ANISE PIZZELLES
Italian Pizzelles made with anise oil. You will need to have a pizzelle iron to make these cookies. This recipe makes a very large batch.

- In a large bowl, whisk together eggs, sugar, vegetable oil, anise oil, and whiskey until well blended. Gradually stir in flour until fully incorporated. Cover, and refrigerate overnight.
- Preheat a pizzelle iron, and spray once with cooking spray. Drop tablespoons of batter onto the centers of the patterns. Close the lid, and cook until steam no longer comes out, about 1 1/2 minutes. Check, and adjust cooking time if necessary. Carefully remove cookies, cool, and store in an airtight tin at room temperature.

It is that time of the year ....again. Friends always want me to make pizzels for them, for the holidays. Iusually make a double recipe..makes about 4-1/2 dozen. They always go over great at party's and holiday gatherings. These are extra thin, extra crisp, & extra special!! I am on my second electric pizzel maker! The first one...

- 1. Add and beat ingredients together, in order listed. Drop by rounded spoonfull onto center of the pre-heated pizzelle grill. Close lid and immediately clip handles together. Allow to cook till steaming stops..... about 30-60 seconds. Remoove with a fork,onto a wire grill. When cool...Store in an air tight covered container. I have stored mine over a month... this way.... But I think we have a mouse in the house!!! OH! MY! They just seem to dissappear! Next time ..I will count them!!!....HA! When ready to serve, dust with powdered sugar.
- 2. ******CHOCOLATE PIZZELLES: Mix in 3 tablespoons cocoa and 3 tablespoons sugar. Add to basic recipe.
- 3. ******NUT PIZZELLES: Add 1-1/2 cups very finely chopped or ground nuts to the Basic Recipe. Or to chocolate pizzelles.
- 4. ******LEMON PIZZELLES: Omit vanilla and anise . Add 2 teaspoons lemon extract and 1 Tablespoon grated lemon peel to basic recipe.
- 5. ******COLORED PIZZELLES: Just add a drop or two of food coloring... of your choice. I have never made green ones..well, maybe this year for St Patrick Day!....LOL

Hailing from Abruzzo in Central Italy, pizzelle are crisp, flat waffle-esque cookies made in a special hot iron. Like mostaccioli, these cookies predate Christmas -- in fact, it is said that this is the oldest known cookie recipe on earth, dating back to the 8th century BC. In olden times, presses were made from cast iron and would be heated over a fire, or directly on the stovetop. You can still find those irons if you're up to the challenge, but electric irons are much easier to use, and very easy to find both online and at major retailers.

- Whisk together the sugar, butter, milk, vanilla, anise extract if using and eggs in a large bowl. Add the flour, baking powder and salt, and continue to whisk until the batter is smooth. Allow to stand at room temperature for at least 1 hour so the batter can hydrate.
- Heat the pizzelle iron, and cook your pizzelles according to the manufacturer's directions.

- 1. In a bowl, sift together flour and baking powder.
- 2. In electric mixer, beat together eggs and sugar, add the melted butter, vanilla and anise extract.
- 3. Add the flour mixture and beat until smooth.
- 4. Preheat your pizzelle iron according to manufacturer directions and lightly spray the pizzelle grids with non-stick spray or lightly brush with vegetable oil.
- 5. Drop batter by rounded tablespoonful onto center of each preheated grid. This amount can vary according to the size of your pizzelle maker.
- 6. Close lid and bake approximately 40-50 seconds, depending on your preference for browning and/or the consistency of your batter.
- 7. Be sure to lay hot pizzelle's in single layer to cool completely.
- 8. Once cooled dust with powdered sugar. May be stored stacked in an airtight bag.
ITALIAN CLASSIC PIZZELLES
Pizzelles are a delicious crispy cookie with the perfect amount of sweetness. Provides a tasty base for an ice cream sandwich.

- Beat the eggs, adding sugar gradually. Beat until smooth. Add cooled margarine and vanilla extract or anise flavouring.
- Sift the flour and baking powder. Blend into the egg mixture until smooth. Dough will be sticky enough to be dropped by spoon.
- Heat Pizzelle maker. Grease a small cookie scoop with cooking spray. Scoop the cookie dough and place just past the centre of the form towards the back of the maker. Lock and set a timer for 26 seconds. Cook longer if you like them darker.
- Remove to a cooling rack.
- Chocolate Pizzelles: Sift cocoa, additional sugar and baking powder into dry ingredients for Classic Pizzelles. Blend into egg mixture until smooth.

ANISE PIZZELLE

- Heat a nonstick pizzelle iron. In a small skillet, toast anise seeds over high heat, stirring, until fragrant, about 1 minute. Transfer seeds to a spice grinder, let cool, and finely grind. Scrape into a medium bowl; whisk together with flour, baking powder, and salt.
- In a large bowl, whisk together eggs and granulated sugar until well combined. Whisk in vanilla and anise extracts. Slowly add cooled butter in a steady stream, whisking continuously, until batter is smooth. Stir in flour mixture until just combined (do not overmix).
- Transfer batter to a piping bag fitted with a 1/2-inch round tip. Pipe about 2 tablespoons batter in a circle around the center of each pattern on the heated pizzelle iron. Close and seal with clasp. Cook until golden brown, about 45 seconds. Using a small spatula, release and remove cookie. Using kitchen shears or a 4 1/2-inch ring mold, trim any ragged edges, if desired. Transfer cookie to a wire rack to cool. Repeat with remaining batter. Dust cooled cookies with confectioners' sugar, if desired.
PIZZELLE ITALIAN TYE PLATES 1927
This is Grandma Rose recipe. It has been in the family before my time, so I put down 1927 since thats my moms age. Simple and we have tried other recipes, but this is still the best. The recipe can be doubled. The photo is the amount of a doubled batch using 12 eggs, and yes I do get 12 dozen cookies very easily.

Steps:
- Beat eggs until thick and lemony coloured.
- Add in, beating well the sugar and beat until thick, beat in the oil and continue beating.
- Add in the flour.
- Add in the flavour.
- Heat the pizzelle maker on stove top, or if electric plug in unit.
- Drop tablespoon of batter onto iron and bake until golden light brown in colour.
- I like mine very light.
- Remove and cool on wire rack.
- Place cooled cookies into tin cans.
- If you are using anise oil, then use less amount than you would the flavour, as oil is stronger. But taste a few after been cooled and you can always add more flavouring as you go. I have also added a few tablespoons of cornstarch in place of some of the flour, so they stay crisp in those humid days. Hope you do try and like this heirloom recipe. Amount of cookies depends on the size you make them also. Also the batter can be covered and placed in the fridge for a few hours or overnight too.
