2 3/4 cups sifted all-purpose flour
2/3 cups granulated sugar
2 tablespoons baking powder
1/2 teaspoon salt
2 large eggs
1 2/3 cups cold milk
1/2 cup vegetable oil
1 tablespoon Mexican vanilla
Zest on 1-large lemon
3 cups fresh blueberries
**2 tablespoons of granulated sugar to top off muffins before baking

Steps:

  • Sift flour, granulated sugar, baking powder & salt into bowl. Add in eggs, cold milk, vegetable oil and Mexican vanilla. Mix with wire whisk until smooth. Fold in lemon zest and blueberries.
  • Line muffin pan with 12-large paper liners, fill each evenly about three-fourths full. Top off each muffin with granulated sugar before baking.
  • Bake at 350 degrees F for 20-25 minutes. Muffins will be a light golden brown,

6 Tablespoons brown sugar
3 Tablespoons all-purpose flour
1 Tablespoon unsalted butter, cold, cut into cubes
2 cups all-purpose flour, sifted
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (or 1 stick) unsalted butter, room temperature
1 cup granulated sugar
2 whole eggs
2 teaspoons vanilla extract
1/3 cup whole milk
2 Tablespoons lemon juice
2 Tablespoons lemon zest
2 cups blueberries, fresh
1 Tablespoon all-purpose flour

Steps:

  • In a small mixing bowl, combine the brown sugar, all-purpose flour, and cold butter.
  • Mix with a fork until the butter is in small pea-size pieces and the sugar and flour are clumping together. Set aside.
  • Preheat oven to 350 °F. Line a cupcake pan with 9-10 jumbo baking cups.
  • In a medium-size bowl, whisk and stir together the all-purpose flour, baking powder, and salt. Set aside.
  • In a small bowl, toss the fresh blueberries and 1 Tablespoon of all-purpose flour until the berries are fully coated. Set aside.
  • In the stand mixer bowl fitted with a paddle attachment, beat the butter and sugar on medium-high for 5 minutes.
  • Add eggs, one at a time to the stand mixer bowl and beat on medium until well incorporated.
  • Turn the mixer on low and slowly add flour mixture to the butter mixture until fully incorporated.
  • Add the vanilla, milk and lemon juice, beat on low until incorporated. Mix on medium for 30 seconds. Scrape down the sides of the bowl.
  • Add the lemon zest and flour-coated blueberries to the mixture. Mix gently with a rubber spatula until the blueberries are evenly distributed.
  • With an ice cream scooper, fill each muffin liner 2/3 of the way. Top each muffin with 1 Tablespoon of crumble.
  • Bake for 25-28 minutes or until a toothpick inserted into the center of each cake comes out clean or with just a few moist crumbs.
  • Remove from the oven and let cool for 5 minutes before removing the muffins from the pan and place onto a cooling rack to cool completely.
  • Serve and Enjoy!

  • Preheat oven to 375 degrees. Line jumbo muffin tin (or 12 cup regular muffin tin) with muffin liners.
  • In a large bowl, whisk together butter and sugar until light and fluffy. Add lemon juice, lemon zest, eggs, vanilla, and milk. Whisk to combine.
  • In a small mixing bowl, combine flour, baking powder, baking soda, and salt. Add into batter reserving a small amount to toss with blueberries. Stir until just combined. Toss blueberries in the reserved flour and gently fold them into the batter.
  • Spoon batter evenly into muffin liners. Place a few extra blueberries on top of each muffin.
  • Combine topping ingredients in a small bowl using a fork until crumbly. Sprinkle a little bit of topping on each muffin.
  • Bake for 35-40 minutes until tops are golden and a toothpick inserted into the middle of a muffin comes out clean. Transfer to a cooling rack.

These are bakery-quality muffins, the directions slightly differ from the regular method which is what sets these apart and the method that many bakeries use to make their muffins, the butter is mixed with the flour firstly to create a lighter-textured baked muffin, you may omit the berries and add in whatever you desire, chocolate chips, dried fruit etc, if using strawberries choose red very firm berries using soft berries will create a soft sticky dough --- these may be made up to 2 days ahead and stored in an airtight container at room temperature, rewarm in a 275°F oven for about 8 minutes --- see my recipe#78579 for greasing pans :)

My family and I love these muffins. I wanted a blueberry muffin to satisfy my tastebuds so I played around with a couple of different recipes from The Joy of Cooking and created this recipe that combined the flavors I was looking for in a breakfast muffin.

2 eggs
1 cup sour cream
1 1/4 cups sugar
1/4 cup milk
lemon zest, 1 whole lemon

3 cups all-purpose flour
1 teaspoon salt

2 cups fresh blueberries

Steps:

  • pre-heat oven to 375 degrees.
  • In a large mixing bowl, start with the eggs and lightly beat, add the "wet" ingredients in the order listed, sour cream, sugar, milk, lemon zest and lemon juice, mixing until well blended 1 to 2 minutes.
  • In a seperate bowl sift the flour with the salt, baking soda and baking powder. Once sifted stir the flour mixture into the wet mixture with a spatula, carefull not to over mix the batter. It is OK to have some lumps in the batter and the batter will be thick. Gently fold in the blueberrys so as not to mash them into the batter.
  • I like my muffins a little on the large size so I fill the paper baking cups 3/4 of the way full, in regular or jumbo muffin pans.
  • For regular muffins bake at 375 for approximately 16 to 18 minutes and for jumbo muffins bake for 20 to 22 minutes.
  • Let the muffins cool in the muffin pan for 2 to 3 mintues then remove to a cooling rake for another 5 minutes.
  • Serve warm.

