FRENCH FRY CORN DOGS



French Fry Corn Dogs image

Oddly enough, I discovered this decadent treat called a Korean corn dog on the streets of Seoul! I've since copied the recipe and every time I make them, they're met with smiles and watering mouths!

1 c yellow cornmeal, fine grind
1 c all purpose flour
1 c whole milk
3 eggs, beaten
2 Tbsp light brown sugar
2 Tbsp kosher salt
2 tsp baking powder
1 1/2 tsp white pepper, ground
peanut oil for frying
16 your favorite hotdog
16 skewers or separated chopsticks
cornstarch
1 pkg crinkle cut french fries, thawed & cut into 1"+ pieces

Steps:

  • 1. Whisk together cornmeal, flour, milk, eggs, sugar, baking powder and pepper to create batter.
  • 2. Preheat oil in Dutch oven or large saucepan to 350 degrees.
  • 3. Skewer hotdogs and roll in cornstarch; shaking off excess. Place thawed french fry pieces in casserole dish. Dip hotdogs in batter and coat completely; then roll and "coat" with the potatoes.
  • 4. Carefully place dogs in hot oil, working in batches of three to four. Do not overcrowd. Fry for 5 to 7 minutes, until deep, golden brown. Place on paper towels to drain off excess oil and salt lightly with kosher salt. Repeat process until complete.
  • 5. Serve with plenty of ketchup and classic yellow mustard . . . 1,000 Island dressing is killer, too! Enjoy!!

  • Sprinkle the active dry yeast over the warm water. Give the mixture a stir and set it aside for a few minutes to let the yeast dissolve.
  • Bring a pot of water to a boil. Once the water is boiling, add the potatoes and boil for about 3 to 7 minutes, depending on the size of the potatoes. The potatoes need to be cooked about ¾ of the way. After the potatoes are par cooked, drain them and let them dry in one layer on some paper towel or clean towel. Set aside until needed.*You can also salt the water to season the potato if you'd like. Just add enough salt to make the water tasty "seasoned" (roughly 1 cup water to ¼ to ⅛ teaspoon salt)*
  • Cut the mozzarella block into 8 pieces, each around 2½ inches long and around the same widths as the hotdogs. Assemble the hotdog and mozzarella cheese onto skewers or disposable chopsticks. The hotdog should be the bottom half while the cheese is on the top half.*Feel free to assemble your skewers ahead of time and keep it refrigerated until needed. We highly recommend keeping the cheese cold for easy battering and frying. You could also make this corn dog with only the hotdogs and omit the cheese.*

  • Then in a small bowl, mix together lukewarm water, sugar and dry yeast until yeast has melted.
  • Then pour it into the flour mixture. Whisk your ingredients together until it becomes a sticky dough. Cover your dough with a warm towel and let it sit for 30 minutes to let it rise.
  • Meanwhile, peel and dice your potatoes into 1 cm x 1 cm pieces. They need to be small or they won't stick to your dough casing. Flour the potatoes with 1/2 cup flour.
