This cobbler is packed with sweet peaches and features a delicious, crumbly cornbread crust. It's then finished off with a dollop sweet cinnamon whipped cream!

8 cups sliced peaches
1/4 cup brown sugar
2 tbsp white sugar
1/4 teaspoon cinnamon
2 tbsp cornstarch
2 tbsp lemon juice
¾ cup yellow cornmeal
¾ cup flour
2 tsp baking powder
3 tbsp packed brown sugar
1/4 teaspoon salt
¼ tsp cinnamon
1 large egg
4 tbsp of melted butter
1 tsp vanilla extract
1/2 - 1 cup buttermilk
1 1/2 cups heavy whipping cream
3 tbsp powdered sugar
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 375°F. Toss together the peaches with sugar, cornstarch and lemon. Melt two tablespoons of butter in a 10 inch cast iron skillet by placing skillet in the oven for a couple of minutes.
  • In a large bowl, combine the cornmeal, flour, baking powder, brown sugar, salt and cinnamon.
  • Add the egg, melted butter and vanilla extract, stirring until dry ingredients are moistened. Add buttermilk, a little at a time until batter is wet but thick. You want a thicker texture than regular cornbread batter.
  • Transfer peaches to hot skillet and ladle dollops of cornmeal batter on top of the peaches, leaving some space between them, until all batter is gone. Bake for 45-50 minutes, or until top is lightly browned and edges are bubbling.
  • While cobbler is baking, beat together heavy cream, powdered sugar, cinnamon and vanilla extract with an electric hand mixer until stiff peaks form.
  • Serve cobbler warm with a dollop of cinnamon whipped cream.

1/2 teaspoon cinnamon
1/2 teaspoon salt
1 tablespoon cornstarch
3 large peaches, peeled, pitted, and cut into 1/2-inch thick wedges
2 1/2 cups blueberries
1 tablespoon fresh lemon juice
Lemon zest, optional
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 tablespoons sugar
3/4 teaspoons salt
6 tablespoons cold unsalted butter, cut into small pieces or grated
1/2 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • For the filling:
  • In a large mixing bowl, combine the sugar, cinnamon, salt, and cornstarch. Add the peaches, and blueberries, and mix, coating the fruit evenly with the sugar mixture. Toss with the lemon juice and zest, if desired. Put the fruit filling in a cast iron skillet and place in the oven for 15 to 20 minutes. In the meantime, make the biscuit dough.
  • For the topping:
  • Whisk the flour, baking powder, baking soda, sugar, and salt in a large mixing bowl. Using a food processor, a pastry cutter, or your fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the buttermilk and stir just until moistened.
  • Carefully remove the skillet from the oven, and drop 6 to 8 (1/2 cup) portions of biscuit dough on top of the cooked fruit, spacing the mounds about a 1/2-inch apart.
  • Increase the oven temperature to 425 degrees F and bake until the biscuits are golden brown on top and the fruit is bubbling, about 30 minutes. Allow to cool for 15 minutes before serving.

3/4 cup (1 1/2 sticks) unsalted butter
1/3 cup light brown sugar
1 teaspoon ground cinnamon
1 teaspoon kosher salt
3 fresh peaches, pitted and sliced 1/2-inch thick, or 3 cups frozen peaches, thawed
1 cup finely ground yellow cornmeal
3/4 cup all-purpose flour
1 teaspoon baking powder
3/4 cup granulated sugar
3 large eggs, at room temperature
1/2 cup whole milk, at room temperature

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt 3 tablespoons butter in a 10-inch cast-iron skillet over medium heat. Stir in the brown sugar along with the cinnamon and 1/2 teaspoon salt, then cook, stirring, until the sugar is melted and begins to bubble, about 10 minutes. Remove the skillet from the heat and let it cool slightly.
  • Arrange the peaches in the bottom of the skillet, fanning out in a circular pattern. Set aside.
  • Whisk together the cornmeal, flour, baking powder and remaining 1/2 teaspoon salt in a small bowl. In a stand mixer fitted with the paddle attachment or using a hand mixer, beat the remaining 9 tablespoons butter together with the granulated sugar on high speed until light and fluffy. Add the eggs, one at a time, beating after each addition. On low speed, add half the dry ingredients, half the milk, the remaining dry ingredients, then the remaining milk. Increase the speed to medium and beat just until everything is well mixed, scraping down the bowl once. (Use a spatula to be sure there are no dry ingredients stuck to the bottom of the bowl.) Drop the batter in large dollops over the peaches in the skillet, then use an offset spatula to gently smooth it out, being careful not to disturb the peaches.
  • Bake until the top is golden brown and puffed and a tester inserted in the center comes out clean, 40 to 45 minutes. Let cool for 20 minutes. While the cake is still warm, run a butter knife around the outside, then invert onto a serving platter. Serve warm.

5 lbs peaches, peeled, pitted and cut into 1/2-inch wedges
6 tablespoons sugar
1/8 teaspoon salt
1 tablespoon lemon juice
1 1/2 teaspoons cornstarch
1 1/2 cups all-purpose flour, plus extra for work surface (TOPPING)
6 tablespoons sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
4 tablespoons unsalted butter, melted and cooled
1 teaspoon ground cinnamon

Steps:

  • For the filling: Adjust oven rack to middle position and heat oven to 425 degrees.
  • Melt butter in large oven-safe nonstick skillet over medium-high heat.
  • Add two-thirds of peaches, sugar, and salt and cook, covered, until peaches release their juices, about 5 minutes.
  • Remove lid and simmer until all liquid has evaporated and peaches begin to caramelize, 15 to 20 minutes.
  • Add remaining peaches and cook until heated through, about 5 minutes.
  • Whisk lemon juice and cornstarch in small bowl, then stir into peach mixture.
  • Cover skillet and set aside off heat.
  • For the topping: Meanwhile, whisk flour, 5 tablespoons sugar, baking powder, baking soda, and salt in medium bowl.
  • Stir in buttermilk and butter until dough forms.
  • Turn dough out onto lightly floured work surface and knead briefly until smooth, about 30 seconds.
  • Combine remaining sugar and cinnamon.
  • Break dough into rough 1-inch pieces and space them about 1/2 inch apart on top of hot peach mixture.
  • Sprinkle with cinnamon sugar and bake until topping is golden brown and filling is thickened, 18 to 22 minutes.
  • Let cool on wire rack for 10 minutes.
  • Serve. (Although best eaten the day it is made to maintain the texture of the cobbles, leftovers may be refrigerated for up to 1 day. Individual portions may be removed from skillet and reheated in microwave or in the oven.).
