LEFTOVER STUFFING BREAKFAST STRATA
Not sure what to do with your leftover Thanksgiving or Christmas stuffing? Here's an easy breakfast solution you can put together right after the meal, and pop it in the oven the next morning for a fabulous meal!

Steps:
- First, spread the leftover stuffing evenly into a casserole dish (about 9 inch square).
- In a large bowl, whisk together the eggs, milk, half and half, Parmesan cheese, and a pinch of salt and pepper.
- Pour the egg mixture over the top of the stuffing, covering completely. Cover tightly with plastic wrap and place the dish in the refrigerator for at least one hour. Overnight is even better!
- When you are ready to bake, preheat the oven to 325 degrees F. If desired, sprinkle cubed brie or shredded cheese on top of the egg strata mixture. Place the strata in the oven and bake for about 45 minutes, until egg custard is set.
- Remove from oven and allow to set for 5 minutes before serving. Enjoy!
STUFFING & SAUSAGE STRATA
Steps:
- In a large skillet, cook sausage and mushrooms over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain., In a greased 13x9-in. baking dish, layer half of each of the following; stuffing, cheese and sausage mixture. Repeat layers. In a large bowl, whisk eggs, milk and salt until blended. Pour over layers. Refrigerate, covered, overnight., Preheat oven to 325°. Remove strata from refrigerator while oven heats. Bake, uncovered, 1-1-1/4 hours or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

GRANDMA'S ANYTHING GOES STRATA
Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

- Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
- Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
- Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.

Steps:
- Preheat oven to 350 degrees.
- Butter 13x9" glass baking dish.
- Melt butter in medium skillet over medium-high heat.
- Add mushrooms and saute until tender and juices evaporate, about 6 minutes.
- Remove from heat and set aside.
- Combine egg and milk in large bowl and whisk to blend well.
- Stir in mushrooms and leftover stuffing until well combined.
- Transfer to prepared baking dish and sprinkle with cheese.
- Bake until heated through and browned, about 50 minutes.
