VEGETABLE PARMESAN

Number Of Ingredients 12

Butter, for greasing
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 medium eggplant, cut into 1/4 to 1/2-inch thick slices
2 medium fennel bulbs, trimmed and sliced into 1/4-inch thick pieces
1 red bell pepper, cut into thirds
1 yellow bell pepper, cut into thirds
1 orange bell pepper, cut into thirds
1 (26-ounce) jar marinara sauce
3 cups shredded mozzarella cheese
1 cup grated Parmesan
1 cup plain bread crumbs

Steps:

  • Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Butter a 13 by 9-inch glass baking dish.
  • Drizzle the eggplant slices, fennel slices and peppers with olive oil. Season with salt and pepper. Grill the vegetables for 3 to 4 minutes each side until softened.
  • Spoon 3/4 cup of the marinara sauce over the bottom of the prepared baking dish. Arrange the eggplant slices on top. Sprinkle with 1 cup of mozzarella cheese and 1/3 cup Parmesan cheese. Arrange the peppers in a single layer on top. Spoon 3/4 cup of marinara sauce over the peppers. Sprinkle with 1 cup of mozzarella cheese and 1/3 cup Parmesan cheese. Arrange the fennel on top and cover with the remaining sauce. Sprinkle with the remaining cheese. Scatter the bread crumbs over the cheese and drizzle liberally with oil. Bake until the top is golden and forms a crust, about 30 to 35 minutes
  • Remove from the oven and cool for 10 minutes before serving.
  • Cook's Note: The vegetables can also be baked in a 375 degrees F oven for 15 to 20 minutes until softened.

2 zucchini, trimmed and cut lengthwise into 1/4-inch thick slices
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 (26-ounce) jar marinara sauce, divided
3 cups shredded mozzarella cheese, divided
1 cup grated Parmesan, divided
1 cup plain bread crumbs

Steps:

3/4 cup 185 mL grated Parmesan cheese
3/4 cup 185 mL finely chopped Walnuts
3 tbsp 45 mL butter, melted
4 cups 1 L unpeeled, thinly sliced red potato pieces
4 cups 1 L peeled, thinly sliced butternut squash pieces
1 1/2 cups 375 mL peeled, thinly sliced celery root (celeriac) pieces - about 1/2 bulb
1 1/2 cups 375 mL thinly sliced, well washed leeks - white part only
2 cups 500 mL CAMPBELL'S® Ready to Use Vegetable Broth
3/4 cup 185 mL 35% cream
1/2 cup 125 mL all-purpose flour
1 tbsp 15 mL minced fresh thyme leaves
1/2 tsp 3 mL ground nutmeg
1/4 tsp 1 mL ground black pepper

Steps:

  • Combine Parmesan cheese,walnuts and 1½ tbsp (20 mL) butter. Set aside.
  • Mix potatoes,squash,celery root and leeks in large bowl.
  • Heat broth,cream,flour,1 tbsp (15 mL) butter,thyme,nutmeg and pepper to a boil in a 2 qt (2 L) saucepan at medium,stirring constantly until mixture thickens. Simmer for 2 minutes,stirring often.
  • Pour broth mixture over vegetables and toss to coat. Turn into shallow 2 qt (2 L) baking dish,brushed with remaining butter.
  • Bake,uncovered,for 25 minutes at 400°F (200°C).
  • Sprinkle with Parmesan mixture. Reduce temperature to 350°F (160°C) and bake for 40 minutes more or until golden brown. Let stand for 10 minutes.

4 small boneless skinless chicken breasts (1 lb.)
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Preheat oven to 400ºF. Toss vegetables with dressing; spoon into half of 13x9-inch baking dish.
  • Bake 30 min., stirring after 15 min. Coat chicken with coating mix as directed on package. Arrange chicken in single layer next to vegetables. Bake 20 min.
  • Sprinkle with cheese; bake an additional 5 min. or until chicken is cooked through (170ºF) and vegetables are tender.

2 small zucchini
2 small yellow squash
3 tomatoes
1 Tablespoon olive oil
¾ cup parmesan cheese
2 teaspoons garlic salt
½ teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees.
  • Cut zucchinis, yellow squash, and tomatoes into thin slices.
  • Lay them in a 9x13 pan alternating the order of zucchinis, yellow squash and tomatoes, in rows.
  • Drizzle olive oil over the vegetables, and sprinkle Parmesan cheese, garlic salt, and black pepper.
  • Place in oven and cook for 30 minutes or until the zucchini becomes flimsy and soft.

Wash, dry, and cut each tomato in half and place the tomato halves, cut sides up, in the empty spaces between the zucchini and squash rounds.
  • Lightly sprinkle the vegetables with garlic salt and freshly ground black pepper. Use a small spoon to spread a thin layer of Parmesan cheese on each veggie.
