PINEAPPLE GINGER COOLER
A useful way to use pineapple peel with no waste to make a delicious drink.

Steps:
- In large pot add pineapple peel, ginger and cinnamon sticks
- Add 8 cups of water to pineapple peel
- Boil for 1 hour
- Add sugar and stir well
- Place mixture in the refrigerator until cool (at least 1 hour)
- Strain to serve
- Pour over frozen mixed tropical fruit and garnish with fresh mint as desired

This is a nonalcoholic fruit punch recipe I made up on a whim. It's a wonderful kid's drink on a hot summer day.

Steps:
- Fill a cocktail shaker 1/2 full with ice.
- Add orange and pineapple juices.
- Shake to combine.
- Strain the juice mixture into a cocktail or martini glass.
- Top with the cranberry juice and stir.
- Add the ginger ale.
- Garnish with the orange wheel.
- Serve.
PINEAPPLE & GINGER PUNCH
Treat guests to something different with this flavourful pineapple and ginger punch. It's a great non-alcoholic drink for a party or at Christmas

- Pour the pineapple juice and lime juice into a blender. Add the mint and a couple of handfuls of ice, then blitz until the ice is crushed. Pour into tumblers filled with more ice, then top up with the ginger beer.

- Add peeled, chopped ginger to a blender with 1 cup of water. Puree until smooth. Pour into a large bowl (2 quarts at the barest minimum), then set aside.
- While water is heating, crush the mint leaves with the back of a spoon or mortar and pestle (you don't need to turn them to paste - we're just scuffing them up a bit so their flavor will infuse into the drink faster). Add them to the bowl with the ginger paste.
- Once the water has reached boiling, pour it over the ginger and mint. Then pour that mixture through a strainer lined with cheesecloth into another bowl. (You can do this immediately if you prefer a milder drink, or allow it to steep for a few minutes if you want a more intense ginger flavor). Squeeze through any liquid retained in the pulp using the back of a spoon. Discard the leftover solids.
