1 cup Safeway SELECT(R) Orange Marmalade
½ cup Kentucky Bourbon
½ cup orange juice concentrate
¼ cup mayonnaise

Steps:

  • 1.Bake ham per package directions.
  • 2.For the glaze: combine rest of ingredients and mix well.
  • 3.When ham has 20 minutes left to cook, remove from oven and brush on glaze; allow to cook for 10 minutes, then brush on a second layer of glaze and allow to cook for another 10 minutes. Remove from oven and let rest 10 minutes before serving.

One 8- to 10-pound bone-in smoked fully cooked ham (shank portion)
1/2 cup orange marmalade
1/2 cup whole-grain mustard
1/2 cup loosely packed light brown sugar
2 tablespoons sherry vinegar
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Freshly ground black pepper
Fresh rosemary sprigs, for serving
Oranges, cut into quarters, for serving

Steps:

  • Let the ham sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 325 degrees F. Trim off any skin from the ham. Score the ham in a diagonal crosshatch pattern (about 1-inch apart) without cutting through into the meat. Place the ham, flat-side down, fattier side up, on a rack in a roasting pan. Pour a 1/2-inch of water in the bottom of the pan. Cover with aluminum foil and roast, about 1 hour. Remove the foil, add more water if the water has dried up and recover loosely with the foil. Continue to bake until the ham reaches 130 degrees F, adding more water if needed to keep the roasting pan from burning, 1 hour to 1 1/2 hours more (about 15 minutes per pound).
  • Increase the oven temperature to 400 degrees F. Whisk the marmalade, mustard, brown sugar, vinegar, coriander, ginger, allspice and a generous amount of black pepper in a liquid measuring cup. Spoon off about 1/4 cup of the pan juices from the ham and whisk into the glaze mixture. Brush about half of the glaze all over the ham. Continue to bake, brushing the ham with the glaze twice more until the surface of the ham is caramelized and the internal temperature in the center of the ham reads 140 degrees F on an instant read thermometer, adding more water if the bottom of the pan dries out and begins to burn, 40 to 45 minutes. Transfer the ham to a cutting board or platter and let rest for 20 minutes before slicing. Serve with the rosemary, oranges and any additional glaze on the side.

A wonderful detour from the usual Christmas glazed ham recipes, courtesy of Jamie Oliver...but certainly not limited to just the Christmas period!! Don't be put off from the seemingly never ending list of ingredients...it's actually very simple, and really delicious. I have actually made just the jerk marinade and used it on a smoked ham,skipping the poaching step and the results were still delicious. Take care prepping the chillies-best to use gloves-don't be afraid to cut back on chillies if you don't like it too hot!! This is great served salad, jacket potato etc....

1 (5 kg) leg ham
1 tablespoon whole black peppercorn
1 red onion, peeled and cut into wedges
6 scotch bonnet chilies, halved
2 teaspoons whole cloves
1 stick celery, roughly chopped
1 leek, roughly chopped
1/2 bunch thyme
1 cinnamon stick
6 fresh bay leaves
2 tablespoons cinnamon
2 tablespoons allspice
1 tablespoon clove
2 tablespoons ground nutmeg
1 tablespoon sea salt
1 tablespoon fresh ground black pepper
8 garlic cloves, peeled and chopped
2 red onions, peeled and quartered
8 scotch bonnet chilies, stalks removed
250 ml dark rum
250 ml malt vinegar
1 small bunch thyme, leaves picked
3/4 jar fine cut marmalade
125 ml golden rum

Steps:

  • Preheat the oven to 180/350 degrees/gas 4. Put the ham in a large roasting pan with all of the poaching ingredients. Add water until it comes halfway up the side of the pan. Cover the ham with tinfoil ( making a tent over the ham to allow the steam to circulate).
  • Bake for two hours or until pink and cooked through, remove from the oven and let cool for 30 minutes, remaining covered.
  • While your ham poaches add the bay leaves and the dry spices to a food processor with the garlic cloves. Whizz it to form a paste then add the onions and chillies and whizz again.Pour in the rum and malt vinegar and keep whizzing while adding the thyme. Once it has a nice loose consistency the marinade is ready.
  • When the ham has had it's 30 mins out of the oven, transfer it to a roasting tray and let it cool down a bit. While it's still warm, put your hand underneath the skin and gently pull it away from the meat, leaving a bit of the fat underneath attached. Then with a sharp knife, score the ham by lightly making diagonal cuts across the leg.
  • Spoon the marinade over the pork (using the back of a spoon,it's hot stuff!) and into the scored fat. If you want to use your hands to rub it in PLEASE wear gloves!
  • You can cover the ham with cling film and chill it overnight if you wish, or cook right away.
  • Pour a small glass of water into the bottom of the roasting tray and put the ham into the preheated oven for 2 hours (350/180 degrees). Try to baste it every 30 mins or so to get it good and dark.
  • After the two hours are up, scrape a bit of the marinade off with a spatula ans spoon about 3/4 jar of marmalade over it and a good swig of rum on top. Smear this mixture all over the ham and let it drip down the sides too. Spoon the juices off the bottom of the pan back over the ham and put it back in the oven for another 30 minutes, basting every 5-7 minutes to build up the crust.
  • When it's lovely and dark, it's done!

