THE BEST PISTACHIO DIP
This is just a three ingredient recipe. Even though it's a easy recipe to do it is very flavorful. Guests will be asking for more.

Steps:
- Put room temperature cream cheese in a bowl. Mix with spoon until creamy.
- Add the pineapple and mix very well.
- Once the pineapple has been mixed in add little by little the pistachio pudding dry mix to the cream cheese and pineapple mixture. Making sure to mix every time you add a little.
- I recommend you make a little taste test every time you add some pudding mix some people like less pudding mix and some like more.
- Refrigerate .
- Eat with ritz crackers.Yummy ! Enjoy.

CHARLESTON CHEESE DIP
Steps:
- Preheat the oven to 350 degrees F.
- In a medium bowl, mix the mayonnaise, cream cheese, Cheddar cheese, Monterey Jack cheese, green onions and cayenne pepper. Transfer the mixture to a shallow baking dish, such as a 9-inch pie pan. Top the mixture with the cracker crumbs and bake until heated through, about 15 minutes.
- Remove the pan from the oven and top with the bacon. Serve immediately with corn chips, crackers or bagel chips.
PISTACHIO FRUIT DIP
A pretty fluffy fruit dip I took to work with fresh cut up fruit platter of strawberries, cantaloupe, pineapple and watermelon. Everyone wolfed it down. What a hit!

- Cream the cream cheese till soft and fluffy.
- Add pudding mix and confectioners till mixed and fluffy.
- Add milk slowly till well blended.
- Add Cool Whip and blend thoroughly.
- Chill and serve in a large bowl alongside fresh fruit or put on top of a fresh fruit salad.

- Combine 1/2 cup oil and garlic in a small saucepan over medium-low heat. Cook, swirling pan occasionally, until garlic is tender, 12–15 minutes. Let garlic cool in oil.
- Meanwhile, preheat oven to 350°. Spread pistachios and pumpkin seeds on a rimmed baking sheet and cook until lightly toasted, 6–8 minutes. Measure out ½ cup nut mixture and roughly chop; season with remaining 1 tsp. oil and 1 tsp. salt.
- Heat broiler. Broil poblano on a foil-lined baking sheet, turning occasionally, until blackened, 8–10 minutes. Transfer to a bowl, cover with plastic wrap, and let steam 15 minutes. Peel, seed, and roughly chop.
- Heat a large cast-iron skillet over medium-high heat until a drop of water flicked on the surface sizzles on contact. Add scallions to skillet and press down using the back of a spatula until charred, about 3 minutes. Continue to cook and press until scallions are mostly charred all over, about 4 more minutes. Let cool to room temperature.
