This Chipotle Peach BBQ Sauce is made with fresh sweet peaches and smoky chipotle chili peppers. This bbq sauce can be made in 15 minutes or less.

1 lb peaches, pitted and diced
3/4 cup water
6 tbsp tomato paste
1/4 cup apple cider vinegar
2 adobo chipotle peppers en adobo + 1 tbsp sauce
2 tbsp extra virgin olive oil
2 minced garlic cloves (may sub 2 tbsp garlic-infused olive oil for the garlic + olive oil above)
2 tbsp honey
1 tbsp brown sugar (may sub for 1 tbsp coconut sugar)
1 1/2 tsp sea salt
1/4 tsp cracked black pepper

Steps:

  • Combine all of the ingredients in a medium pot over medium heat, stirring to combine.
  • Allow mixture to come to a low boil, stirring often to stew the peaches down for about 5 minutes.
  • Using an immersion blender, blend the sauce until it reaches a smooth, lump-free consistency. Alternatively, if you do not have an immersion blender you can carefully transfer the mixture to a heat-proof blender to blitz until smooth.
  • Serve immediately over grilled meat such as wings, chicken, or pork. Unused sauce should be stored in an airtight container in the refrigerator.

1 ½ cups ketchup (preferably an unsweetened brand like Westbrae Natural Organic Unsweetened Ketchup or a minimally sweetened brand like Sir Kensington's)
2 - 4 tablespoons honey (depending on how sweet you want it)
⅓ cup apple cider vinegar
¼ cup Worcestershire sauce
4 fresh peaches, peeled and halved or 4 oz dried peaches (see note)
1 - 3 chipotle peppers plus 1 tablespoon of sauce from a 4 oz can of chipotles in adobo (1 pepper is mild in heat. 3 has a nice kick)
½ cup onion, minced (or 2 frozen onion cubes - see notes)
3 cloves garlic (I like to use the roasted ones from the grocery store olive bar section)
2 tablespoons dijon mustard
1 teaspoon smoked paprika
1 teaspoon salt
¼ black pepper

Steps:

  • Add all of the ingredients to the pressure cooker pot and stir well. Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 15 minutes.
  • When cooking is complete, use a natural release for 5 minutes and then release any remaining pressure.
  • Blend until smooth with an immersion blender or a high speed table top blender. Use immediately or transfer to glass jars and refrigerate for up to 2 weeks. Also freezes well in freezer safe resealable bags.

3 cups chopped peaches
2 tablespoons light brown sugar
1 tablespoon fresh lemon juice
1 tablespoon water
1 pinch ground cinnamon

Steps:

  • Place chopped peaches in a multi-functional pressure cooker (such as Instant Pot®) and evenly sprinkle with brown sugar. Let sit for 10 minutes. Stir in lemon juice, water, and cinnamon.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 6 to 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
  • Select Saute function and cook, stirring and smashing peach chunks with a spoon until you have a thick, chunky consistency, about 2 minutes. Press Cancel to end the Saute function.
  • Cool and serve immediately or store in jars in the refrigerator to serve later.

You can thank your Instant Pot for pulled pork in just under two hours. This gadget juggles different cook settings (slow cooking, pressure cooking and stove-top browning) to make favorite dishes that your crowd won't have to wait long to devour.

3 tablespoons light brown sugar
2 teaspoons hot paprika
1 teaspoon mustard powder
1/2 teaspoon ground cumin
Kosher salt and freshly ground pepper
One 4-pound boneless pork shoulder, trimmed of excess fat and cut into 6 pieces
2 teaspoons vegetable oil
1/2 cup apple cider vinegar, plus more to taste
3 tablespoons tomato paste
12 hamburger potato buns
1 cup barbecue sauce, for serving
4 cups coleslaw, for serving

Steps:

  • Combine paprika, mustard powder, cumin, 1 tablespoon brown sugar, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the spice mixture all over the pork.
  • Turn the Instant Pot® (see Cook's Note) to the high saute setting. Add the oil and once hot, add the pork and cook in two batches, turning, until browned on all sides, about 5 minutes. Switch the Instant Pot® to the warm setting, remove the pork and transfer to a plate.
  • Whisk 3/4 cup water into the drippings in the Instant Pot®. Add the vinegar, tomato paste, the remaining 2 tablespoons brown sugar and 2 cups water and whisk to combine. Add the pork back. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 hour.
  • After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid and transfer the pork to a large bowl.
  • Switch the Instant Pot® to the normal saute setting and simmer the juices until reduced by half, about 15 minutes. While the juices are reducing use a ladle to remove any fat that rises to the top. Season to taste with salt.
  • Meanwhile, use 2 forks to shred the pork in to small chunks.
  • Add 3 cups of the reduced cooking liquid to the chunked pork and season with salt and vinegar to taste. Serve in hamburger buns with barbecue sauce and coleslaw.

I came up with this fresh-tasting, spicy recipe one night as we fired up steaks smothered in a smoky hickory BBQ sauce on our new grill. The combination was a hit and this has definitely become a new favorite. We like our food spicy, so adjust the amount of chipotle and onion to suit your taste.
