200g pasta shapes
150g pack purple sprouting broccoli , cut into pieces
2 tbsp extra-virgin olive oil
2 garlic cloves , sliced
½ tsp fennel seeds (optional)
½ tsp crushed red chillies
2 Italian-style pork sausages , skins removed and meat broken into pieces
parmesan shavings, to serve

Steps:

  • Bring a large pan of water to the boil and cook the pasta until nearly al dente. Throw in the broccoli and cook for 2 mins more. Drain, saving 1-2 tbsp of the water.
  • Heat the oil in a large frying pan and add the garlic, fennel seeds, if using, and chillies. When they start to colour a bit, add the sausage and cook until golden and cooked through. Tip in the pasta and broccoli with the reserved water and toss. Serve hot with the Parmesan shavings.

1 pound sweet Italian pork sausage, casings removed
1 pound broccoli, cut into 1 1/2-inch florets (about 4 cups)
2 medium yellow bell peppers (12 ounces), cored, seeded and thinly sliced (about 2 1/2 cups)
3 cloves garlic, thinly sliced
Kosher salt and pepper
1 pound rigatoni
1/2 cup grated Parmesan (2 ounces), plus more for serving
2 tablespoons fresh lemon juice (from about 1/2 lemon)
1/2 teaspoon red-pepper flakes

Steps:

  • Heat 2 tablespoons oil in a large nonstick skillet over medium heat. Add the sausage and cook, breaking up the meat using a wooden spoon, until browned, about 5 minutes. Scrape the mixture into a medium bowl. Add the remaining 2 tablespoons oil, the broccoli, peppers and garlic to the skillet and season with salt and pepper. Cook, stirring often, until they soften and begin to brown, about 8 minutes.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente. Reserve 1 cup cooking water and drain the pasta. Return the pasta and reserved cooking water to the pot over low heat. Add the broccoli mixture, cooked sausage and its accumulated juices, 1/2 cup Parmesan, the lemon juice and red-pepper flakes and stir vigorously until liquid is slightly thickened and saucy, about 2 minutes. Season with salt and pepper.
  • Serve the pasta with additional Parmesan for sprinkling on top.

Steps:

  • In a large skillet or dutch oven, brown Italian sausage over medium high heat. Drain any excess grease.
  • Add salt, pepper, garlic powder and stock. For a little extra heat, add some red pepper flakes. Bring to a boil.
  • Stir in broccoli and pasta. Reduce heat to low. Cover and simmer for about 15 minutes.
  • When most of the liquid is absorbed, stir in the milk and Parmesan cheese. Heat until warmed through.

5 tablespoons extra virgin olive oil, divided
1 pound sweet or spicy Italian sausage, removed from casings
3 garlic cloves, minced
1 cup chicken broth
1 pound broccoli florets
½ teaspoon salt

3 tablespoons unsalted butter
½ cup freshly grated pecorino Romano

Steps:

  • Bring a large pot of salted water to a boil. Add the orecchiette and cook according to package instructions.

1 lb broccoli crowns, (bottom stalk trimmed and reserved for another use, remaining cut into florets)
Salt and freshly ground black pepper
12 oz. orecchiette pasta
4 Tbsp extra-virgin olive oil, (divided, plus more if desired)
1 1/2 Tbsp minced garlic ((4 cloves))
1 lb Italian sausage* ((can use mild or hot))
2/3 cup (1.6 oz) finely shredded Parmesan, (plus more for serving )
1 1/2 cups reserved pasta water, (divided)
Red pepper flakes, (for serving)

Steps:

  • Add 4 quarts of water to a large pot, bring to a boil over medium-high heat then season with salt (I use 2 Tbsp).
  • Add broccoli to boiling water and cook until tender, about 4 - 5 minutes. Using a spider, remove broccoli and transfer to a colander, while leaving water in pot.
  • Run broccoli under cold water to stop cooking. Drain well. Chop broccoli into smaller pieces.
  • Add pasta to water in pot and boil about 1 minutes shy of al dente, according to time listed on package. Reserve 1 1/2 cups pasta water.
  • While pasta is boiling, heat 1 Tbsp olive oil into a 12-inch non-stick skillet over medium-high heat.
  • Crumble sausage in small chunks into skillet and cook, breaking up and tossing occasionally, until cooked through, about 7 minutes. Add garlic during last 2 minutes of cooking the sausage.
  • Pour in 1 cup of the pasta water into the sausage. Let it simmer for about a minute and reduce slightly. Add all dente pasta and cook while tossing, until tender, about 2 minutes.
  • Drizzle in remaining 3 Tbsp olive oil, season with red pepper flakes to taste and toss.
  • Sprinkle in parmesan, and toss to melt into sauce.
  • Toss in broccoli. Season with salt as needed and pepper to taste.
  • Loosen with more pasta water as needed. Drizzle servings with more olive oil if desired, serve with garnished with more parmesan.

