I'm not sure where this recipe came from, but it is so good! I have experimented with various ways of cutting the chopping the cabbage and tried different types of sausage, and they have all been enjoyed by me and my family. The most important thing to remember is to drain the fat and excess liquid as directed, or the casserole will be thin and watered down.

1 1/4 lbs Italian sausage
5 cups cabbage, coarsely chopped or 4 cups cabbage, finely chopped
3/4 cup sharp cheddar cheese, grated
3/4 cup sour cream (not low-fat)
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove casing from sausage and brown in skillet. Drain fat.
  • Stir in cabbage, cover, and cook over medium heat for 10 minutes or until cabbage is tender-crisp. Drain any extra liquid.
  • Stir in remaining ingredients and put in a lightly greased 9x9 baking dish.
  • Bake, uncovered, at 375 F for 20 minutes.

1 tablespoon butter
2 large onions (coarsely chopped)
1 medium head cabbage (coarsely chopped or shredded)
2 apples (red-skinned, cored and sliced 1/2-inch thick, peels can be left on, if desired)
2 large potatoes (russet, peels can be left on if desired, parboiled for 5 minutes, save the cooking water, and coarsely chopped)
1 tablespoon seasoning (Vegeta or Maggi )
Pinch black pepper
1 tablespoon caraway seeds (or to taste)
1 pound smoked Polish sausage (skin removed, if desired, cut into 6 pieces and scored diagonally 3 times)

Steps:

  • In a large, Dutch oven or skillet with a lid, sauté onion in butter over medium heat until translucent. Then, without stirring, add cabbage and sprinkle evenly with Vegeta or Maggi seasoning. Add apples, caraway, and pepper without stirring. Top with sausage and 1 cup of the cooking water from potatoes. Cover. When the water begins to boil, reduce heat and simmer 10 minutes.
  • Uncover and mix all ingredients together. Replace cover and simmer 10 minutes more. Remove the cover and test for doneness of the cabbage. If there are too many juices, cook over low heat until reduced. But the pan juices are delicious when sopped up with rye bread.

500 grams Green cabbage
500 grams Red cabbage
500 grams Savoy cabbage
salt
500 grams cooked potatoes
2 onions
500 grams ground pork
3 medium eggs
freshly ground peppers
250 grams Crème fraiche
2 garlic cloves
8 Tbsps breadcrumbs

Steps:

  • Soak roll in water. Rinse all 3 types of cabbage and cut into large pieces. Cook separately in salted water for about 10 minutes. Drain. Slice cooked potatoes. Peel onions and dice. Squeeze out bun and mix with ground pork, onions and eggs. Season with salt and pepper. Mix crème fraîche with salt and pepper. Peel garlic and squeeze through a press.
  • Grease a baking dish. About 2/3 of cabbage in a single layer, sprinkle with breadcrumbs and sprinkle with some crème fraîche. Top with potato slices and 2/3 of meat mixture and press down well with your hands. Finish with remaining cabbage and remaining meat. Sprinkle crème fraîche over top and sprinkle with breadcrumbs. Bake in preheated oven at 200°C (approximately 400°F) for about 45 minutes. Slice and serve warm.

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup whole milk
1/4 cup chopped onion

3 cups thinly sliced peeled potatoes (about 1-1/4 pounds)
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. 3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.

Layered Casserole with Beef, Cabage, Potato Recipe - (4/5) image

12 fresh sage leaves
8 garlic cloves, peeled
1/4 cup fresh rosemary leaves, stripped from the branch
2/3 cup extra-virgin olive oil
1 1/2 tablespoons kosher salt
2 pounds red potatoes, sliced 1/2 inch thick
4 pound boneless beef shoulder roast
8 tablespoons butter, softened
1 head Savoy cabbage, about 2 1/2 pounds, cored and sliced
2 cups white wine
1 pound Fontina cheese, shredded

Steps:

  • Arrange a rack in the middle of the oven, and heat to 425 degrees F. Using a food processor, mince the sage, rosemary, garlic, 1/4 cup of the olive oil, and 1/2 teaspoon of the salt into a fine-textured pestata. Put the potato slices in a large bowl; sprinkle on top 1 teaspoon salt, 2 tablespoons olive oil, and 1 tablespoon of the pestata. Toss well to coat the slices with the seasonings. With a sharp knife, slice the beef across the grain into 3/4-inch- thick slices-if using a top-blade roast, slice it crosswise. As you did with the potatoes, put the meat slices in a bowl and toss them with seasonings until well coated, using 1 teaspoon salt, 2 tablespoons olive oil, and 2 tablespoons of the pestata. Brush the roasting pan with the remaining olive oil and 2 tablespoons of the butter. Arrange half of the potato slices in a single layer on the pan bottom, spread half the cabbage shreds evenly over the potatoes, and season with 1 teaspoon salt. Distribute all the beef slices, in a single layer, over the cabbage. (The pan should be about half full: press down on the beef if it looks like you need more room for the rest of the vegetables.) Dot the top of the beef with small mounds of butter, using another tablespoons in all. Lay the remaining potato slices on top of the beef slices, spread the rest of the cabbage evenly over the slices, and season with the remaining teaspoon salt. Stir all of the remaining pestata into the white wine, and pour the wine all over the cabbage shreds. Finally, dot the top with the rest of the butter. Tent the baking dish with a sheet of aluminum foil, arching it above the food and pressing it against the sides of the pan. Set the dish in the oven, and bake about 21/2 hours, until the meat and vegetables are all very tender and almost all of the liquid has been absorbed. Remove the foil, and sprinkle the shredded fontina over the top of the potatoes and cabbage (which will have sunk down in the pan). Bake another 15 to 20 minutes, until the fontina has melted, bubbled,and browned into a crusty topping. Let the casserole rest for 10 minutes. Set the roasting pan on a trivet at the table, and serve family- style, spooned onto dinner plates.

In fact, the flavour improves when reheated! The recipe comes from a 1983 Canadian Living publication called Everyday Cookbook Special. NOTE: After receiving a few reviews I've reduce the sugar and vinegar by half. I completely agree that this was too sugary.

  • TOMATO SAUCE:.
  • In a large bowl, combine onions, tomatoes, tomato sauce, vinegar, salt and pepper.
  • in 20 cup (5 L) casserole or 2 10 cup casseroles, spread 1/3 of the cabbage mixture, then half of the meat mixture.
  • Sprinkle with half the rice, then 1/3 of the tomato sauce.
  • Repeat layers, finishing with the cabbage and tomato sauce.
  • Cover and bake for 2 hours at 325F or until cabbage is tender.
  • Before serving, spoon a border of sour cream around the inside edge of the casserole(s).
  • NOTE:.
  • Casserole improves in flavour when reheated so you can bake it the day before and refrigerate or freeze.
  • To reheat frozen casserole, thaw and reheat, covered, for 30 to 45 mintues at 325F or until heated through. Do not add sour cream until ready to serve.
