, along with the orange zest, fennel branches or quarters, onion pricked with cloves, and peppercorns, and bring just to a simmer over medium heat. Immediately remove the pan from the heat. Cover and let stand for at least 15 minutes. Drain well and discard the flavorings. Scrape any fatty skin off the fish and remove any bones. Tear the fish into large pieces and arrange on a platter.
  • Cooking each vegetable separately, steam the beets, potatoes, and carrots. Peel and halve or quarter the beets and arrange on a separate platter for just the vegetables. Add the potatoes to the platter. Halve the carrots lengthwise and arrange on the platter.
  • Separately blanch, refresh, and drain the cauliflower and green beans. Arrange the cauliflower and beans on the platter. Arrange the eggs around the edges of the platter. Bring the platters to the table and serve with the sauce.

1 onion (medium dice)

2 tablespoons olive oil
28 ounces tomatoes, canned (drained)

8 black Greek olives (pitted)
1 tablespoon lemon juice
1 teaspoon oregano (dried)

Steps:

  • Preheat oven to 450 degrees F. Arrange fillets in 8x8x2 inch square baking dish.
  • Saute onion and garlic in oil in medium-size skillet over medium heat 3 to 5 minutes or until lightly softened. Add tomatoes, capers, basil, olives, lemon juice, oregano, salt if using and pepper.
  • Simmer, stirring occasionally for approximately 8 minutes. Spoon the sauce over the fish.
  • Bake in preheated oven for 10 minutes or until cooked through.

1 lemon, halved
3/4 teaspoon coarse salt
Freshly ground pepper
2 tablespoons extra-virgin olive oil
2 small onions, chopped (2 cups)

1 small zucchini, thinly sliced (2 cups)
4 medium ripe tomatoes, thinly sliced
2 teaspoons fresh thyme, plus 3 sprigs

Steps:

  • Preheat oven to 400 degrees. Place cod fillets in a nonreactive dish, and squeeze lemon on top. Refrigerate for 30 minutes. Sprinkle with 1/4 teaspoon salt, and season with pepper.
  • Heat 1 tablespoon oil in a medium Dutch oven over medium heat. Add onions; cook until golden brown, about 12 minutes. Add garlic; cook for 3 minutes. Remove from heat. Top with half the zucchini, tomatoes, and thyme. Drizzle with 1 1/2 teaspoons oil, sprinkle with 1/4 teaspoon salt, and season with pepper. Add cod and remaining zucchini, tomatoes, thyme, oil, and salt. Season with pepper.
  • Bake, covered, for 10 minutes. Baste with the juices, and bake, uncovered, for 15 minutes more.

1 1/2 lbs cod fish fillets
1 cup milk
1 1/2 cups water
1 bay leaf
4 sprigs fresh parsley
2 tablespoons fresh parsley, chopped
4 whole peppercorns
2 whole cloves
4 tablespoons unsalted butter
1/2 teaspoon garlic, minced
3 tablespoons shallots, minced
1/2 lemon, juice of
salt & freshly ground black pepper

Steps:

  • Cut cod fillets into four serving size pieces and place in large pan in one layer.
  • Add the milk and the water to the pan so that the fish is barely covered--if necessary add more water.
  • Add the bay leaf, the parsley sprigs, peppercorns and cloves.
  • Bring to a simmer and cover and cook gently for three to four minutes until fish just flakes--cooking time will depend upon the thickness of the fish--do not overcook.
  • While the fish is poaching, start the sauce by melting one tablespoon of the butter in a saucepan and briefly cooking the garlic and the shallots in the butter.
  • Remove 1/4 cup of the poaching liquid and add it to the sauce, stirring all the while.
  • Bring the sauce to a boil, add the lemon juice and swirl in the remaining butter, one tablespoon at a time.
  • Remove from the heat and add the minced parsley.
  • Taste the sauce and adjust seasoning.
  • Drain the fish and serve it hot with the lemon-butter sauce poured over it.

2 cod fillets, skin on, each weighing about 175g, see box, far right
1 tsp coarse salt flakes
2 red peppers
1 garlic clove
1 lemon
2 fennel bulbs
6 tbsp olive oil
350g very ripe cherry tomato , halved
1 tbsp balsamic vinegar
handful pitted black olives
1 tbsp caper in brine, drained
small handful each lemon thyme, oregano and basil leaves, with a few smal basil leaves kept aside
20 marinated anchovy fillets, roughly chopped

Steps:

  • Neatly trim the cod fillets. Score the skin of each fillet 3-4 times at regular intervals. Lay the fish in a shallow dish and sprinkle both sides of the fillets with the salt and some freshly ground black pepper. Set aside or chill overnight, see box, far right.
  • Deseed and finely slice the peppers, then finely grate the garlic and lemon zest over the peppers. Carefully slice the fennel on a mandolin, or as finely as possible with a sharp knife, then tip half the fennel into a bowl of iced water and set aside.
  • Brush the salt off the fish or, if it has dissolved, wipe the brine off with kitchen paper. Heat 2 tbsp of olive oil in a large non-stick pan, cook the fish, skin side down, for 4 mins until the skin is crisp and browned, then remove from the pan.
  • Put 1 tbsp more oil into the pan. Fry the fennel and the marinated peppers together for 4-5 mins until soft and starting to brown. Throw in the tomatoes and the balsamic vinegar, then continue to cook for 2-3 mins until they soften and release their juices. Scatter over the olives, capers and herbs, then toss everything together.
  • Nestle the fish fillets, skin side up, among the vegetables, then lower the heat and simmer, uncovered, for 5-6 mins until the fish is just cooked through. Lift the fish from the pan and give the sauce a final simmer and stir, then turn off the heat. This dish is better served warm rather than hot, so don't worry about the vegetables or fish resting before you serve.
  • Drain the reserved fennel and pat dry with kitchen paper. Toss with the juice from half the grated lemon, 2 tbsp olive oil and the anchovies. To serve, spoon the vegetables into the middle of two large dinner plates. Sit the cod, skin side up, on top of the vegetables and top with a neat bundle of fennel salad. Drizzle everything with a touch more oil, then scatter with the small basil leaves.