  • Preheat oven to 325ºF (160ºC).

  • Meanwhile, combine remaining ingredients in a small saucepan and bring to a boil.
  • Baste ham with â..." of marmalade mixture and continue cooking for 30 minutes or until internal temperature of meat reaches 140ºF (60ºC), basting every 15 minutes with remaining glaze.
  • Tip: Try replacing the mango chutney with more marmalade.

1 medium butt-portion ham
whole cloves
1 cup water
1 cup cream sherry
1/2 teaspoon ground ginger (or 1 t. grated fresh ginger)
1/2 cup orange marmalade
1/2 cup Bourbon
2 teaspoons mustard
1/4 cup brown sugar, firmly packed

Steps:

  • Preheat oven to 425°F.
  • Line a large roasting pan with foil.
  • If necessary, trim the rind and fat from the ham, leaving only 1/4" layer of fat.
  • Place the ham in the roasting pan.
  • Score the ham in a diamond pattern, with a sharp knife.
  • Stick one whole clove into the center of each diamond.
  • Combine water, sherry and ginger in a small bowl, then pour over ham.
  • Bake 5 minutes per pound.
  • Combine the marmalade, bourbon and mustard in a small saucepan and cook over medium heat until warm, about 5 minutes.
  • Stir occasionally.
  • Increase oven temp to 450°F.
  • Brush the glaze over the cooked ham, then sprinkle with the brown sugar.
  • Bake until ham reaches a rich brown color, about 20 minutes.
  • Spoon off the fat from the pan juices.
  • Transfer the pan juices to a saucepan, and boil until thick, about 10 minutes or so.
  • Serve the ham with the pan juices.

30 whole cloves
1 (12 ounce) jar orange marmalade
1/4 cup Dijon mustard

Steps:

  • Preheat oven to 350°F Line a large baking pan with heavy-duty aluminum foil. Place ham cut side down in center of pan.
  • Trim any rind or excess fat from ham with a sharp knife. Score outside of ham with a sharp knife in a decorative diamond pattern (as shown) and insert a whole clove into each diamond point. Cover pan and ham with more heavy-duty aluminum foil. Bake ham for 1 1/2 hours.
  • Make glaze: Melt orange marmalade in small saucepan over medium heat, stirring occasionally. Whisk in Dijon mustard and 2 tablespoons water. Bring mixture to a boil and cook for about 10 minutes, until glaze thickens. Set glaze aside.
  • Remove ham from oven and raise oven temperature to 425°F Remove aluminum foil covering ham and brush warm glaze all over ham.

1 raw gammon ham, smoked or unsmoked, approx 5-6kg/11-13lb 3oz with bone in
454g jar good quality orange marmalade
300g light muscovado sugar
jar whole cloves

Steps:

  • Heat oven to 180C/160C fan/gas 6. Put the ham into a large roasting tin, then tip in 500ml water. Cover the whole thing loosely with greaseproof paper, then cover with a large sheet of foil, scrunching and sealing it around the edge of the tin. Make sure you leave some room around the ham. Put it in the oven, then turn the heat down to 160C/140C fan/gas 3 and leave to cook for 5 hrs. Meanwhile, mix the marmalade with the sugar and 50ml water in a small pan, bring to the boil, then set aside and leave to cool.
  • Take the ham from the oven. Be careful when you lift the foil as there will be a good amount of steam, which can burn. Once the ham has cooled just a little, remove the rind by gently prising the skin from the fat and lifting it away. Try to keep as much fat on the leg as you can as this will keep the ham moist as it roasts. Drain off most of the liquid (this is very good ham stock - keep it and use it for soup), leaving a little in the tin. Turn the oven up to 200C/180C fan/gas 6.
  • Score lines into the fat with a knife to make large diamond shapes, with the lines about 4cm apart. Brush a third of the marmalade glaze over the joint, really pushing it into the creases and cuts. Now stud the ham with the cloves by poking a clove into the corner of each diamond.
  • Put a trivet into the roasting tin (if you don't have one, a few halved carrots will do), then sit the ham on top. Roast the ham, uncovered, for 45-50 mins, brushing with the remaining glaze a few times during cooking, until caramelised and delicious. Carve hot or cold.