  • Set oven to 375 degrees (350 degrees for convection oven).
  • Prepare 7 jumbo muffin tins with jumbo paper liners.
  • Prepare the streusel topping: In a small bowl, mix the sugar, flour and cinnamon together; cut in the butter with your fingers until crumbly, set aside in the fridge.
  • For the muffins: Toss the fresh berries with 2 Tbsp sugar; set aside.
  • In a large bowl, sift together, the flour, baking powder, salt and sugar, sift again (sifting twice!); add in the lemon zest and the coated blueberries; toss gently to mix.
  • In a small bowl, whisk together the egg, cream (or milk, if using), melted butter and the almond extract until well combined.
  • Add the egg mixture to the flour/berry mixture, mix gently with a wooden spoon JUST until combined (mixture is supposed to have lumps, and NOT be smooth, DO NOT OVERMIX!).
  • Spoon batter evenly into each muffin tin.
  • Sprinkle with streusel topping.
  • Bake for approximately 25 minutes (for jumbo muffins), or until muffins test done with a toothpick.
  • Cool for 15-20 minutes and remove with a butter knife slipped gently underneath the paper to lift, set to a wire rack.
  • **NOTE** This can be made using frozen blueberries, but will take longer to bake, also to double the recipe, prepare in two seperate mixing bowls adding the same ingredients to each, do not double the recipe and make in one bowl!

2 teaspoons vanilla extract (1 teaspoon almond and vanilla extract if you're using cranberries)

8 teaspoons baking powder (yes, 8)
2 teaspoons salt
4 cups blueberries (If you want a "true-blue" muffin, mash part of the blueberries) or 4 cups cranberries (If you want a "true-blue" muffin, mash part of the blueberries)

Steps:

  • Mix all ingredients, added the berries once everything is mixed and pour into well-greased muffins tins (I only bake in the jumbo pans).
  • Bake at 400 degrees for 20-25 minutes (longer for jumbo).
  • Muffins are done when toothpick comes out clean in center.
  • Makes 4 dozen muffins.
  • Note: When I make cranberry muffins I sprinkle coarse sugar and slivered almonds on top before baking).

Joyously Jumbo Blueberry Muffins (Regular Size Adaptable) image

This recipe will make 12 jumbo-size muffins (2 pans of 6 each), or 24 regular size muffins (2 pans of 12 each). A recipe adapted from Marcy Goldman's a Passion for Baking. The original recipe calls for 1/2 teaspoon lemon and orange extract each in addition to the vanilla extract, which I omitted but may be added. I, also, added a lemony sugar topping.

2 1/4 cups granulated sugar
1/2 cup vegetable oil
1/2 cup unsalted butter, melted
4 eggs, large
1 tablespoon vanilla extract

1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup sour cream
2 cups semi-frozen blueberries
1/4-1/2 cup coarse sugar, for dusting the tops
1 1/2 teaspoons finely grated lemon zest (optional)

Steps:

  • Preheat oven to 425 degrees. Set rack in middle of oven.
  • Line muffin pans with paper liners and coat the top of the pans, between the cups, liberally with baking spray. Place the pans on parchment-lined cookie sheets (though it may seem like overkill, doing this greatly reduces the chances of the muffin bottoms over-browning, a danger with jumbo muffins since they need to bake substantially longer than smaller muffins).
  • In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside. In the bowl of your mixer, using the paddle attachment, blend the oil, melted butter and sugar together. Quickly add in the eggs and vanilla extract and blend well. Remove bowl from the mixer and, using a rubber spatula, fold in the flour mixture. Or, if your mixer has a slow "stir" speed, use that. On low speed, blend in the buttermilk and sour cream. The batter should be thick.
  • If you prefer, you may stir the berries into the batter at this point, but doing so may turn the batter blue and the blueberries may burst. Another option is to fill the muffin cups about one third of the way full with batter, then scatter some berries into each cup. Then, cover those berries in each cup with another spoonful of batter, and then add another bunch of berries on top of that. Finally, top all of that off with a last little dab of batter. If using the optional lemon zest, stir together grated lemon zest and coarse sugar until evenly combined. Sprinkle coarse sugar generously over the top of each muffin.
  • Bake the muffins, if jumbo sized, for 15 minutes at 425 degrees, then turn the temperature down to 350 degrees and continue baking 12 to 16 more minutes. The muffin tops should be lightly golden, and a toothpick inserted deeply into the center of one of the middle muffins should come out mostly clean. The muffins should also spring back when lightly pressed with your finger. (If baking regular size muffins, they'll bake in half the time.).
  • Let them cool in their pans for about 5 minutes before you attempt to remove them. If the large muffin tops are a little stuck to the top of the pan, slide a knife blade gently underneath to loosen them first. Let them cool further on a rack. Delicious served warm or cold.
