PORK STEW
Full of meat, veggies, and flavor, Pork Stew is a hearty, delicious meal that is sure to chase away the winter chill. It's simple to make and feeds a crowd!

Steps:
- In a mixing bowl, toss the pork with the flour, 2 teaspoons salt, and 1 teaspoon black pepper to coat evenly, shaking off excess.
- Heat 2 tablespoons of oil, over medium-high heat, in a large pot and brown pork in batches without crowding it, about 7-9 minutes. Add more oil as needed. Transfer browned meat to a bowl with a slotted spoon and set aside. Remove and discard pan drippings.
- Cook the bacon in the same pot, stirring frequently until crispy. Transfer to bowl with pork.
- Reduce heat to medium and saute onion, garlic, carrots, and celery, in bacon drippings, stirring occasionally, until soft.
- Add wine to the pot, continue to simmer, scraping up brown bits on the bottom of the pot until liquid is almost evaporated.
- Add beef broth, tomato paste, browned pork, bacon, thyme, rosemary, bay leaves, 1 teaspoon salt, and 1/2 teaspoon black pepper. Bring to a boil, then reduce heat to low and simmer, covered for 45 minutes.
- Stir in prunes, potatoes and parsnips then cover and cook for 45 minutes, stirring occasionally to prevent sticking. If you'd like the stew thinner, add more beef broth or water to achieve desired consistency. Adjust salt and pepper as needed. Ladle into individual bowls, garnish with parsley and serve.

Steps:
- In a large Dutch oven pan, put the butter and the cubed pork. Cook until all the pork is browned, about 30 minutes.
- Add the onion,and the chicken bouillon and a little chicken stock. Let this simmer until tender (this is how you get good gravy on the stew).
- When pork is done, add the vegetables.
- Stir all together and add the chicken broth and enough water to cover the vegetables.
- Simmer until the vegetables are done.
- To thicken the gravy, I use the peppered gravy mix in a 1/2 cup water.

Mario Batali's that I've adapted to use a few more common ingredients...I wasn't much of a stew person until I tried this and was in love. This is so simple, caramelized, and rich, yet lighter due to the chicken stock, that it is now my goto stew recipe.

Steps:
- In a Dutch Oven, heat the oil over medium heat.
- Season the pork with salt and pepper and add to the oil and sear on all sides, working in batches if necessary.
- Add the sliced onions and cook until they are browned and soft, about 10 minutes.
- Add the wine and allow it to evaporate completely.
- Add the paprika, bay leaves, rosemary.
- Stir in tomato paste.
- Cook for 3-4 minutes over high heat, then stir in the chicken stock.
- Reduce heat to simmer, cover, and cook about 1.5-2 hours, until the sauce has thickened.
- Stir in the lemon juice and season well with salt and pepper.
- Serve immediately with buttered hot pasta.

- 1. Add all ingredients in a dutch oven ; EXCEPT CABBAGE.
- 2. Bring to a boil on stove.
- 3. Cover and reduce heat to med-high ; until vegetables are tender.
- 4. In the last 20 minutes of cooking add the cabbage wedges to the stew ; cook until cabbage is tender.
MOM'S PORK CHOP CASSEROLE
A childhood favorite of mine. Brings back memories of cold winter evenings and warm family dinners. Mom always had a hot dinner on the table when Dad got home from work and every one would enjoy the bounty. Use bone-in chops because they have the most flavor. Serve with a crusty rye bread so as not to waste a drop of the yummy juices! Hope you enjoy this scrumptious and easy to prepare comfort food!

MOM'S PORK CASSEROLE
My mom has been making this since I was a kid. She says she made it up with ingredients on hand. To me it is one of my favorite comfort foods! I adjusted the number of servings based on other comments and the fact that we usually at best serve 4 with it! I will also add as one reviewer noted, the amounts for celery, peas, onion are what my mom used. I often am pretty liberal with all of those.

- Peel the potato and slice into 1/4-inch thick slices. Dry both sides of the potato slices thoroughly with paper towel.
- Mix minced pork, light soy sauce, sesame oil and white pepper in a small bowl. Set aside to marinate.
- Heat 1/2- to 3/4-inch deep of oil in a large frying pan over medium heat until hot but not smoking. Add in the potato slices in a single layer and fry, flipping the potato slices, until both the edges are slightly golden. Drain the potatoes. Repeat until all the potato slices have been fried.
- Drain all the oil in the frying pan until about 1 to 2 tablespoons of oil is left. Heat over medium heat and add in the garlic. Fry the garlic until slightly golden and add in the marinated minced pork, flattening it into a single layer. Cook, untouched, for a few minutes until slightly browned then break up the pork and cook until the pork is no longer pink.
