- Cook rice according to package instructions.
- Meanwhile, heat oil in a large skillet. Season chicken cubes with salt and pepper. Add chicken to the skillet and cook until well browned. Remove from skillet and set aside.
- Add onion and garlic to skillet, and saute for approximately 5 minutes or until soft. Add in red and green peppers, continue to saute on medium-low heat until peppers are soft, about 7 minutes.
- Once softened, add all remaining ingredients (except rice and cheese), as well as the cooked chicken. Stir until all ingredients are mixed well and heated through; adjust salt and pepper.
- Serve over rice with shredded cheese and sour cream. Even heartier with a side of tortilla chips or warmed tortillas.

- Bring a large pot of water to a boil (about 4 quarts). Add rice and boil for 30-40 minutes, or until rice is tender. Drain.
- While rice is cooking, heat a large non-stick skillet over medium heat. Lightly season both sides of each chicken breast with cumin, granulated garlic, onion powder, salt, and pepper. Coat inside of pan with cooking spray and cook chicken about 3 minutes on each side, or until no longer pink in the center. Remove to a plate and cover with foil.
- In the same skillet (on medium heat) add 2 tablespoons of extra-virgin olive oil. Add onion and jalapeño; cook for 1-2 minutes, or until onions are soft. Add garlic and cook for 30 seconds. Add beans and cook for 1 minute, or until heated through. Mix the onion and bean mixture with the cooked/drained rice and cilantro. Divide mixture evenly among 2 bowls.
- Cut chicken into 1-inch cubes. In each bowl add half of the chicken, half of the avocado, half of the tomatoes, and 1 lime wedge. Squeeze lime wedge over each rice bowl.

BURRITO BOWL

- In a medium bowl, toss the rice with the cilantro and the orange zest. Divide the rice evenly among 4 individual serving bowls. Top with the black beans and half of the pico de gallo. Add warm carnitas and top with the rest of the pico de gallo. Sprinkle on the cheese, and spoon a dollop of the sour cream on top. Finish with the chopped green onions.
- In a small bowl, mix 1 teaspoon salt with the pinch of sugar. In a medium bowl, toss the tomatoes gently with the salt mixture. Add onion and jalapeno and combine. Place the avocado on top of the tomato mixture and squeeze with lime juice to coat the avocado. Sprinkle on the cilantro, and stir to combine. Serve.
- Rinse and dry the pork shoulder. Salt and pepper liberally. Mix the oregano and the cumin with olive oil and rub all over pork. Place the pork in a slow cooker and top with the onion, garlic, and jalapeno. Squeeze over the juice of the orange and add the two halves. Cover and cook on low for 8 to 10 hours or on high 4 hours. Once the meat is tender, remove from slow cooker and let cool slightly before pulling apart with a fork. In a large saute pan, heat the vegetable oil over high heat. Press the carnitas into the oil and fry until crusty on one side. Serve.
MEXICAN TOMATO RICE

- Heat the oil in a saucepan and sizzle the onion for 5 mins until just starting to soften. Add the garlic and cook for a minute more, then stir in the chipotle paste (if using) and the tomato purée and cook for a minute.
- Add the tomatoes and simmer for a few minutes, then scatter the rice into the pan and stir, so it's coated in the tomato mix. Pour over the hot stock, season, give everything another stir and bring to the boil, then cover the pan with a lid and turn the heat down to the lowest possible setting.
- Gently simmer for 15-20 mins until all the stock has been absorbed and the rice is cooked through. Leave the rice to sit for a few mins off the heat, then stir through the coriander and serve.

- To season chicken and shrimp: In large bowl, toss chicken and shrimp with fajita seasoning. Add lime juice and lime zest. Toss and set aside.
- To stir-fry vegetables: In large skillet, bring 2 tablespoons oil to a sizzle. Add garlic, pepper and onion. Stir-fry for 4 to 5 minutes or until vegetables are soft and slightly charred. Remove to plate.
- To cook chicken and shrimp: Wipe out pan. Add remaining oil. Heat over medium-high heat until oil sizzles. Add chicken and shrimp. Stir-fry for 3 to 4 minutes or until shrimp is pink and chicken is crispy brown. (Note: If you're worried about overcooking shrimp, cook separately.) Season with salt and pepper. Return vegetables to pan. Stir. Reduce heat to keep warm.
- To prepare beans: Rinse and drain black beans. Heat in microwave or on stove top until warm.
- To assemble: Place 1 cup rice in bowl. Squeeze a little lime juice on top. Spoon on 1/2 cup beans. Add one-quarter of chicken/shrimp mixture and shredded cheese. Add topping as desired.

MEXICAN BURRITO BOWL
We like to get burrito bowls from Chipotle, but aren't thrilled with paying for it several times a week. This isn't anything I'd claim as a "clone", but is "inspired" by Chipotle/QDoba's burrito bowls. It's tasty, easy and filling. As a bonus, it's pretty good without any meat, making it a really viable option to serve a mixed group of vegetarian/carnivores for a party.

- In a saucepan, combine the water, rice and juice from the 2 limes.
- Bring rice mixture to a boil.
- Reduce heat and simmer covered until all of the liquid is absorbed.
- While the rice is cooking, chop the onion and the garlic.
- In another saucepan, melt the butter.
- Saute the onions and garlic until the onions are translucent.
- Add the canned tomatoes, white wine and beans.
- Simmer until most of the moisture boils off.
- If including meat, dice up some grilled chicken or pork or steak.
- To serve start with rice in bowl.
- Top with bean/tomato mixture.
- Top with meat if using and cheese, chopped cilantro, salsa, sour cream, etc.
- Eat with chips.
