Nut-Free Snowball Cookies made with Cake Mix image

This Snowball Cookie Recipe is nut-free, soft, chewy, tender cake mix cookies coated in powdered sugar to look like "snowballs." Perfect for the holidays!

1 box white cake mix
1/3 cup oil
3 egg whites
4 oz cream cheese (softened)
1/2 cup powdered sugar (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients, except powdered sugar, on medium until well combined. Chill for thirty minutes. If dough feels sticky, add 1/4 cup flour or powdered sugar.
  • Take about 2 tablespoons of dough and roll into a ball. Roll dough in powdered sugar (optional) and place on a parchment lined cookie sheet. Bake in preheated oven for 9-11 minutes, or until the tops start to crack. (Don't let them get brown - it will ruin the "snowball" effect.
  • Let cool on the cookie for a few minutes before transferring to a cooling rack. Dust with sifted powdered sugar.

1/2 cup light olive oil
1 1/4 cups quick-cooking rolled oats
1 (18 1/4 ounce) package white cake mix, Pillsbury brand recommended
2 large eggs
2 teaspoons vanilla, recipe calls for the clear kind
1/2 cup walnuts, finely chopped
powdered sugar

Steps:

  • HEAT oven to 350°F.
  • COMBINE olive oil and oats. Let stand 5 minutes. Stir in cake mix, eggs and vanilla until well blended. Fold in nuts. Form into 1-inch balls and place about 2 inches apart on ungreased cookie sheet.
  • BAKE 8 minutes or until set. Cool on cookie sheet 1 minute. Remove cookies to cooling rack. Roll in powdered sugar while still slightly warm.

1 cup pecans or walnuts
1 cup unbleached all-purpose flour
1/4 teaspoon salt
4 ounces (1 stick) unsalted butter
1 1/4 ounces granulated sugar
3/4 teaspoon vanilla extract
3/4 cup confectioners' sugar

Steps:

  • Preheat the oven 325 degrees F. Line two large baking sheets with parchment paper.
  • Place the nuts in the bowl of a food processor, and process until finely ground or the texture of coarse cornmeal, 10 to 15 seconds. Transfer to a large bowl, and stir in the flour and salt. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and granulated sugar until light and fluffy, 3 to 6 minutes. Beat in the vanilla, then reduce the speed to low and slowly mix in the flour mixture until combined, about 30 seconds. Roll the dough into balls (about 24 dough balls) and place about 1 1/2-inches apart on the prepared baking sheets. Bake until lightly golden and the bottoms begin to brown, 18 minutes.
  • Cool the cookies on the baking sheet for 20 minutes. Roll the cookies in the confectioners' sugar just before serving.
