BASIC COOKED WHEAT BERRIES



Basic Cooked Wheat Berries image

A very chewy grain that can be cooked on the stove top or in a slow cooker. Cooked berries can be stored in the fridge for two days or in the freezer for a month. No you do not need to pre-soak. While toasting can be skipped we feel it improves the flavor.

1 cup wheat berries, well washed
2 -2 1/2 cups water (most the time I only need 2 cups so watch) or 2 -2 1/2 cups broth (most the time I only need 2 cups so watch)

Steps:

  • Place washed berries in a large frying pan over medium heat. Cook shaking the pan for around 3 to 5 minutes. Till they start to pop. Being careful not to over cook or burn.
  • Stovetop: Combine water and wheat in a saucepan. Bring to a boil, then lower heat to a simmer. Cover and cook until all the water is absorbed and grain is soft and chewy, approximately 1 to 1 1/2 hours.
  • Slow Cooker: Combine water and wheat in a slow cooker. Cook on low for 8 to 10 hours.

1 cup wheat berries
4 cup water

Steps:

  • Rinse wheat berries well. Put them in a pot.
  • Pour water over them.
  • Cook over high heat until it boils.
  • Reduce the heat to medium and cook until the wheat berries soften, about 30 minutes.
  • Check it often after 20 minutes. Let the wheat berries soften but they shouldn't be mushy, they should be like al dente pasta.
  • Rinse under water and drain.

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®). Add water and wheat berries; stir once. Close and lock the lid. Select Manual pressure according to manufacturer's instructions and set timer for 27 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Drain wheat berries and mix in salt.

  • Set the wheat berries in a sauce pan, cover with the water and soak overnight. The following day boil the berries in the same water for 20 minutes, if you want them parboiled only (to cook later on in casseroles or soups) or for 1 hour if you want them fully cooked. Drain well and cool thoroughly. Transfer the cooked wheat berries to a glass jar and store them in the refrigerator for 4 days. Store them in the freezer only if you are going to use them in soups, stews or casseroles. The freezer softens their texture and makes them less chewy.
