A wonderfully sweet pecan pie that is perfect. I like a small scoop of vanilla ice cream with mine! Enjoy.

- Filling------------.
- Beat eggs lightly with an electric mixer or fork until combined.
- Stir in corn syrup, sugar, butter and vanilla extract.
- Stir well.
- Stir in pecan halves and pour filling into crust.
- Bake in a 350 degree preheated oven, for 45 minutes or until knife comes out clean.
- Tip: Cover edge of pie crust with aluminun foil for first 25 minutes of bake time, then remove for remaining 20 minutes, to prevent the crust from burning.

MOM'S PECAN PIE
This has been a family favorite since I can remember. Pecan Pie to die for. I have tried other Pecan Pies but nothing matches this. It is very rich and melts in your mouth. My mother has had this recipe for many years.

- 1. Prepare pie shell whether it is homemade or bought. Must not be baked, set aside. Pre heat oven to 400* for pie. Yields one pie...
- 2. In sauce pan on medium heat, melt butter, add sugar to dissolve, whip eggs with whisk add slowly to butter and egg mixture stirring constantly. Stir in dark corn syrup, stirring constantly till it comes to a full boil approximately 5 minutes. Pour into unbaked pie shell.
- 3. Place pie into preheated 400* oven for 15 minutes, then pull out of over and set oven at 300*. Place Pecans on top of pie it will be foamy on top. Place pie back in to 300* oven for 45 minutes. Till done and take from oven to cool on pie rack or crossed knives, ENJOY..............Very Good....
MOM'S SOUTHERN PECAN PIE
My Mother first made this pie in 1949. The recipe was on a can of pecans. (I wasn't born then, but evidently pecans used to be sold in cans.) She kept the can in the kitchen cabinet. For some reason she never wrote it down. It's been a family favorite for 4 generations.

- Preheat oven to 325 degrees Fahrenheit. Lightly spray a 9-inch pie pan with non-stick spray, then set aside. Note: If using a graham cracker-ready pie crust, brush bottom and sides of pie crust with egg yolk. Bake 5 minutes at 350 degrees.
- Place pecans and graham crackers in the body of a blender or food processor, and pulse until nuts have completely been pulsed to fine crumbs.
- In a large bowl combine the crumbs, graham cracker crumbs, sugar, cinnamon, and salt. Add in the melted butter, and using a rubber spatula, stir well to combine.
- Pour crust into the prepared pan. Firmly pat the mixture into the prepared pan, working from the center and up the sides.
- Bake for 10 mins. Place crust on a cooling rack while you prepare the filling. Increase oven temperature to 400 degrees Fahrenheit.
- Blend ingredients in blender or food processor in the order given (cream or half and half, pecans, corn syrup, salt, sugar, vanilla, butter, and bourbon). Blend for 10 seconds. Pour into pie shell.
- Bake at 400 degrees for 20 minutes. Decorate pie shell with remaining pecans and bake for 5 more minutes until set. Note: If you prefer your pecans to be more toasted on top, add the remaining 1/2 cup of pecans halfway through baking or lightly toast the pecans before adding.
- Allow pie to cool at room temperature. The pie can also be wrapped and refrigerated if you prefer a firmer pie.
PECAN PIE WITH MRS. KOSTYRA
As common as it is today, pecan pie is a relatively recent addition to the American table. No one knows exactly when it was invented, but since the 1940s -- when it was first popularized in "Joy of Cooking" and "The Fannie Farmer Cookbook" -- myriad pecan-pie recipes have emerged, including this sweet, rich version, brought to us by Martha's mother, Mrs. Kostyra.

- Preheat oven to 350 degrees. If using homemade pate brisee, lightly dust a clean work surface with flour, and roll dough into a 12-inch circle. Fit circle into a 9-inch pie plate being careful not to stretch dough too thin; create edges of choice. Transfer to freezer until firm, about 15 minutes.
- Coarsely chop 1 1/4 cups pecans; set aside. In a medium bowl, combine eggs and sugar. Whisk to combine. Add corn syrups and vanilla. Whisk until well combined. Add chopped pecans, and stir. Pour into prepared crust.
- Arrange remaining 1 1/4 cups pecan halves decoratively on top of pie. Bake until crust is golden, filling is firm, and a cake tester inserted in center of pie comes out clean; 50 to 55 minutes. Cool completely before slicing. Serve with whipped cream.
MY MOM'S DELICIOUS PECAN PIE
My mom had made this delicious pecan pie since I was a little girl. This recipe is posted in "The Cotton Country" cookbook by Mrs. Russel Bulloch. As odd that it is, I ended up working for her husband, the great Dr. Russell Bulloch, at Pediatric Associates. Hope you enjoy this great recipe as I have.

BLACK FOLKS SOUTHERN PECAN PIE RECIPE
Black folks' Southern pecan pie recipe is an old-fashioned African American soul food classic that yields an abundance of sweet flavor with each bite. Brown sugar is combined with a syrupy pecan filling, caramelized, and then baked.

- Grease a deep-dish pie pan or pie dish and add the pie crust to it.
- Use a fork to poke holes in the bottom of the dough so the pie crust can vent when cooked with the filling in it.
- Optional - Here is where you can crimp or flute the pie crust if using dough crust or homemade crust.
- Bake the pie crust in the conventional oven at 350 degrees F for 7-10 minutes or the Instant Pot Omni Plus oven for 5-6 minutes.
- Set the pie crust aside.
- Open the Instant Pot lid and turn on the sauté setting for 5 minutes, although you may need all of this time.
- Pour the sugar and corn syrup into the stainless-steel inner pot and let the mixture come to a boil, simmering for 1 minute. (If you're not using an Instant Pot, you can do this step on the stovetop.)
- Turn off the Instant Pot and set the mixture aside to cool.
- Stir the butter into the warm mixture so that it melts.
- Next, add the vanilla extract and salt, and stir to combine.
- Then when the mixture is cool enough to add the eggs without the eggs scrambling, whisk the eggs in a small bowl.
- Slowly pour the eggs into the syrup mixture, constantly whisking until blended.
- Now add the chopped pecans, slowly stirring them into the mixture.
- Pour the finished pie filling into the pie crust.
- Cover the edges of the crust with foil to prevent them from overcooking or burning.
- Bake at 350° F in the conventional oven for 40-45 minutes, in the Instant Pot Omni Plus oven for 30-35 minutes, or until the pie filling sets and is firm and not liquidy when you give the pie a jiggle.
- Allow the pecan pie to cool off and set for about 4 hours at room temperature before slicing, then serve and enjoy this Southern homemade pecan pie!
