1-1/2 cups freeze-dried raspberries, divided

Steps:

  • In a microwave or in a large saucepan over low heat, melt marshmallows, oil and extract; stir until smooth. Remove from heat; stir in cereal, chocolate chips and 1 cup raspberries. Press mixture into a lightly-greased 13x9-in. baking pan using wax paper or a lightly-greased spatula. Sprinkle with remaining raspberries; press into treats. Cool to room temperature. Cut into bars.

1/2 C (1 stick) salted butter*
15 oz (1 1/2 bag) marshmallows*
1 tsp vanilla extract
2 C semi-sweet mini chocolate chips, divided*
8 C Rice Cereal

Steps:

  • Generously butter the bottom and sides of a 9x13 pan and set aside.
  • In a large pot over medium-low heat melt the butter.
  • Once the butter just begins to bubble, add the marshmallows to the pot. Continue to melt the marshmallows over medium-low heat, stirring often, until they are completely melted and combined with the butter.
  • Add the vanilla and stir to evenly combine.
  • Next, pour 1 1/2 cups of semi-sweet mini chocolate chips into the pot. Melt over medium-low heat while stirring constantly and scraping the bottom of the pot with your spoon. It's important to stir constantly as chocolate burns easily. Once the chocolate chips are completely melted and incorporated remove the pot from the heat.
  • Pour the rice cereal into the pot and gently fold into the chocolate-marshmallow mixture until the cereal is coated.
  • Transfer the marshmallow cereal mixture to the buttered pan. Gently press the mixture into the pan so that it's even, but take care not to over press your Rice Krispies as they will become too dense and hard. For the final touch, sprinkle with 1/2 C of mini chocolate chips. Allow the Chocolate Rice Krispies Treats to rest for 1 hour before serving. Store covered and at room temperature for up to 5 days.

50g dark chocolate, broken up
100g butter
4 tbsp golden syrup
100g rice pops (we used Rice Krispies)
50g milk chocolate, melted
sprinkles, mini marshmallows, nuts, Smarties, dried fruit or white chocolate buttons

Steps:

  • Put the chocolate in a heatproof bowl with the butter and golden syrup and gently melt in 10-second bursts in the microwave, or melt it over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the rice pops, coating them gently with the chocolate until they are all completely covered.
  • Divide the mixture between nine cupcake or 12 fairy cake paper cases - it's easier if you slide these into a muffin tin as it will help them hold their shape. Leave to set. If you want them to set faster, put in the fridge for 1 hr.
  • Drizzle with a little melted chocolate and decorate with sweets, dried fruit or nuts while they are still wet enough to stick them on. Will keep in an airtight container for five days.

5 caramel nougat chocolate bars, such as Mars bars, chopped
150g/5oz butter, chopped, plus extra for greasing
100g/3½oz rice pops, such as Rice Krispies
75g/3oz dark chocolate

Steps:

  • Grease a 20cm/8in square, deep-sided tin with butter.
  • Suspend a large heatproof bowl over a pan of simmering water (do not allow the base of the bowl to touch the water).
  • Add the Mars bars and butter to the bowl and stir until melted, smooth and well combined. The mixture will curdle at first, but keep stirring (or use a whisk) and it will eventually become smooth.
  • Remove the bowl from the heat, add the Rice Krispies and fold until coated in the chocolate mixture.
  • Spoon the mixture into the prepared tin and press down to form an even layer, pushing the mixture into the corners and sides of the tin. Set aside to cool.
  • Meanwhile, suspend another heatproof bowl over the pan of simmering water (do not allow the base of the bowl to touch the water). Melt the chocolate in the bowl, then drizzle or spread it over the cooled chocolate crispy cake. Set aside to cool and harden.

Steps:

  • Add the white chocolate candy coating to a microwave safe bowl and heat according to package instructions, or in 30 second increments, stirring well between each, until melted and smooth.
  • 2. Lay out a large piece of parchment paper. If you'd like to have your treats on sticks, you can cut paper straws in half (as I did) or use lollipop sticks. Dip the tip of it into the white chocolate, then press it into the bottom short side of the treat. Allow to dry.
  • 3. Dip each rice krispie treat (one at a time) into the white chocolate, allowing it to coat the side your dipping and the sides. Shake off any excess and place the uncovered side down onto the parchment paper. Place a set of eyes on each rice krispie treat, while the chocolate is still wet. Allow to dry completely.
  • 4. Re-melt the remaining white chocolate candy coating, then pour it into your piping bag fitted with your piping tip (alternatively, you could use a ziplock bag and snip off a tiny corner of it).
  • 5. Drizzle the white chocolate over the treats to create the mummy look, then set aside to cool completely.
