Pizza night has never been the same at our house since we started making our low-carb pizza with a meat crust. It's protein-packed, filling and topped with fresh Mediterranean ingredients. - Shauna Havey, Roy, Utah

1-1/2 pounds ground turkey
1 large egg, lightly beaten
1 tablespoon Greek seasoning
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup drained water-packed artichoke hearts, chopped
1/3 cup cherry tomatoes, halved
1/4 cup Greek olives
2 tablespoons crumbled feta cheese
2 tablespoons minced fresh basil

Steps:

  • Preheat oven to 425°. In a large bowl, combine turkey, egg and Greek seasoning; mix lightly but thoroughly. Press onto the bottom and 1-1/2-in. up sides of a greased 10-in. cast-iron or other ovenproof skillet. Cook, without stirring, over medium heat until bottom is no longer pink. Carefully drain drippings from pan, leaving meat in pan., Bake until edges are no longer pink, 8-10 minutes. Spread with pizza sauce; top with mozzarella, artichokes, tomatoes, olives and feta. Bake until cheese is melted, 3-5 minutes longer. Cool 5 minutes before topping with basil.

2 lbs extra lean ground beef
3 -4 cups lowfat mozzarella cheese
1 cup pizza sauce
Canadian bacon
pepperoni slice
mushroom, sliced
onion, diced

Steps:

  • Preheat oven to 350.
  • Brown ground beef. Put beef in a large bowl & mix well with 2 cups of low-fat mozzarella cheese. Spread mixture out like a pizza crust on a cookie sheet or a baking stone.
  • Put 1 cup pizza sauce on the mixture. Ragu is ok.(pizza sauce, no sugar in it.) Top with 1-2 cups of low-fat shredded mozzarella. Top with canadian bacon and or low fat pepperoni slices. I usually just use the canadian bacon. Optional toppings: onions, peppers, anything legal that you like on pizza. Cook 15 minute or so (when top cheese starts to brown it is done). Put foil on rack below to catch any drippings.

Tastes like a pizza, cuts like a pizza, yet there is no dough....though do have a fork and knife on hand for eating purposes because it can get a little messy if eaten with hands only. I am a South Beach dieter with a love for Italian foods and this is what curbs my craving for pizza. I love mine with the turkey pepperoni slices, onion, green peppers and mushroom. Serve with a tossed salad or marinated veggies.

1 lb lean ground beef
2 cups shredded part-skim mozzarella cheese, divided
1/2 cup low-sugar pizza sauce (I use Ragu)
diced Canadian bacon
low-fat pepperoni
turkey pepperoni (optional)
onion
green pepper
mushroom
tomatoes (optional)
your favorite pizza seasoning, to taste

Steps:

  • Preheat oven to 350 degrees.
  • Meanwhile, brown the ground beef; drain.
  • Place meat in a mixing bowl and mix with 1 cup of mozzarella.
  • Spread the mixture into a circle on a round pizza pan or baking stone (I prefer the stone); and top with 1/2 cup pizza sauce.
  • Top with the rest of the mozzarella, optional toppings and seasonings.
  • Bake for about 25 minutes or until cheese is melted and browned.