1 head broccoli (approximately 3/4 lb.)
2 1/2 links sweet Italian sausage
1 tablespoon olive oil
4 garlic cloves, minced
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seed
1 lb dried short pasta such as fusilli, penne, ziti
salt & pepper
2 ounces pecorino romano cheese, grated

Steps:

  • Bring a large pot of salted water to a boil.
  • Clean broccoli & separate florets from the stems. Remove the tough peel from the stems & cut into cubes. Place in steamer & steam to desired tenderness. Reserve the broccoli water.
  • Remove the casings from the sausage. Heat the olive oil to medium high and brown the sausage flattening & chopping until all is browned.
  • Add garlic, fennel seed & red pepper flakes. Cook until garlic is pale brown. Remove from the heat.
  • Add steamed broccoli & 1/2 cup of the broccoli water to the sausage.
  • Add the pasta to the boiling water and cook according to package directions.
  • Scoop out the pasta & add to the sausage & broccoli along with 1/2 cup of the pasta water.
  • Reheat the sausage, broccoli & pasta & stir until the water mostly boils away & forms a nice sauce. 1 1/2 to 2 minutes.
  • If too dry add more water from pasta &/or broccoli.
  • Grate 1/2 ounce of pecorino romano cheese over pasta reserving the remaing cheese for tableside.
  • Salt & pepper to taste.
  • Can be reheated in microwave. Just sprinkle with a little water before heating.

1 pound mild Italian sausage, casing removed
2 cloves garlic, minced
3 tablespoons all-purpose flour
3 cups milk
12 ounces shredded whole milk mozzarella (about 3 cups)
8 ounces shredded fontina cheese (about 2 cups)
Kosher salt and freshly ground black pepper
1 pound meze rigatoni
12 ounces broccoli, trimmed and cut into small florets (from 1 medium bunch)
1 cup panko breadcrumbs
2 tablespoons chopped parsley
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 425 degrees F. Bring a large pot of water to a boil over high heat.
  • Melt 1 tablespoon of the butter in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking up the sausage with a wooden spoon into small pieces, until browned and cooked through, about 6 minutes. Use a slotted spoon to transfer the sausage to a medium bowl, then reduce the heat to medium.
  • Add 3 more tablespoons of the butter and the garlic to the same pot. Cook until the butter has melted and the garlic is softened slightly, about 1 minute. Whisk in the flour and cook until it's bubbling all over and no longer raw, about 2 minutes. Slowly whisk in the milk, then bring to a steady simmer. This easy sausage and broccoli pasta uses only a handful of everyday ingredients and comes together in less than 30 minutes!

8 ounces uncooked pasta
1 (17.6 oz/500g package) Italian sausages (cut into small pieces (or crumble it))
1 head broccoli (cut into small florets)
2 cloves garlic (minced)
1 cup half-and-half
1/2 cup freshly grated parmesan cheese
Red pepper flakes (to taste)
Salt & pepper (to taste)

Steps:

  • Boil a large, salted pot of water and cook pasta al dente according to package directions.
  • Prep your sausage. Add it to a deep skillet over medium-high heat. Cook, stirring often, until it's browned and mostly cooked through (about 8-10 minutes).
  • Reduce the heat to medium and add the broccoli. Cover the pan and cook for 4 minutes.
  • Stir in the garlic.
  • Add in the half-and-half. Let it bubble for a couple of minutes, ensuring the brown bits at the bottom of the pan are scraped into the sauce. Test if broccoli is cooked to your liking. If not, cook a bit longer.
  • Stir in the parmesan cheese and season with salt & pepper and red pepper flakes as needed. Once the pasta is done, drain it and toss it with the sauce. Enjoy immediately.

1/2 C frozen chopped onions
1 T minced garlic

2 C chicken broth
1 1/2 C heavy cream
1/2 t Italian seasoning
8 oz egg noodles (or similar)
2 T olive oil
1 1/2 C broccoli florets
1/4 C grated Parmesan cheese
8 C salad greens
1 loaf garlic bread

Steps:

  • Add Italian sausage, onion and garlic to a large zipper bag. Season with salt and pepper. Zip to seal and squish to mix.
  • In a container with a lid mix together heavy cream, chicken broth and Italian seasoning. Season it with and additional pinch of salt and pepper.
  • Measure out 8 oz egg noodles (or similar) and place in a separate zipper bag so the noodles is ready to go on cooking day.
  • Heat olive oil in a large deep skillet or pot over medium heat. Add Italian sausage mixture and cook, stirring occasionally and breaking up chunks until cooked thoroughly.
  • Stir in heavy cream mixture (give it a good shake or mix before stirring it in), broccoli and egg noodles. Make sure noodles are covered in liquid. Bring mixture to a boil. Stir, cover and reduce heat to a simmer. Cook for about 10-15 minutes until pasta is tender.
  • Turn off heat and stir in cheese. Season with additional salt and pepper if needed. Serve with salad and garlic bread.

1 pound penne pasta
16 oz broccoli florets, cut into bite-sized pieces
1 tablespoon olive oil
6 cloves garlic, minced
1 pound ground Italian pork sausage
1/4 teaspoon red pepper flakes (plus more to taste)
1 cup grated Pecorino Romano (plus more for serving)
1/2 tablespoon lemon zest

Steps:

  • Heat a large pot of water to boiling. Once boiling liberally salt the water and then add the pasta-Cook the pasta to al dente (according to the package instructions). During the last two minutes of cooking, add the broccoli florets before draining, reserve 2 cups of the pasta water. Drain the pasta and broccoli, and then set aside.
  • Return the pot to the stove and bring the heat to medium-high. Next, add the olive oil. Once hot, add the Italian sausage and break it up as it begins to cook. When the sausage is no longer pink, add the minced garlic and red pepper flakes. Cook until the sausage is browned.
  • Reduce the heat to low, and then add the pasta and broccoli back to the pot.
  • Next, add 1 1/2 cups of pasta water, grated cheese, and fresh lemon zest to the pot and stir until everything is well combined. The pasta water will help to create a thin sauce that coats the pasta. If you need to, feel free to add the additional half cup of pasta water to create more sauce.
  • Serve the pasta with additional grated cheese, red pepper flakes, and fresh lemon zest on top.
